We love this recipe for its great combination of simplicity and flavor. Make it in one pan in the oven with no fussy techniques of any kind. The result is brightly colored and full of complementary flavors that really let the fish shine. There will be plenty of delicious, saucy broth at the bottom of the pan, so we recommend serving on top of our favorite easy orzo to soak it all up. If you don't have striped bass, substitute cod, black sea bass or halibut.

2 shallots, minced
1 red bell pepper, diced small
12 ounces (340 grams) mixed cherry tomatoes, halved (quarter any obnoxiously large ones)
2 garlic cloves, minced
1/4 cup (60 grams) capers
1/2 cup (120 ml) dry white wine
1/2 cup (120 ml) low-sodium vegetable, chicken or fish stock
A few thyme sprigs
1 teaspoon fine sea salt, divided
1/4 teaspoon freshly ground black pepper, divided
4 6- to 8-ounce (200-gram) striped bass fillets, skin and bones removed
2 tablespoons (28 grams) butter, diced
1/4 cup julienned basil leaves

Steps:

  • Preheat oven to 400°F with a rack in the center.
  • Into a large, heavy pan with a lid (such as this one or this one), place the shallots, bell pepper, tomatoes, garlic, capers, wine, stock, thyme, half the salt, and half the pepper. Give it a stir.
  • Bake, covered, for 20 minutes.
  • Pat striped bass fillets dry with paper towels.
  • Carefully remove pan from oven and arrange filets in pan on top of sauce, nestling them in a bit. Sprinkle fish with remaining 1/2 teaspoon salt and dot with butter.
  • Return pan to oven, uncovered. Bake until fish is just cooked through, about 15 to 20 minutes depending on thickness. Sprinkle with the basil.
  • To serve, place about a cup of orzo into each of four wide, shallow bowls and top each with a piece of fish. Spoon some veggies and plenty of sauce overtop.

2 tablespoons coriander seeds
1 tablespoon cracked cardamom pods
1 teaspoon Thai green curry paste
4 sprigs cilantro, stems and leaves separated
2 makrut lime leaves or 1/2 teaspoon finely grated lime zest
1 tablespoon fish sauce
1/3 cup (or more) fresh lime juice
Kosher salt
1 grapefruit
1 lime
2 tablespoons vegetable oil
4 6-ounce striped bass fillets or snapper, John Dory, or black bass fillets, halved if long and narrow
Freshly ground black pepper
Fresh mint and basil leaves, extra-virgin olive oil, and flaky sea salt (such as Maldon; for serving)
Ingredient info: Thai green curry paste is available at Asian markets and in the Asian foods section of many supermarkets.

Steps:

  • Toast coriander, cardamom, and curry paste in a medium saucepan over medium heat, stirring, until spices are fragrant and curry paste begins to caramelize, about 2 minutes. Add cilantro stems, kaffir lime leaves, fish sauce, and 1 cup water. Bring to a boil, reduce heat, and simmer gently until flavors meld, 8-10 minutes.
  • Strain broth through a fine-mesh sieve into a large heatproof measuring cup; discard solids. Let cool, then stir in lime juice; season with kosher salt and more lime juice, if desired.
  • Meanwhile, using a sharp knife, cut all peel and white pith from grapefruit; discard. Working over a small bowl, cut between membranes to release segments into bowl; discard membranes. Repeat with lime.
  • Heat vegetable oil in a large cast-iron or other heavy skillet over medium-high heat. Season fish with salt and pepper. Cook fillets, skin side down, 1 minute, then firmly press down with a fish spatula to ensure even browning and crispiness. Continue cooking until skin is golden brown and fish is mostly cooked through, about 4 minutes; carefully turn fish and sauté until just cooked through, about 1 minute longer.
  • Divide lime broth and fish among shallow bowls. Scatter citrus segments, cilantro leaves, and mint and basil over; drizzle with olive oil and season with sea salt.
  • DO AHEAD: Broth can be made 1 day ahead (do not add lime juice). Cover and chill. Bring to room temperature and add lime juice just before serving.

ROASTED FISH WITH BROWN BUTTER CORN

Corn cooked in browned butter is the backbone of this summer sauce, which is sweet and a little tart, nutty and very creamy.

