4 ounces cream cheese, softened
4-1/2 teaspoons prepared horseradish
1 tablespoon grated Parmesan cheese
1 pound cooked large shrimp, peeled and deveined
Minced fresh parsley
Seafood cocktail sauce, optional

Steps:

  • In a small bowl, combine the cream cheese, horseradish and Parmesan cheese until blended. Cut a small hole in the corner of a resealable plastic bag; add cream cheese mixture. Butterfly the shrimp along the outside curves. Pipe about 1 teaspoon cream cheese mixture into each shrimp. , Arrange on a serving platter. Sprinkle with parsley. Serve with seafood sauce if desired. Refrigerate leftovers.

Easy Baked Stuffed Shrimp image

These easy baked Stuffed Shrimp are seriously the best! Butterflied shrimp are stuffed with a savory homemade stuffing mixture and baked in the oven.

12 large shrimp (size 16 - 20 per lb)
3 Tbsp butter
1 Tbsp olive oil
1 Tbsp dried minced onion
1 tsp jarred minced garlic
1/2 cup chicken broth
Salt and freshly ground black pepper (to taste)
2 slices white bread
2 tsp chopped fresh parsley (plus more for garnish)

Steps:

  • Preheat oven to 450 degrees F (230 C).
  • Cut bread into tiny cubes.
  • Peel shrimp leaving tail on.
  • Butterfly shrimp by inserting a knife about three-quarters of the way into shrimp near the head and cut nearly all the way down the center of the shrimp's back to the tail, leaving the front of the shrimp intact.
  • Remove vein with tip of the knife.
  • Open cut shrimp until it lies flat.
  • Place shrimp butterflied side down on a baking sheetsprayed with non-stick spray.
  • Press flat part of shrimp gently down to make it even flatter.
  • In a frying pan over medium heat, cook the butter, olive oil, dried minced onion, minced garlic, chicken broth, salt and pepper. Cook and stir 3 minutes.
  • Stir in bread cubes and chopped parsley until combined.
  • Use a melon baller to scoop stuffing mixture into butterflied shrimp.
  • Curl the shrimp tails over top of the stuffing mixture.
  • Bake 5 - 8 minutes.
  • Remove pan from oven and sprinkle stuffed shrimp with more parsley if desired. Serve immediately.

24 uncooked unpeeled large shrimp
1 cup Italian salad dressing
1-1/2 cups seasoned bread crumbs
1 can (6-1/2 ounces) chopped clams, drained and minced
6 tablespoons butter, melted
1-1/2 teaspoons minced fresh parsley

Steps:

  • Peel shrimp, leaving tail section on. Make a deep cut along the top of each shrimp (do not cut all the way through); remove the vein. Place shrimp in a shallow dish; add salad dressing. Set aside for 20 minutes. , Meanwhile, in a large bowl, combine the bread crumbs, clams, butter and parsley. Drain and discard salad dressing. Arrange shrimp in a greased 13x9-in. baking dish. 2 cups fresh bread crumbs
16 extra large shrimp, peeled and deveined, tails left on
Freshly ground black pepper
Salt
2 tablespoons chopped fresh oregano leaves
1 tablespoon chopped fresh thyme leaves
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves
1 tablespoon chopped garlic
4 ounces butter, melted
4 cups arugula, cleaned
2 tablespoons extra-virgin olive oil
1/2 lemon, juiced
Lemon wedges, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the bread crumbs evenly on a baking sheet and toast in the oven until golden brown, about 10 minutes. Watch them carefully as they burn very quickly. Remove from the oven and cool. Raise the oven to 500 degrees F.
  • Butterfly the shrimp by slicing from the tail to the front on the top of the shrimp, where the vein was. Slice as deep as possible without cutting all the way through. Turn the shrimp over and make 3 small shallow slits horizontally across the shrimp, being careful not to cut all the way through. These slits will prevent the shrimp from curling during cooking. Season with salt and pepper and set aside.
  • Mix together the oregano, thyme, parsley, basil and garlic. Add the garlic herb mixture to the bread crumbs and mix well. Season with salt and pepper.
  • Brush a large ovenproof skillet with some of the melted butter, coating the bottom well. Dip the shrimp in the butter, opened side down, and then dredge in the bread crumbs, pressing so they stick. Place the shrimp, bread crumb side up, in the skillet in 1 layer.
  • When all of the shrimp are in the pan, drizzle the top with a little more of the melted butter. Bake for about 5 minutes, or until the shrimp are just cooked through and the bread crumbs are golden brown.
  • Toss the arugula with the olive oil and lemon juice and season with salt and pepper. Divide the arugula among 4 plates. Place 4 shrimp around each pile of arugula. Drizzle with more butter, if desired, and serve with lemon wedges.

