OVEN BAKED CHICKEN QUESADILLAS

This is how to make multiple Quesadillas in one batch, rather than making them one by one on the stove! They are crispy and stuffed with Fajita flavoured chicken, onion, capsicum/bell peppers and of course cheese. 400 g / 14 oz chicken (, cut into small bite size pieces (thigh, breast or tenderloin))
1 tsp cumin powder
1 tsp garlic powder (or sub with onion powder)
1/2 tsp cayenne pepper ((or adjust to taste))
1 tsp paprika powder
1/2 tsp salt + black pepper
1 tbsp olive oil
1 tbsp olive oil
1/2 small onion (, diced (brown, white, yellow))
1 garlic clove (, minced)
1 red capsicum / bell pepper (, diced)
1 green capsicum / bell pepper (, diced)
4 flour tortillas ((20cm/8"))
Olive oil spray
1 cups grated cheese, or more to taste ((tasty, cheddar, Monterey Jack, Pepper Jack or other melting cheese of choice) (Note 1))

Steps:

  • Place Chicken ingredients in a bowl and mix to coat chicken.
  • Heat oil in skillet over high heat. Add onion and garlic, cook for 1 minute. Then add capsicum and cook for 2 minutes until starting to soften. Transfer into bowl.
  • Return skillet to the stove. Add chicken and cook until browned. Add to same bowl. Set aside until the filling cools (to speed it up, cover and refrigerate, and/or spread out on plate).
  • Preheat oven to 220C / 430F (standard) or 200C/390F (fan / convection).
  • Spray baking tray lightly with olive oil. Heat in the oven while you assemble the quesadillas.
  • Divide the filling between the tortillas, covering half the surface. Top with cheese. Fold in half and press down gently but firmly.
  • Remove baking tray from oven. Transfer quesadillas onto tray (you should hear a soft sizzle).
  • Bake for 8 minutes. Then turn the quesadillas (over the folded edge) then press down with the egg flip. Bake for a further 8 minutes or until the surface is crispy.
  • Remove from oven and serve immediately!

1 cup pastina pasta (or any small pasta)
2 tablespoons olive oil
1/2 cup cubed chicken breast (1-inch cubes)
1/2 cup diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5-ounce) can diced tomatoes with juice
1 cup shredded mozzarella
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup bread crumbs
1/4 cup grated Parmesan
1 tablespoon butter, plus more for buttering the baking dish

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until just tender, stirring occasionally, about 5 minutes. Drain pasta into a large mixing bowl.
  • Meanwhile, put the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more. Put the chicken mixture into the bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt, and pepper. Stir to combine. Place the mixture in a buttered 8 by 8 by 2-inch baking dish. In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake until the top is golden brown, about 30 minutes.

This is delicious, easy to prepare, and great for company. Put it into the oven before your guests arrive and have the water and spinach ready to go. It comes together quick and easy. I have always used the skin on thighs and tossed the linguine with all pan juices. For a lower fat version; you could substitute skinless chicken thighs and/or remove a some of the pan drippings before adding the spinach and pasta (keep in mind that is where all the flavor is and is the sauce for the pasta). Spaghetti or whole-wheat pasta may also be substituted.

1/2 cup butter (1 stick)
1 medium onion, thinly sliced
2 garlic cloves, minced
1 tablespoon dried basil
1/2 teaspoon red pepper flakes (may use more or less)
2 1/2 lbs chicken thighs, rinsed and patted dry (about 8)
2 (10 ounce) packages frozen chopped spinach, thawed
8 ounces linguine
1 cup parmesan cheese, grated

Steps:

  • Melt butter in a 13"x 9"x 3" baking pan in preheated 400 F oven; then remove pan from oven.
  • Stir onion, garlic, basil and red pepper flakes into the melted butter.
  • Place chicken, skin side down, in butter mixture; then turn over.
  • Bake uncovered, until meat next to bone is no longer pink when slashed with knife (about 45 minutes).
  • Place thawed spinach in a clean kitchen towel and squeeze out liquid, set aside.
  • Bring a large pot of salted water to a boil, cook linguine about 10 - 13 minutes. (do this about 10 minutes before chicken is done).
  • When chicken is done, remove thighs from pan and keep warm.
  • Add spinach to the pan and stir to scrape browned bits free.
  • Then add pasta and Parmesan cheese; toss together until all is incorporated.
  • Put pasta into a large bowl, top with chicken thighs and serve.

1 pound penne pasta (cooked and drained to package instructions in well-salted water)
1 pound chicken (cooked, and diced into bite-sized pieces)
25 ounces Marinara sauce ((I am using a jar of Aldi organic Marinara))
1 1/2 cups shredded part skim mozzarella
1/4 teaspoon oregano
2 Tablespoons chopped fresh parsley ((optional, fresh basil would also be fantastic!))
1 pound part skim ricotta cheese
1/3 cup parmesan cheese (grated)
1 teaspoon parsley (dried)
3/4 teaspoon garlic powder
1/4 teaspoon salt and pepper ((1/4 teaspoon each))

Steps:

  • Preheat oven to 375 degrees.
  • Mix up the ricotta parmesan filling in a medium bowl, and set aside.
  • Toss the cooked pasta with the jar of sauce. I do this in the same (empty, removed from heat) pot I cooked the pasta in to dirty up fewer dishes.
  • Pour half the pasta and sauce in a casserole dish. I am using a Corningware 2.5 quart casseroled dish. A 9 x 13 also works.
  • Spoon on ricotta filling, and use the back of your spoon to carefully spread it around evenly.
  • Add the other half of the pasta mixture.
  • Layer on the bite-sized chicken pieces, making sure to spread them somewhat evenly.
  • Sprinkle on the mozzarella cheese.
  • Sprinkle the dried oregano on top of that.
  • Bake in a preheated oven at 375 degrees until the cheese melts, about 15 to 17 minutes. See notes for baking pre-prepped refrigerated version.
  • Remove from oven, and sprinkle on fresh herbs (parsley or basil) to garnish, if desired.
  • Serve immediately.

Steps:

  • Preheat the oven to 350 degree F. Grease a 9X13 baking dish with oil and keep it aside.
  • Cook the pasta according to the package instructions and add the broccoli florets before 2 minutes and drain the pasta along with the broccoli and keep it aside.
  • Season the chicken pieces with Italian seasonings, garlic powder, black pepper and salt.
  • Heat a cast iron pot on a medium flame with oil, add the chicken pieces and cook for 4-5 minutes.
