Homemade strawberry popsicles are healthy, refreshing, and sweet. Made with just 4 ingredients, they're packed with fresh strawberries and no refined sugar.

4 cups strawberries, fresh or frozen, hulled
1 cup plain Greek yogurt
2 tablespoons honey (or to taste)
1 tablespoon lemon juice

Steps:

  • Add strawberries, yogurt, honey, and lemon juice into a blender or food processor or blender. Blend until smooth, about 1 minute.
  • Slowly pour the strawberry mixture into popsicle molds until it almost fills to the top, leaving about 1/4-inch off the rim. Close the lid and add popsicle sticks.
  • Transfer to the freezer until frozen completely, at least 4 hours or overnight.
  • When ready to serve, run the popsicle mold under hot water for a few seconds to loosen the popsicles from the mold for easy release.

15 ounces (425g) washed, hulled strawberries, halved (about 4 cups; see note)
3 ounces granulated sugar (1/4 cup plus 2 tablespoons; 85g)
1/4 ounce (1 tablespoon plus 1 1/2 teaspoons; 5g) freeze-dried strawberry powder, optional (see note)
3/4 teaspoon fresh lemon juice from one lemon (3g)
1/8 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
3 ounces strawberry jam (1/4 cup plus 2 tablespoons; 85g)

Steps:

  • In a blender, combine strawberries, sugar, freeze-dried strawberry powder (if using), lemon juice, and salt, and process until very smooth, about 30 seconds.
  • Pour purée into a medium bowl, add jam, and whisk until thoroughly combined.
  • Divide evenly between six 3-fluid-ounce popsicle molds and freeze until solid, at least 8 hours (to make filling the molds easier, you can transfer the puréed strawberry base back to the blender jar or to a measuring cup or another vessel with a spout first). To unmold, follow your popsicle mold's instructions.

Easy and fast to put together .Freeze it to get a popsicle or when it's half frozen, drink it with a straw. I'm not sure how many it makes, it depends on the size or the popsicle moulds. The amount of sugar and lime can be increased or decreased.

Steps:

I got myself a new popsicle maker and put together an easy recipe for some delicious popsicles. With the heat wave we are having, these ought to be just right.

2/3 cup coffee creamer (I used plain coconut)
1 teaspoon vanilla extract
1 pint organic strawberry (divided)
1 (6 ounce) container raspberry yogurt (I used coconut)

Steps:

  • Clean the strawberries and remove the stems. Set 6 berries aside for later.
  • Put the strawberries, yogurt, vanilla and creamer into the blender and process until smooth. Transfer to a 4 cup measuring cup.
  • Chop up the saved strawberries and add to the liquid mixture. Give it a good stir.
  • Pour the liquid into your popsicle molds and put in the freezer for about 3 hours, or until frozen through.
  • Bon Appetit!
