STRAWBERRY SHORTCAKE
To prevent the baked biscuits from crumbling when you cut them, wait until they are cool, and use a serrated bread knife to slice them in half very gently. Once sliced, fill them with fresh strawberries and homemade whipped cream for a classic take on this old-fashioned dessert.

- Preheat oven to 375 degrees. In a medium bowl, toss strawberries with 3/4 cup sugar; let sit to bring out their juices.
- In a food processor, pulse flour, baking powder, 1/2 cup sugar, and the salt until combined. Add butter, and pulse until mixture resembles coarse meal but with some pea-size bits of butter remaining, 10 to 12 times. In a medium bowl, whisk together 1/2 cup cream and the eggs; pour over flour mixture, and pulse until some large clumps begin to form, 25 to 30 times.
- Using a half-cup measuring cup, gently pack dough, invert, and then tap out onto a baking sheet. Repeat to form 8 biscuits. Bake until lightly golden, about 20 minutes. Transfer to a rack to cool, about 15 minutes.
- Beat remaining 1 1/2 cups cream and 2 tablespoons sugar with the vanilla until soft peaks form.
- Slice biscuits in half horizontally. Spoon strawberries and their liquid over bottom halves. Spoon whipped cream on strawberries, and replace top halves of biscuits.

- Line a 20cm cake tin or dish (either a square or rectangle works well) with cling film, leaving an overhang. Whip 500ml of the cream, the vanilla, orange blossom water and 125g icing sugar with an electric whisk until thick and billowy.
- Add a layer of biscuits to the tin, and spoon over some of the cream, about 1cm thick all over. Add a layer of strawberry slices, then repeat with the cream, biscuits and strawberries until you fill the tin, finishing on a layer of biscuit. You'll have some strawberries left over to serve. Press everything down well so every biscuit is covered in cream. Cover and chill overnight.
- To serve, flip the tin onto a serving plate, and remove the cling film. Whip the remaining 100ml cream with 1 tbsp icing sugar and dollop on top of the cake, swirling it around. Top with the remaining strawberry slices in lines, sift over the remaining 1 tbsp icing sugar, and sprinkle the biscuit crumbs in between the rows of strawberries. Cut into slices to serve.

STRAWBERRY SHORTCAKE

- For the angel food cake: Preheat the oven to 325 degrees F.
- Place the sugar in a food processor and process for 2 minutes, until very fine.
- In a bowl, sift together the cake flour, salt and half of the fine sugar. Set aside.
- Combine the egg whites, warm water, cream of tartar and vanilla in large bowl. Whisk by hand for 2 minutes, until well combined. At this point, switch to a stand mixer fitted with the whisk attachment. Beat the egg white mixture until medium peaks form, gradually adding the remaining fine sugar.
- Sprinkle one-third of the flour mixture over the egg white mixture and gently stir it in. Repeat until all of the flour mixture has been evenly incorporated.
- Spoon the cake batter into an ungreased 9-by-13-inch baking dish. Bake until the cake is golden brown and cooked through, 30 minutes.
- Invert the baking dish onto a wire rack. Let the cake cool completely in the dish upside down. Once cooled, carefully scrape the edges of the baking dish to release the cake.
- For the strawberry reduction: Combine the quartered strawberries, water and sugar in a small saucepan over low heat. Bring to a simmer and cook, stirring, for 5 minutes. Raise the heat to medium and cook, stirring occasionally, until the sauces thickens, about 10 minutes. Remove from the heat and allow to cool completely.
- For the whipped cream: Place a metal mixing bowl and a metal whisk in the freezer for 10 to 15 minutes. Place the sugar in the mixing bowl, then add the whipping cream and vanilla. Whisk until the cream just reaches stiff peaks.
- To assemble: Slice the cake horizontally into two equal layers. Place the first cake layer on a cake board. Pour over a thin layer of strawberry reduction and then add a layer of whipped cream. Stack the second cake layer on top.
- Top off the cake with swirls of whipped cream, using a piping bag fitted with a No.1M large tip. Add a strawberry slice to each swirl.

STRAWBERRY SHORTCAKE
When I think of strawberry shortcake, slightly sweetened biscuits filled with berries and cream come to mind. Diners get their own individual dessert and are the happier for it, as individual desserts do that to people. However, back in the day, shortcakes were often made in round 8-inch [20-cm] cake pans. Here, I have toyed with just such a shortcake--referred to as a Fruit Fantasy in Some of My Favorite Good Things to Eat (1940). I baked it in one pan and sliced it into two layers before filling it with fresh fruit, as opposed to the canned option offered in the original (you're welcome).