6 fish fillets such as striped bass, flounder or red snapper, each about 6 to 8 ounces
Kosher salt and freshly ground black pepper
2 1/2 tablespoons butter, softened
3 garlic cloves, minced
1 teaspoon grated lemon zest, optional
Brown buttered corn (see recipe)
1/2 cup vegetable broth or water
2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice, or to taste
Chopped fresh soft herbs (basil, mint, parsley, cilantro)

Steps:

  • Preheat oven to 500 degrees. Season fillets with salt and pepper and place in a baking pan, skin-side down.
  • In a small bowl, mash together the butter, about two-thirds of the garlic, and the lemon zest if using. Smear on top of fish fillets. Roast until cooked through to taste, 7 to 12 minutes depending upon variety of fish and thickness of fillets.
  • Meanwhile, in a blender or food processor, purée half the brown buttered corn with broth or water, oil, lemon juice and remaining garlic. Stir in remaining corn. Serve sauce over fish, garnished with herbs.

BROWN BUTTER STRIPED BASS WITH LIME AND CILANTRO AIOLI

1 cup mayonnaise
1/2 cup finely chopped fresh cilantro, plus more for serving
1 clove garlic, grated
Zest and juice of 1 lime, plus lime wedges, for serving
Kosher salt and freshly cracked black pepper
Four 6-ounce striped bass fillets, skin on
3 tablespoons unsalted butter
Juice of 1 lemon

Steps:

  • Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Make the aioli: In a mixing bowl whisk together the mayo, cilantro, garlic, lime zest and juice. Season with salt and pepper and set aside. (If serving the fish later in the day, let the aioli chill in the refrigerator until ready to serve.)
  • Pat the fish dry with paper towels, then sprinkle with salt. Brush a cast-iron pan with 1/2 tablespoon butter. Place the fish, skin-side down, in the pan and place the pan on the direct heat side of the grill. Cook until the skin is crisp and has released from the pan, 3 to 4 minutes. Flip the fish and add the remaining 2 1/2 tablespoons butter. Move the pan to the indirect heat side of the grill. Let the butter melt and lightly brown, then baste the fish for 1 to 2 minutes. Add the lemon juice and continue basting for another minute. Close the lid of the grill and cook until the fish is cooked through, about 3 more minutes. Remove from the grill and spoon the remaining brown butter in the pan over the fish. Serve with the aioli, cilantro and lime wedges.

PAN-COOKED BASS WITH DILL AND CUCUMBER



Pan-Cooked Bass with Dill and Cucumber image

3 tablespoons unsalted butter
4 (5- to 7-oz) black sea bass or striped bass fillets (1/2 to 3/4 inch thick) with skin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 tablespoons finely chopped fresh dill
1/2 seedless cucumber (often plastic-wrapped), very thinly sliced
Special Equipment

Steps:

  • Melt butter in a 12-inch heavy nonstick skillet, then remove from heat and cool. Put fillets, flesh sides down, in butter, then turn over so skin sides are down. Sprinkle fish with salt (1/2 teaspoon), pepper (1/4 teaspoon), and 1 tablespoon dill. Arrange cucumber slices overlapping on fish (like scales) and season with salt and pepper. Cover fish directly with a piece of buttered parchment paper (buttered side down) large enough to cover it, then tightly cover skillet with lid or foil.
  • Cook fish over moderately high heat until just cooked through, 3 to 5 minutes, depending on thickness of fish. Remove parchment and sprinkle fish with remaining 1/2 tablespoon dill and drizzle with some pan juices.

This inventive dish uses a flavorful broth of cucumber, garlic, and thyme to help infuse pan-fried striped sea bass for a meal that helps you break out of your typical meat-and-potatoes rut.

