16 slices gruyere or 16 slices swiss cheese, thin
2 teaspoons fresh thyme leaves
1/4 cup flour
2 cups panko breadcrumbs
1 teaspoon olive oil
3 eggs
2 teaspoons water

Steps:

  • Preheat oven to 350 degrees F.
  • Lay the chicken between 2 pieces of plastic wrap.
  • Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness.
  • Take care not to pound too hard because the meat may tear or create holes.
  • Lay 2 slices of cheese on each breast, followed by 2 slices of ham, and 2 more of cheese; leaving a 1/2-inch margin on all sides to help seal the roll.
  • Tuck in the sides of the breast and roll up tight like a jellyroll.
  • Squeeze the log gently to seal.
  • Season the flour with salt and pepper; spread out on waxed paper or in a flat dish.
  • Mix the breadcrumbs with thyme, kosher salt, pepper, and oil.
  • The oil will help the crust brown.
  • Beat together the eggs and water, the mixture should be fluid.
  • Lightly dust the chicken with flour, then dip in the egg mixture.
  • Gently coat in the bread crumbs.
  • Carefully transfer the roulades to a baking pan and bake for 20 minutes until browned and cooked through.

It's sure to be a favorite with the picky eaters in your life--especially those who don't like chicken. Serve with steamed rice and green vegetable of your choice.

4 (5 ounce) skinless, boneless chicken breast halves
8 slices bacon
1 (16 ounce) package sliced fresh mushrooms
1 tablespoon minced garlic
1 (12 ounce bottle) apple ale, such as Red's®, divided
2 tablespoons cornstarch, divided
1 cup milk
⅓ cup salted butter
1 teaspoon chicken bouillon granules
2 large eggs
1 ½ cups dry bread crumbs
8 thin slices Swiss cheese, cut in half

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place chicken in the freezer until slightly frozen, about 15 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels and cut in half when cool.
  • Add mushrooms and garlic to the bacon fat and cook over medium-high heat, stirring occasionally, for about 2 minutes.
  • Mix 1/2 of the ale with 1 tablespoon cornstarch in a small bowl. Add to the mushroom mixture; cook and stir until slightly thickened, 2 to 3 minutes. Remove from the heat and set aside.
  • Combine milk and butter in a saucepan over medium heat; cook until butter melts and mixture is warm. Mix remaining beer with remaining cornstarch in a small bowl; add to the milk mixture along with chicken bouillon. Cook and stir until slightly thickened, 3 to 5 minutes. Remove from the heat and combine with mushroom mixture.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a casserole dish with parchment paper.
  • Place eggs in a pie plate and mix with a fork until beaten. Place bread crumbs in a separate pie plate.
  • Remove chicken from the freezer. Cut a small pocket into each breast; do not cut in half or cheese will melt out during baking. Divide bacon and Swiss cheese evenly and stuff in chicken breasts. Immediately dip in beaten egg mixture, then dredge in bread crumbs. Place in the prepared casserole dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Just before the chicken is ready, warm the cream sauce on the stove.
  • Plate chicken and ladle warm sauce over each portion.

8 ounces shredded Swiss cheese
4 boneless, skinless chicken breasts
1 cup all-purpose flour

Steps:

  • In a medium bowl, mix the ham and cheese. Gently slice a lengthwise pocket into each chicken breast. Stuff each breast with the ham and cheese mixture and secure with a skewer or a few toothpicks.
  • In a medium shallow bowl, add the flour and season with a pinch of salt and a few grinds of black pepper. In a second medium shallow bowl, add the mustard, paprika, eggs, a pinch of salt and a few grinds of pepper and whisk to combine. In the third medium shallow bowl, add the panko. Run each piece of chicken through these bowls in the order of setting them up: flour, egg then panko.
  • In a large straight-sided pan, add enough oil to just cover the bottom by about 1/4 inch. Heat on medium high and when the oil begins to swirl, add the chicken in batches, placing each piece in the oil away from you so there is less splatter. Add more oil between batches if needed. Cook until the chicken reaches an internal temperature of 160 degrees F, 10 to 15 minutes. Remove to a paper towel-lined plate and season with a pinch of salt and a tiny spritz of lemon.

1/4 cup parmesan cheese
1 tablespoon olive oil

Steps:

  • Preheat oven to 400°F.
  • Place a chicken breast between two pieces of plastic wrap and pound flat and thin without breaking through the meat (Ideally this would make a 1/8 inch thick rectangle).
  • Remove plastic wrap, season with salt and pepper, repeat with remaining breasts.
  • Mix diced ham and shredded cheese together in a bowl, spoon 2-3 tbsp of mixture onto each flattened breast.
  • Fold in the bottom and sides and roll up (this is often difficult to do depending on how the breast flattens out, so I just fold them over and stick lots of tooth picks in them to keep them closed).
  • Combine bread crumbs and parmesan cheese, brush each roll with olive oil and roll in crumb mixture to coat.
  • Place rolls, seam side down, in a shallow baking dish and bake uncovered for 25 minutes (or until chicken is thoroughly cooked).
  • Remove toothpicks before serving!

