2 (10 ounce) packages frozen hash brown potatoes
2 cups sour cream
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup melted butter
1 tablespoon salt
1 tablespoon onion, chopped
2 cups crushed corn flakes
1/4 cup melted butter
2 cups shredded cheddar cheese

Steps:

  • Thaw hash browns.
  • Combine sour cream, soup and 1/2 cup butter.
  • Add salt, onion and cheese; mix well.
  • Add potatoes.
  • Place mixture in a 13x9-inch baking dish.
  • Combine 1/4 cup melted butter and cornflakes.
  • Sprinkle on top of mixture.
  • Bake at 350° for 50-55 minutes, or until golden brown.

4 large boneless skinless chicken breasts
7 ounces frozen mixed vegetables, thawed (antioxidant blend of carrots, broccoli, bell peppers, with garlic oil)
20 ounces Simply Potatoes® Shredded Hash Browns, thawed
2 cups shredded triple cheddar cheese, divided use
1 1/2 tablespoons seasoning salt

Steps:

  • Preheat oven to 375 degrees F. Rinse chicken breasts and pat dry. Remove any excess fat.
  • Using a sharp knife, cut a large pocket into the chicken breasts, cutting horizontally and lengthwise into the chicken, but not cutting through the back or sides.
  • Place the vegetables into a small bowl, add 1/2 cup of cheese and toss to mix. Divide mixture into 4 equal portions and put into the chicken pockets.
  • Use seasoned salt to sprinkle evenly over both sides of the chicken pieces.
  • In a small bowl, mix the Simply Potatoes® Shredded Hash Browns with 1 cup cheese. Use half of the mix to cover the bottom of a baking dish large enough to accommodate the 4 chicken breasts with no excess space between or around them. Lay the chicken breasts on top of the hash browns, then, using the remaining hash brown mixture, patting equal amounts onto the tops of each piece of chicken.
  • Bake 45 minutes, covering loosely with foil tent during the last 10-12 minutes, or when nicely browned. Turn oven to broil, remove foil, sprinkle remaining 1/2 cup cheese over the top and broil until cheese is melted, about 3-4 minutes. Serve either 1 piece each to 4 people, or cut in half and serve to 8.

1 1/2 cups Velveeta cheese
1 dash onion flakes

  • Spray 9 by 13 baking dish with cooking spray. Set oven to 350 degrees. Mix hashbrowns , soup, sour cream, and velvetta all together. Sprinkle top with onion flakes and salt and pepper. Cover and cook for one hour snd cook and cook extra half hour uncovered.

1 (14 1/2 ounce) can diced tomatoes
1/4 cup Philadelphia Italian Cheese and Herb Cooking Creme
2 cups frozen Italian vegetables
2 cups shredded Italian cheese

Steps:

  • Heat oven to 375 degrees. Spray a 3 quart baking dish with nonstick cooking spray. In a medium bowl stir together the Simply Potatoes Shredded Hash Browns, diced tomatoes, cooking cream, frozen Italian style vegetables and 1 1/2 cups of the shredded cheese.
  • Cover with aluminum foil and bake for 45 minutes. Remove and uncover dish and sprinkle remaining shredded cheese over the top. Bake uncovered for 5 minutes or until cheese is melted and lightly browned.

3 cups Kraft Shredded Sharp Cheddar Cheese, divided (reserve 1 cup for topping)
1 lb breakfast sausage (I prefer hot)
8 ounces sour cream
1 teaspoon cajun seasoning

Steps:

  • Brown the sauage and drain. Mix allingredients together, except for the reserved cheese). Pour all into a 9 x 9 baking dish and cook @ 350 for 45 mins or until nice and bubbly. This can be made the night before and refrigerated, covered, then let come to room temp and bake.

This includes ingredients that we always have on hand, and most households typically have on hand. Very easy, from start to finish. We make this for dinner quite often, along with a slice of toast with butter and garlic.

8 slices bacon, cooked and crumbled
1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 -1 1/2 cup shredded cheddar cheese
pepper or garlic salt
sour cream or salsa

Steps:

  • Fry your bacon until crisp. Remove from pan (leave a teaspoon of bacon grease in the pan to fry your hash browns in), let cool, then crumble.
  • Fry hash browns in same skillet that bacon was fried in - cook until done, flipping when browned on the first side. Once browned on the second side, flip again and put your crumbled bacon on top, then top that with shredded cheddar cheese. Cover pan, cook until cheese is melted. Remove from pan, top with sour cream or salsa. Enjoy!