- Preheat the oven to 425 degrees F [220 degrees C]. Spray an 8-by-2-inch [20-by-5-cm] round cake pan with nonstick cooking spray, then line with parchment paper and set aside.
- For the strawberry filling: Combine the berries and granulated sugar in a medium bowl and allow to macerate on the counter while you prepare and bake the shortcake.
- For the shortcake: Add the all-purpose and cake flours, sugar, baking powder, baking soda and salt to the bowl of a food processor fitted with the metal blade. Cut the butter into small cubes, add to the bowl, and pulse until the mixture resembles coarse meal. Dump the mixture into a large bowl and add the heavy cream. Using a wooden spoon, combine the wet ingredients into the dry, until a shaggy dough forms.
- Dump the dough out onto the counter. Knead the dough until it just comes together and gently press it into the prepared pan. The dough will be crumbly.
- For the egg wash: Combine the egg and heavy cream in a small bowl and brush the egg wash on the top of the shortcake. Sprinkle with the turbinado sugar.
- Bake for 5 minutes. Decrease the heat to 400 degrees F [200 degrees C] and bake for 18 to 22 minutes, rotating the pan at the halfway point. The shortcake is ready when it is golden brown and a cake tester inserted in the center comes out clean. If the top browns too much before the cake is fully baked, tent it with aluminum foil.
- Place the pan on a cooling rack for about 15 minutes, until cool enough to handle. Invert the cake onto a serving plate, so it is right-side up, and let it come almost to room temperature.
- For the whipped cream: Place the cream, confectioners' sugar and vanilla in the bowl of a stand mixer fitted with the whisk attachment and whisk on medium to medium high speed until medium peaks form, 3 to 4 minutes.
- Slice the cake in half horizontally with a large serrated knife. Place strawberries and their juice on the bottom layer, and place the top layer over the berries. Slice and serve with a generous dollop of whipped cream. The cake is best eaten the day it is made.
SIMPLE STRAWBERRY SHORTCAKE
I don't think this really qualifies as a recipe, more like combining a few different items for a super easy, delicious dessert. Throw the strawberries in the fridge before you start making dinner and then put it all together in just a couple minutes after the meal. Big hit with the husband...

- Cover bowl with saran wrap and place in the refrigerator for about one hour.

- Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
- Preheat oven to 425 degrees F.
- Grease and flour an 8-inch round cake pan. In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined. Spread the batter into the prepared pan. Bake in the preheated oven for 15 to 20 minutes or until golden brown. Remove from the oven and let partially cool in pan on wire rack. Slice partially cooled cake in half, making 2 layers. Place half of the strawberries on 1 layer and cover with the other layer. Top with remaining strawberries and cover with the whipped cream. Slice and serve.
STRAWBERRY SHORTCAKE

- For the biscuits:
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Whisk the flour, baking powder, baking soda, sugar, and salt in a large mixing bowl.
- Using a food processor, pastry cutter, or your fingertips incorporate the chilled butter pieces into the dry ingredients until the mixture resembles coarse meal.
- Add the buttermilk and stir just until moistened. On the prepared baking sheet, drop 1/3 cup dough for each biscuit, spacing the mounds about 2-inches apart. Brush with heavy cream, and sprinkle with sugar.
- Bake until the biscuits are golden brown on top, about 15 to 20 minutes, or until a tester comes out clean.
- Place the sliced strawberries in a large bowl. Add the lemon juice, and sugar and gently toss. Let the berries macerate for 30 minutes until the juices develop.
- For the whipped cream:
- Just before serving, whip the heavy cream using an electric mixer with the sugar, and vanilla extract until it holds soft peaks.
- To serve the biscuits:
- Slice the biscuits in half horizontally. Place the bottoms of the biscuits on plates, and divide the prepared berries and a spoonful of whipped cream evenly among the biscuits. Cover with the top portion of the biscuit and serve alongside additional berries and juices.
OLD FASHIONED STRAWBERRY SHORTCAKE
Steps:
- Place the berries in a colander and quickly rinse them under running cold water. Pour them on a pan or tray lined with several thicknesses of paper towel to drain for 5 minutes. Hull the strawberries with the point of a stainless steel paring knife, then slice them into a bowl. Sprinkle with the sugar and lemon juice, then set aside, covered at room temperature for an hour or two.
- Whip the cream (add a couple of tablespoons of sugar, if you like) until it holds a soft peak, cover and refrigerate.
- Preheat the oven to 450 degrees and set rack in the middle level.
- In a food processor combine the self-rising flour and sugar and pulse to mix. Add the butter, cut into 8 to 10 pieces, and pulse until the mixture resembles coarse meal. Transfer the mixture to a large bowl and make a well in the center. With a fork stir in the buttermilk, being careful not to over work the dough. Let the dough stand for a minute or 2 to let the flours absorb the liquid. Flour the work surface and turn the dough out onto it. Fold the dough over on itself 2 or 3 times, until it is smooth and less sticky.
- For a large shortcake, pat the dough into a 9-inch disk on parchment-lined cookie sheet. For individual shortcakes, pat the dough into a 6 by 12-inch rectangle and cut into 8 (3-inch) biscuits with a sharp, floured round cutter. Transfer to a parchment-lined cookie sheet. Paint the tops with the buttermilk and sprinkle with the sugar. Bake for 10 to 15 minutes, until well risen and golden brown. Check the center of the large shortcake with a toothpick to make sure it has baked through. If the pick emerges with dough clinging to it, lower temperature to 350 degrees and bake another 5 minutes.
- Slide the large shortcake onto a platter immediately after it is baked. Use a sharp, serrated knife to slice through the middle, making two layers. Slide the edge of a cookie sheet between the two layers and lift the top layer off. Butter the bottom layer and pour on all but 1/2 cup of the berries.
- Slide the top back on and pour the remaining berries on the top. Split the small shortcakes in the same way and place the bottoms on individual dessert plates. Butter them and top with about 1/3 cup berry mixture. Replace tops and pour a tablespoon or so on the top. Serve immediately, passing the cream in a bowl for the guests to help themselves.

