BACON WRAPPED DATES STUFFED WITH BLUE CHEESE
Dates are stuffed with blue cheese, wrapped in bacon and baked until crisp. These are delicious and very easy to make for a party. You can serve them at room temperature, so it is okay to make a few hours in advance!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.
- Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

Steps:
- Preheat the oven to 425 degrees F.
- Stuff each date with 1 to 2 almonds. Wrap each date with half a piece of bacon and secure with a toothpick.
- Bake, turning the dates halfway through so the bacon is evenly cooked, 15 to 18 minutes. Serve warm or at room temperature.
BACON-WRAPPED DATES STUFFED WITH CREAM CHEESE AND ALMONDS
Steps:
- Heat the oven to 400 degrees F.
- Stuff 1 piece of cheese and 1 almond into each date, then wrap one piece of bacon around each date and secure bacon with a toothpick if desired. Arrange dates, bacon seam down and 1 inch apart in a shallow baking pan.
- Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp, 5 to 6 minutes more. Drain on a paper towel or parchment. Serve immediately.
RICOTTA-STUFFED BACON-WRAPPED DATES
These are the new pigs in the blanket and way better. They're a classic tapas but they never get old. And I spruced them up just a bit with a touch of ricotta cheese.

- Preheat oven to 450 degrees F.
- Cut the bacon in half lengthwise to make twice as many slices. Set aside. To remove the pits from the dates, cut the tips off each end of the dates and insert the flat end of the skewer until it pushes the pit out of the date. Repeat with remaining dates.
- Place the ricotta in the bottom corner of a strong plastic bag and seal tightly. Use scissors to cut a small hole in the tip of 1 of the corners. Now use the bag like a piping bag to fill the dates with the cheese.
- Wrap the ricotta stuffed dates with a slice of bacon and secure with a toothpick through the belly of the date. Arrange all the prepared dates on a parchment-lined baking sheet, allowing at least a little space between each one for good browning. Roast for 15 to 20 minutes or until bacon is browned and crispy. Remove from the baking sheet and gently remove toothpicks. Serve immediately.
BACON WRAPPED DATES STUFFED WITH MANCHEGO
Steps:
- Preheat the oven to 400 degrees F.
- Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
- Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.

CHORIZO STUFFED DATES WRAPPED IN BACON IN RED PEPPER SAUCE
Steps:
- For the sauce: Place a heavy-bottomed saucepot over medium heat. When the pan is hot, add a film of olive oil followed by the garlic and shallots with a large pinch of salt. Cook, stirring occasionally, until the vegetables start to soften and become aromatic, about 3 minutes. Then add the piquillo peppers and tomatoes. Stir until everything is combined and bring the mixture up to a simmer. Reduce the heat to medium-low and cook, stirring occasionally, until all the flavors combine and the sauce reduces slightly, about 30 minutes. Season with salt and freshly ground black pepper and add the sherry vinegar. After 30 minutes, puree the sauce until smooth if you prefer (see Cook's Note) or leave a little bit chunky.
- Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
- While the sauce is cooking, prepare the dates: Make a slit down one side of each date. Stuff the date with the chorizo and then close the incision. Wrap with a piece of bacon and secure with a toothpick where the seams meet. Place on the prepared baking sheet and bake until the bacon on one side is crispy, about 10 minutes. Remove from the oven and remove the picks.
- Pour the red pepper sauce into a shallow baking dish and arrange the dates on top, soggy-side up. Place back in the oven, uncovered, until the bacon on top is crisp, another 10 minutes or so. Remove from the oven and serve the crispy dates with some sauce spooned around and on top.

Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

These are delightful, easy appetizers. Adapted from a recipe I found on www.wholefoodsmarket.com. As the recipe states, these are the perfect party starter served up with a glass of sparkling wine. These are also on the menu at a St. Louis tapas restaurant as a desert. . .interesting thought! These are very rich, so plan on 2 per person. One more note, these CAN be made without bacon if need be for a special diet.

- Cut your cheese into small rectangles just large enough to fill the cavity of your pitted date.

Sinfully delicious!! Salty and sweet, crispy and gooey!! Yum! Surprisingly easy and look fantastic. I had these at a restaurant and then went on a hunt to find a similar recipe. Found one online and tweaked it some. If you use thick cut bacon, par-cook it some before wrapping dates.

- Simmer balsamic vinegar in small saucepan until reduced by half. Syrup will be thick. Set aside.
- Mix almonds into goat cheese.
- Cut small slit in dates and stuff with small amount of cheese mixture.
- Cut each bacon slice into 3 pieces. (Par-cook if thick sliced.) Wrap piece of bacon around each date, and secure with toothpick.
- Place on foil-lined baking sheet.
- Broil for about 10 minutes, turning over when browned on first side. Be careful as they can burn quickly.
- Arrange on serving platter and drizzle with reserved balsamic reduction.