1 quart water
1 ½ cups cornstarch
2 eggs
2 cups fresh bread crumbs
5 cups oil for deep frying

Steps:

  • Preheat deep fryer or skillet with oil to 350 degrees F (175 degrees C).
  • In a large bowl, pour in water and mix in cornstarch and eggs.
  • Dip the shrimp into the mixture allowing them to be completely coated. Then roll the shrimp in the breadcrumbs. Coat the shrimp well with the breadcrumbs. Mix up the cornstarch batter again. Dip the breadcrumbs coated shrimp back into the cornstarch batter. Roll the shrimp in the breadcrumbs for a second time. Repeat for each shrimp.
  • Drop shrimp, one at a time, into the hot oil and cook shrimp until they are golden brown.

This is a recipe for shrimp with a seasoned bread stuffing. I love to serve this dish when I have guests for dinner because I can prepare the shrimp early in the day. I've always received rave reviews over this recipe and have shared it often. You may add diced lobster or scallops to the cracker mixture just before baking. Serve with drawn butter.

40 unsalted soda crackers, crushed
1 cup fresh bread crumbs
1 tablespoon garlic powder
½ cup butter, melted
1 tablespoon Worcestershire sauce
1 pinch ground black pepper
2 tablespoons grated Parmesan cheese
½ cup dry white wine
16 jumbo shrimp, peeled and deveined, with tails

Steps:

  • In a medium bowl, mix crushed crackers, bread crumbs and garlic powder. In a small bowl, blend butter and Worcestershire sauce. Mix blended butter, pepper and Parmesan cheese into the cracker mixture. Stir in white wine, using only enough to hold together the mixture.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Butterfly the shrimp using a sharp knife, and arrange back side up in a large baking dish. Stuff shrimp with heaping tablespoons of the cracker mixture.
  • Bake 20 minutes in the preheated oven, until cracker mixture is lightly browned, shrimp are opaque, and the tails have curled.

2 finely minced garlic cloves
35 Ritz crackers, made into crumbs (1 roll)

Steps:

  • Shell, devein shrimp, butterfly and run under cold water.
  • Melt butter, add garlic, parsley, walnuts and mix.

16 uncooked extra-large shrimp (about 1 lb), thawed if frozen, peeled (with tail shells left on), deveined
1 tablespoon butter or margarine
2 tablespoons finely chopped onion
2 tablespoons finely chopped celery
1 clove garlic, finely chopped
2 tablespoons dry white wine or nonalcoholic white wine
1/2 cup soft bread crumbs (about 1 slice bread)
1/4 teaspoon salt
1 tablespoon chopped fresh parsley
2 tablespoons heavy whipping cream
1 can (6 oz) crabmeat, drained, flaked
2 tablespoons grated Parmesan cheese
1/8 teaspoon paprika

Steps:

  • Heat oven to 375°F. Leaving the tail intact, cut a slit on the inside curve of each shrimp without cutting all the way through. Press open to butterfly.
  • In 10-inch skillet, melt butter over medium heat. Cook onion, celery and garlic in butter about 2 minutes, stirring occasionally, until softened. Stir in wine; cook about 30 seconds or until bubbly.
  • In medium bowl, stir vegetable mixture, bread crumbs, salt, parsley, whipping cream and crabmeat until well mixed. Mound slightly less than 1 tablespoon of stuffing onto each butterflied shrimp, pressing to shape.
  • In ungreased 15x10x1-inch pan, place shrimp with stuffing sides up. Sprinkle cheese and paprika over stuffing. Bake about 30 minutes or until shrimp are pink and stuffing is starting to brown.

