LEMON CORNMEAL CAKE

Lemon Cornmeal Cake image

Extra-virgin olive oil, eggs, and milk make this Italian-inspired lemon cornmeal cake extra-moist. And it's gluten-free, to boot. Martha made this recipe on "Martha Bakes" episode 810.

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Time 3h15m

Yield Makes one 9-inch cake

Number Of Ingredients 12

1/2 cup milk
Finely grated zest and juice of 1 lemon
1 1/2 cups raw almonds, finely chopped
1 cup natural cane sugar
1 cup fine yellow cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
3/4 cup extra-virgin olive oil, plus more for pan
3 large eggs, room temperature
1 teaspoon pure almond extract
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 325 degrees. Combine milk and lemon juice in a bowl; let stand until thickened, about 5 minutes. Pulse almonds, cane sugar, and zest in a food processor until finely ground. Transfer mixture to a large bowl; stir in cornmeal, baking powder, baking soda, and salt. Add oil, eggs, and almond extract to milk mixture, and whisk until combined. Stir into cornmeal mixture.
  • Brush a 9-inch springform pan with oil. Pour batter into pan. Bake, rotating pan halfway through, until cake is golden and a tester inserted in center comes out clean, about 55 minutes. Let cool completely in pan on a wire rack. Unmold and dust with confectioners' sugar just before serving. (Cake can be kept, covered, at room temperature up to 2 days.)

1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
1 1/4 cups plus 1 tablespoon all-purpose flour (spooned and leveled), sifted, plus more for pan

  • Transfer batter to pan and bake until a toothpick inserted in center of cake comes out with a few moist crumbs attached, 65 minutes. Let cool in pan on a wire rack, 1 hour. Remove cake from pan and let cool completely on rack before slicing.
  • To store, wrap in plastic and keep at room temperature, up to 3 days, or wrap in plastic and freeze for up to 3 weeks. (Thaw, wrapped, at room temperature.)

MARTHA STEWART MEATLOAF RECIPE

Martha Stewart Meatloaf Recipe image

I saw this on Martha Stewart's television show in the early 90s when I was home sick from school one day. I have kept it since and need a place to store it...

Provided by Meggiebeth

Categories     Meat

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 20

3 slices white bread, crusts removed
1/2 cup milk
2 tablespoons olive oil
1 large yellow onion, finely chopped
1 celery rib, finely chopped
2 garlic cloves, minced
2 carrots, peeled and finely grated
1 lb ground sirloin
1/2 lb ground pork
2 large eggs
1/4 cup roughly chopped fresh parsley
2 tablespoons Dijon mustard
1 tablespoon coarse salt, plus more to taste
1/2 tablespoon fresh ground pepper, plus more to taste
1/2 lb thinly sliced smoked bacon
1 lb fingerling potato, scrubbed
4 leeks, white and light-green parts only, split in half lengthwise and rinsed well
1/2 cup light-brown sugar, packed
1 tablespoon Coleman's dry mustard (yellow)
1 teaspoon tomato paste

Steps:

  • Heat oven to 375 degrees. Cut the bread into 1 inch cubes and place in a small bowl. Pour the milk over the bread. Set aside for five minutes.
  • Heat the olive oil in large skillet over medium heat. Add onion, celery, and garlic. Cook until soft and translucent, about 3-5 minutes. Remove from heat. Let cool for five minutes.
  • Place carrots in a large mixing bowl. Add the milk and bread mixture, ground sirloin, ground pork, eggs, parsley, Dijon mustard, salt, and pepper. Add onion mixture. Combine well using your hands or a rubber scraper.
  • Place mixture in a large ungreased baking dish or roasting pan. Shape into a 5 by 12 inch loaf. Overlap bacon slices across the top, covering the meat. Place potatoes and leeks around the loaf. Season with salt and pepper as needed.
  • In a small bowl, combine the brown sugar, ground mustard, and 2 tablespoons of water. Stie in tomato paste making a glaze. Brush the meat loaf all over with the glaze.
  • Bake, brushing every fifteen minutes with glaze until juices run clear when loaf is pierced with a two-pronged fork and bacon is crisp, 1 to 1 and 1/4 hours. Let cool 10 minutes before slicing. Serve with potatoes and leeks on the side.

