This Southern Fried Cornbread, also known as hoecakes is a classic. These can go with any meal or enjoy for breakfast with syrup!

1 1/2 cups self-rising cornmeal
2/3 cups buttermilk or can use regular milk (too)
1 egg
1/2 teaspoon salt
2/3 cup oil (I use canola oil for cooking)

Steps:

  • Mix meal, milk, egg and salt together. Drop by spoonful into hot oil. Brown on one side then turn and fry until golden brown on both sides.

Hoecakes (or as my grandmother calls them, fried bread) are the perfect combination of my favorites: a pancake and cornbread. Served with maple syrup or a simple drizzle of honey, this dish can be served at breakfast or as a side item during dinner.

2 large eggs
1 cup buttermilk, plus more if needed
1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/4 cup vegetable oil, plus more for the skillet
Unsalted butter, for the skillet, plus more for serving, optional
Syrup, for serving, optional

Steps:

  • Preheat the oven to 200 degrees F. Line a baking sheet with a wire rack.
  • Whisk the eggs and buttermilk in a medium bowl until beaten and combined. Whisk together the cornmeal, flour, sugar, baking powder and salt in a large bowl.
  • Combine the wet ingredients with the dry ingredients. Add a splash of water or an extra splash of buttermilk if it feels too thick. Add 1/4 cup of the vegetable oil and stir until just combined, being careful not to overmix. This is a thick batter.
  • Melt equal parts (about 2 tablespoons each) butter and vegetable oil in a large cast-iron skillet or griddle over medium heat. Working in batches, use an ice cream scoop to add small scoops (about 3 tablespoons each) of the batter to the skillet. Cook the hoecakes until bubbles start to appear in the face-up batter, 2 to 3 minutes. Flip and cook for another 1 to 2 minutes.
  • Remove the hoecakes to the wire rack and keep in the oven until they are all finished. Wipe out the skillet in between batches and add more butter and oil before repeating with the remaining batter.
  • Serve hot and fresh with butter and maple syrup if desired.

PERFECT PANCAKE RECIPE WITHOUT BUTTERMILK

2 eggs (large)
1 1/4 cups milk
2 teaspoons vanilla extract
3 tablespoons butter (melted)
1 1/2 cups all purpose flour
3/4 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar (substitute 1/4 cup malted milk powder for a more "diner style" pancake )

Steps:

  • In a medium bowl beat the eggs, milk, vanilla and butter. Set aside.
  • In a small bowl mix the flour, salt, baking powder and sugar (or malted milk) and whisk together.
  • Pour the flour mixture in to the egg mixture and whisk gently a few times to combine. Stop as soon as no pockets of flour remain. Let batter rest a minimum of 10 minutes or up to overnight in the fridge before cooking.
  • While the batter rests, pre heat a griddle or non stick pan over medium heat until warm. Grease with butter or flavorless oil and use a test drop of batter to see if the pan is ready. It should sizzle gently.
  • Using a 1/4 cup of batter, make circles on the pan but don't mash or spread out the batter. It will spread as it cooks.
  • Reduce heat to medium low and cook pancakes until the edges begin to try and bubbles forming on the surface begin to pop--about 4 to 5 minutes.
  • Flip the pancakes and cook 1 to 2 more minutes or until the pancakes spring back when pressed in the center.
  • Serve warm with maple syrup, butter and fruit.

Yield Makes about 10 small pancakes

Number Of Ingredients 10

1 1/2 cups yellow cornmeal
1 cup all-purpose flour
1/3 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups buttermilk
2 large eggs
5 tablespoons corn oil, plus more if needed
Unsalted butter, for serving
Honey, for serving

Steps:

  • Stir together cornmeal, flour, sugar, salt, and baking soda in a medium bowl. Add buttermilk, eggs, and 4 tablespoons oil; whisk until smooth.
  • Heat a large skillet over medium heat until hot. Add remaining tablespoon oil; swirl to coat, and heat until a drop of batter sizzles upon contact. Working in batches, pour 1/3 cup batter per cake into skillet. Cook, turning once, until golden and cooked through, about 4 minutes.
  • Repeat with remaining batter (add more oil if needed, and reduce heat if sides brown too quickly). Serve immediately, topped with butter and honey.

1 cup fine ground cornmeal
1 teaspoon baking powder
3/4 teaspoon salt
2 tablespoons sugar
1 green onion, white and light green portion, finely chopped
1 egg
1 cup buttermilk
1 tablespoon butter, melted
1 tablespoon canola oil

Steps:

  • In a medium size bowl, stir together the cornmeal, baking powder, salt, sugar and green onion.
  • Add the egg, buttermilk and melted butter; whisking to combine.
  • Preheat a griddle until drops of water sizzles when sprinkled on the griddle; lightly oil with canola oil.
  • Pour approximately 1/4 cup of batter onto preheated griddle and allow to form into 2 inch circles.
  • Cook the hoecakes until bubbles form, turn and continue cooking until cooked through.
  • Place on a warmed serving platter; serve hot.

Vegetable oil for frying

Steps:

  • In large bowl, mix flour, cornmeal, sugar, baking powder and salt. In another bowl, beat eggs, buttermilk, water and 1/4 cup oil with whisk. Add to dry ingredients; stir just until combined.
  • In cast-iron or other heavy skillet, heat about 2 tablespoons oil over medium heat. For each hoecake, pour about 1/4 cup batter into hot skillet. Cook until browned on both sides. Repeat with remaining batter, adding more oil to skillet as needed.