1 1/2 lbs jumbo shrimp or 1 1/2 lbs jumbo shrimp, peeled,with tail and last shell segment left on (16 shrimp U10/lb)
1 English muffin, finely minced to crumbs
1/4 cup pine nuts, lightly toasted in a little extra virgin olive oil
1/4 cup slivered almonds, lightly toasted in a little extra virgin olive oil
1/4 lb crabmeat, drained and picked over to remove shell and cartilage pieces
4 cloves garlic, finely minced
4 scallions, including tops,finely chopped (green onions)
1 teaspoon extra virgin olive oil
1/4 cup chopped fresh parsley leaves
2 -4 jalapeno peppers, seeded and chopped,to taste
1 tablespoon capers, drained and chopped
1 teaspoon Worcestershire sauce (white Worcestershire if desired for looks, but dark tastes better)
8 ounces cream cheese, room temperature
1/2 cup crumbled feta cheese, room temperature (4 oz)
1 -2 tablespoon fresh lemon juice, to taste
salt & freshly ground black pepper
1 dash paprika (if baking naked) (optional)
lemon wedges or lemon juice, as accompaniment
1 egg, lightly beaten (optional)

Steps:

  • Butterfly shrimp by cutting down through the back most of the way through the shrimp.
  • Devein and press to flatten, cut side up, on a cookie sheet or large shallow baking pan.
  • Press with paper towels to remove excess moisture.
  • Combine muffin crumbs, nuts, and crabmeat in a medium bowl, and set aside.
  • Saute onions and garlic in olive oil over medium heat until softened.
  • Add parsley, jalapeno peppers, capers, and Worcestershire sauce.
  • Reduce heat; add lemon juice, cream cheese, and feta cheese.
  • Mix thoroughly, allowing to heat just until cheese is smooth and mixed with vegetables.
  • Remove from heat, and add to crumb mixture.
  • Toss together gently until thoroughly combined.
  • Season to taste with salt and freshly ground pepper.
  • Place 2-3 Tbsp of cheese mixture on top of each shrimp, molding and smoothing to cover.
  • Place in freezer for about 30 minutes to firm.
  • If deep frying battered shrimp, preheat oven to 250 degrees F.
  • Make batter by beating together egg and beer, wine, or water; if using beer, beat a little extra to reduce foam.
  • Add all remaining ingredients, and mix just until dry ingredients are combined with the liquid.
  • Let batter rest about 5-10 minutes.
  • Heat about 2" of oil to 375 degrees F in a large saucepan or deep fryer.
  • Dip prepared shrimp in batter one at a time, holding by tail, allowing excess batter to drain from shrimp before placing in hot oil.
  • Cook 4-6 at a time until browned, turning once.
  • Remove to a pan lined with paper towels and keep warm in the oven while cooking remaining shrimp.
  • Allow oil to return to 375 degrees F before cooking each batch.
  • Serve immediately with lemon wedges, tartar sauce, and/or cocktail sauce if desired.
  • If baking breaded shrimp, preheat oven to 350 degrees F.
  • Lightly oil baking sheet and sprinkle lightly with breadcrumbs.
  • If breading, brush tops of prepared shrimp lightly with egg-wash.
  • Press breadcrumbs onto surface until they adhere, and place on baking sheet.
  • After all shrimp are coated, sprinkle with paprika and drizzle with melted butter.
  • Bake for about 25 minutes or until lightly browned.
  • Drizzle with fresh lemon juice, if desired.
  • If serving naked, sprinkle prepared shrimp lightly with paprika, and bake as above, until lightly browned and bubbly.
  • Naked shrimp can also be cooked on the barbecue, over low to medium coals.
  • Place on oiled grate, cheese side up.
  • Do not turn unless you love the taste and smell of burning cheese.
  • Cook, covered for about 10 minutes.
  • Drizzle with fresh lemon juice if desired.