MARTHA WASHINGTON'S GREAT CAKE

Martha Washington's Great Cake image

Just the other day--while laying on the couch being sick--I watched Martha Stewart's TV program. Caroline Kennedy is writing a book featuring recipes from our country's past. Martha brought out her old catering service HUGE Hobart mixer, and it was fun (being sick & all "fun" is relative!) to watch her put this together---WOW! Today I was paging through a "Christmas traditions" book my SIL gave me a few years ago and wow--here's the recipe Martha S. & Caroline Kennedy were re-creating on the TV program. The book says, "From an old manuscript dated 'Mount Vernon, 1781" made by Martha Custis Washington for her grandmama." I'm purely guessing on the serving amounts.

Provided by Debber

Categories     Dessert

Time 2h30m

Yield 1 huge cake, 40 serving(s)

Number Of Ingredients 9

40 eggs, separated
4 lbs butter, softened
4 lbs sugar
5 lbs flour
5 lbs fruit (pears & apples)
1/2 ounce mace
1 nutmeg
1 cup wine
french brandy

Steps:

  • WRITTEN AS PER MARTHA WASHINGTON'S DIRECTIONS.
  • Take forty eggs and divide the whites from the yolks, and beat them (whites) to a froth.
  • Then work the butter to a cream, and put the whites of the eggs to it, a cup at a time, until well-worked.
  • Then add sugar (finely powdered) to it in the same manner (one cup at a time).
  • Then put the egg yolks and flour and fruit to it.
  • Add to it mace, nutmeg, wine and brandy.
  • Two hours will bake it. (350 degrees).
  • In the TV program: Martha Stewart baked this in a 16x16x3-inch square pan (it was HUGE!). I suppose you could divide the batter between two 13x9 pans, too.
  • She frosted it with a meringue (whipped egg white & sugar) that was lightly baked to give it a crunch -- and claimed that it would keep for weeks if the cake wasn't cut.
  • She's got a smaller version on her website.

MARTHA STEWART'S ALL AMERICAN MEATLOAF

Martha Stewart's All American Meatloaf image

This is a great meatloaf. I'm surprised it hasn't already been posted yet. The only thing I like better than meat loaf is meatloaf sandwiches, and this meatloaf is even better the next day; sliced between whole wheat bread, topped with a slice of cheese, and lots of mayo. Note: I omitted the veal and adjusted the amount of beef and pork to compensate--it was still great.

Provided by Pokey in San Antonio

Categories     Pork

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 22

3 slices white bread (crust removed)
1 cup carrot (shredded)
1 celery rib (minced)
1/2 cup onion (minced)
2 garlic cloves (minced)
1/2 cup ketchup
2 teaspoons dry mustard
8 ounces ground round
8 ounces ground pork
8 ounces ground veal
2 eggs (beaten)
2 teaspoons salt
1 teaspoon ground pepper
1 teaspoon Tabasco sauce
1/2 teaspoon rosemary (chopped)
3 tablespoons ketchup
2 1/2 teaspoons dry mustard
2 tablespoons dark brown sugar
1 tablespoon olive oil
1/2 cup red onion (cut in rings)
3 tablespoons water
1 tablespoon rosemary (garnish)

Steps:

  • Preheat oven to 400°F.
  • Process or crumble the bread and combine with the minced vegetables in a large bowl.
  • Mix the meat, eggs and seasonings together in a bowl. Knead until thoroughly combined. Add meat mixture to the crumbs/veggie mixture. Combine, but don't over mix.
  • Set a wire rack over an 11 x 17 baking pan. Cut a 5 x 11 piece of parchment paper and place it on the rack.
  • Form the meat mixture into and elongated loaf on the parchment paper.
  • Mix the next 3 ingredients together and baste the loaf--set aside.
  • Heat the oil and sauté the onion rings. When soft and golden in places, add water and cook until most of the water evaporates. Garnish the loaf with the onion rings.
  • Bake 30 minutes, then sprinkle rosemary needles on top. Continue baking for another 25 minutes. Cool on rack for 15 minutes before serving.