- Heat oven to 220C/fan 200C/gas 7 and lightly flour a baking sheet. Put the flour, butter, sugar, half of the vanilla seeds and ¼ tsp salt into the bowl of a food processor, then pulse until fine. Tip into a large bowl. Beat the milk, egg and a good squeeze of lemon together, then tip into the bowl and bring together with a knife, using a cutting action, until you have a clumpy dough. Finally bring together with your hands if you need to.
- Lightly flour the work surface, tip the dough onto it, then quickly shape into a smooth-ish disc. Using a rolling pin, pat out to 2cm thick. Cut out 8 rounds with a smooth 7cm cutter (you'll need to pinch together the trimmings). Glaze just the tops with beaten egg, transfer to the floured sheet, then bake for 10-12 mins until risen and golden, and they sound hollow when tapped on the bottom. Cool on a wire rack.
- Beat the remaining vanilla seeds and icing sugar into the clotted cream. It will get runnier at first, but keep beating and it will thicken again. To serve, slice the very top from each shortcake to give a flat surface, then spoon over about 1 tsp jam. Top with a good dollop of the vanilla clotted cream and finish with the strawberries.

STRAWBERRY SHORTCAKE
I am afraid I can't remember where I got this recipe or even how much I altered it. I've been using it for several years now. I started off looking for something simple to replace my old Bisquik recipe (as I wanted to stop using baking mix). I wanted something that would be delicately crisp outside and soft inside, rather like a scone or biscuit, but sweeter. This is a drop-biscuit type recipe that makes little oddly-shaped "rocks" of shortcake. It's really delicious, though. I like it topped with whipped fresh cream--no sugar or vanilla. If I can't find fresh cream (no thickeners or other additives), then I add some sugar and/or vanilla. It's best fresh, but I've kept leftovers in plastic bags for a day or two and reheated them for acceptable results (though not as good as fresh).

- Set aside 10-12 of the prettiest berries for garnish. Slice remaining berries, toss with a little sugar to taste, and chill until ready to use.
- Preheat oven to 450°F Grease a baking sheet.

I made this by accident when i used too much sugar in the bread part, but everyone said that it was the best strawberry shortcake they had ever had. (original recipe from bisquick box) Strawberries is my own way of making them though!!

- Take half of the strawberries and slice them into small chunks.
- Add 1/4 cup of sugar to berries and mash.
- This will bring out the juices of the berries.
- Next, slice the rest of the berries any way you choose, bigger but thin is what i use.
- Add the sliced berries to mashed berries along with remaining 1/4 cup and stir.
- Set aside.
- Heat Oven to 425.
- Now for the dough.
- Mix bisquick, milk, 3TBSP butter, and 1/2 cup sugar until soft dough forms.
- Press into the bottom of a round cake pan.
- Bake for about 10-12 minutes or until golden brown.
- About half way through pull out dough and sprinkle cinnamon over top, cook for remainder of time.
- Afer cake is done, i reccomend taking a slice and cutting it in half, pile with strawberries and cool whip and enjoy!