2 1/2 pounds cucumbers, peeled and seeded
1/4 cup heavy cream
2 tablespoons prepared horseradish
1/2 teaspoon coarse salt, plus more for seasoning
6 fillets striped bass (about 6 ounces each)
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 garlic clove, minced
1/2 teaspoon fresh thyme leaves, plus whole sprigs for garnish

Steps:

  • Cut 1 cucumber into 1/2-inch-thick slices; set aside. Pass remaining cucumbers through a juicer; you should have about 3 cups juice. Set aside.
  • In a medium bowl, whip cream to soft peaks. Stir in horseradish and 1/2 teaspoon salt. Cover with plastic wrap, and place in refrigerator until ready to use.
  • Using a sharp knife, make shallow slits in skin side of fish. Heat oil in a large ovenproof nonstick skillet over medium-high heat until it is very hot. Season both sides of fish fillets with salt and pepper, and place in pan skin side down. Cook until skin is browned, about 5 minutes; turn, and saute until fish is cooked through, about 5 minutes more. Transfer fish to warm shallow serving bowls.
  • Add garlic and reserved cucumber slices to pan; cook over low heat until cucumber is soft and translucent. Add reserved cucumber juice and the thyme leaves; cook just until mixture is hot. Season with salt and pepper. Ladle cucumber broth and slices around fish; garnish with horseradish cream and thyme sprigs.

GINGER-MISO STRIPED BASS IN SHIITAKE MUSHROOM BROTH

4 tablespoons red miso (aka-miso), divided
4 large shiitake mushrooms (about 4 ounces), stemmed, thinly sliced
3 green onions, dark and pale green part thinly sliced, white part minced
4 tablespoons vegetable oil, divided
1 tablespoon minced peeled fresh ginger
2 6-ounce skinless striped bass fillets
1/4 cup panko (Japanese breadcrumbs)
Chopped fresh cilantro

Steps:

  • Whisk 2 cups water and 2 tablespoons red miso in medium saucepan. Add shiitake mushrooms and simmer over medium heat until mushrooms are soft, about 5 minutes. Stir in dark and pale green onion tops. Cover to keep warm and set aside.
  • Meanwhile, mix 2 tablespoons red miso, minced white part of green onion, 2 tablespoons vegetable oil, and minced fresh ginger in small bowl. Sprinkle striped bass fillets with salt and pepper. Spread ginger mixture over 1 side of bass fillets, pressing to adhere. Sprinkle panko over coated side of fillets; press to adhere.
  • Heat 2 tablespoons vegetable oil in medium nonstick skillet over medium-high heat. Add fillets to skillet, coated side down, and sauté until brown and crisp, about 3 minutes. Turn fillets over and sauté until cooked through, about 3 minutes. Divide shiitake mushroom broth and shiitake mushrooms between 2 shallow bowls. Place 1 fish fillet in center of each bowl. Sprinkle chopped fresh cilantro over and serve.

3 inches knob fresh ginger
1/2 cup dry white wine
3 cups vegetable stock
6 shiitake mushrooms, stemmed and sliced thin
2 tablespoons ginger, cut into matchsticks
4 tablespoons butter, cold and diced
2 limes, zest and juice divided
4 scallions, sliced thin on the bias
2 tablespoons fresh cilantro, chopped plus cilantro for garnish
1 pinch cayenne pepper
salt & freshly ground black pepper
2 tablespoons olive oil
36 ounces striped bass, skin on (6 pieces)

Steps:

  • Make ginger juice with the 3 inch knob of fresh ginger by grating it into a thin cotton kitchen towel or piece of cheesecloth, then squeeze the juice into a bowl (you want 2 tablespoons); set aside.
  • In a medium saucepan, bring the wine to a boil and cook for about 2 minutes; add vegetable stock, ginger juice, mushrooms, and ginger matchsticks.
  • Cook for 3 minutes, then strain the broth back into the saucepan, reserving both the broth and the solids; set aside.
  • Blend the butter into the broth with an immersion blender; return reserved solids to broth, along with 2 tablespoons lime juice (any extra can be saved for another use), scallions, cilantro, cayenne, and lime zest; cook for 2 minutes then remove from heat.
  • Preheat a grill to medium high; season bass pieces with salt and pepper, drizzle with olive oil.
  • Place bass skin side down on grill and cook 2 minutes, rotate a 1/4 turn and cook 3 minutes; flip and cook until flesh is easily flaked with a knife, about 3 to 5 minutes.
  • Remove fish to a large oval platter, reheat broth and vegetables, then pour it around the fish; garnish with fresh cilantro sprigs.