1/2 cup honey Dijon mustard
2 cups panko breadcrumbs
6 tablespoons salted butter, melted
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
12 slices Swiss cheese, cut into quarters
24 rounds Canadian bacon (about 1 pound), cut into half-moons

Steps:

  • Preheat the oven to 425 degrees F.
  • At a slight angle, cut 6 slits into each of the chicken breasts, making sure not to cut all the way through. You should leave roughly 1/4 inch unsliced. Brush the top of each chicken breast with 1 tablespoon of the mustard.
  • Mix together the breadcrumbs, butter, salt and pepper in a bowl. Sprinkle the breadcrumb mixture evenly over the chicken, using your hands to press the mixture into the mustard. Place a quarter piece of cheese and a half-moon piece of Canadian bacon into each of the slits in each chicken breast. Transfer the stuffed chicken breasts to a baking sheet.
  • Bake until the chicken is cooked through and the breadcrumbs are golden, 20 to 22 minutes. Serve warm with your favorite sides.
  • Freezing instructions: Once the uncooked chicken breasts are assembled, place 4 onto a wax paper-lined baking sheet; repeat with the remaining chicken breasts on a separate lined baking sheet. Transfer the baking sheets to the freezer until the chicken breasts are frozen through, at least 3 hours. Transfer the chicken breasts to 2 wax paper-lined foil pans. Label, date and freeze until ready to eat.
  • When ready to eat, preheat the oven to 425 degrees F. Bake the chicken breasts from frozen until the chicken is cooked through and the breadcrumbs are golden, about 40 minutes. Serve as directed above.

1/2-1 teaspoon seasoning salt
4 -6 roasted garlic cloves, mashed
2 tablespoons minced fresh herbs (parsley, basil, and oregano)
2 tablespoons minced sun-dried tomatoes
1 cup shredded gruyere
2 tablespoons pine nuts, lightly toasted
4 slices prosciutto
1/4 cup flour, divided in 1/2
olive oil
2 cups minced vidalia onions
3/4 cup sweet vermouth (or dry)
1 cup chicken broth
1/2 lb farfalle pasta, cooked according to package
2 cups fresh baby spinach leaves, washed and dried

Steps:

  • In a large ziplock bag place one breast at a time; and close bag leaving 2 inches open; pound with a mallet till 3/4 inches thick.
  • Season each with seasoned salt and distribute the garlic on each; following with herbs, tomatoes, cheese, pine nuts, then lay a slice of prosciutto on each.
  • Roll each breast up and tie securing with cotton string to secure filling both lengthwise and crosswise.
  • Dust each roll with 1/8 cup of flour. Shake off excess.
  • Heat a large frying pan add olive oil to coat bottom of pan.
  • Saute onions for 3 minutes stirring.
  • Push onions aside add oil if needed and brown chicken turning on each side after a minute per side, 4 minutes in all.
  • Add sweet vermouth to deglaze simmer while mixing 1/8 cup of the remaining flour with water to make a slurry.
  • Remove only the chicken and place under foil to keep warm.
  • Add slurry to pan with broth simmering and stirring till thicken about 5 minutes when no flour taste remains. Place chicken in the sauce just to coat then remove.
  • Toss cooked pasta into the sauce.
  • Plate pasta on optional fresh spinach then place sliced chicken on pasta.
  • Or chop spinach and toss into hot pasta just before serving just to wilt then top with sliced chicken.
  • Garnish with basil.

8 slices cooked ham
4 slices Swiss cheese, cut into 1 inch pieces

1 teaspoon dried thyme
¼ cup melted butter
½ cup cornflakes cereal crumbs
1 (10.75 ounce) can condensed cream of chicken soup
½ cup sour cream
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.

6 chicken breasts, skinless and boneless
18 fresh asparagus spears, trimmed
1 (6 ounce) package seasoned stuffing mix (Stove Top )
1/4 teaspoon coarse salt
1/8 tespoon white pepper
1/4 cup butter, melted
1/4 cup Dijon mustard
2 garlic cloves, finely chopped
1/4 cup dry white wine
6 slices deli smoked ham, sliced thin
6 slices of deli aged-swiss cheese, sliced thin
1 cup seasoned dry bread crumb
2 tablespoons butter
2 shallots, chopped finely
1 cup heavy whipping cream
3/4 cup dry white wine
2 tablespoons all-purpose flour
1 teaspoon coarse salt
1/4 teaspoon white pepper
1/2 teaspoon onion powder
1 teaspoon dried parsley flakes (rub between fingers to waken flavor)

Steps:

  • Preheat oven to 350 degrees F.
  • Wash the chicken and pat dry with paper towels. Place between 2 pieces of waxed paper; pound with the flat side of a wooden mallet to about 1/4-inch thickness. (Cook's Tip: Meat should be thin, but be careful not to tear.).
  • Snap off tough bottoms of asparagus. Place in boiling water and cover for 1 minute. Shock in cold water, drain and pat dry. Set aside.
  • Prepare stuffing mix as directed on package; set aside.
  • In a small mixing bowl, combine the salt, pepper, butter, mustard, garlic and wine. Lay out the chicken breasts, brush the inside of each chicken breast with the melted butter mixture.
  • Place 3 asparagus spears on the buttered side of the chicken breast (arrange so that the asparagus tips peek out when the chicken breast is rolled up), and 1 slice each of ham and swiss cheese. Starting from the narrow end, roll each chicken breast up tightly to enclose the filling. (If necessary, secure with toothpicks.)
  • Brush outside of each chicken breast with the remaining butter mixture and then roll in bread crumbs. Place the rolls in a 13x9-inch greased baking dish, seam side down, and top with the prepared stuffing.
  • Bake for 40 minutes, or until the chicken is browned and juices run clear.
  • Meanwhile, prepare the sauce that will accompany this delicious dish.
  • White Wine Sauce:.
  • Over low heat, melt the butter in a medium-size saucepan, add the shallots; cook 7 to 8 minutes, stirring occasionally.
  • Add the cream, wine, flour, salt, pepper, onion powder, and parsley. Stir all together bring to a boil. Reduce heat to low and simmer until the sauce is thickened. (Makes about 1 1/2 cups).

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 7x11-inch baking dish with cooking spray.
  • Place chicken on a cutting board. Holding a sharp knife horizontal to the board, cut a 3-inch deep pocket lengthwise in the thick side of each breast.
