- Add water, milk, sugar, honey, and oil to pot and warm to 120 degrees.
- Remove from heat, add yeast to mixture, stir until dissolved, and let foam, up to 10 minutes.
- In mixer, put in all flour and salt, leaving out just enough flour to very lightly flour your board.

- Move mixer to setting 2 and mix/knead another 9 minutes.
- Remove dough from mixer, roll lightly on board to shape into a somewhat smooth ball.
- Place dough in greased bowl, roll to coat, cover with plastic wrap and a towel, then set in warm place to rise until doubled (about 30 minutes).
- Once doubled, punch down and transfer dough back to mixer. Knead with bread hook another 3 - 5 minutes.
- Tightly roll loaf (look for directions on this site) and put in oiled bread pan.
- Lightly cover with plastic wrap and napkin and let rise in warm place 30 to 45 minutes.
- Put in preheated 375 degree oven (water bath optional) and bake 45 minutes.

"OLD RELIABLE" FRENCH BREAD (FOR KITCHEN AID MIXERS)
This recipe came with my Kitchen Aid mixer, and makes two absolutely beautiful loaves of French Bread. I misplaced my recipe book and recently found it again, so am adding this recipe to Zaar for safe-keeping! Make sure you use a very, very sharp knife to make the diagonal slashes. This bread is delicious on its own, for sopping up stew or soup broth, and with your favorite cheeses or toppings. Prep time specified includes rising time.

EARL'S HOMEMADE BREAD
A delicious, sturdy white bread. Measuring: when measuring the flour, fluff it with a spoon and then spoon it into the measuring cup and level but DO NOT PACK. This is the most important thing for getting consistency

Steps:
- Place all dry ingredients in the mixer bowl but don't turn on mixer. In a separate container, place the warm water and add the oil first and then the honey, using the same measuring spoon, as the oil will keep the honey from sticking to the spoon.
- Stir the liquids together and stir them, then turn on the mixer with dough hook installed to low speed for 15 seconds. Then add the liquid mixture all at once and turn the mixer to its lowest speed for about a minute and a half-until ingredients are pretty well together and shut it off. Let it rest this way for 10 minutes.
- Turn the mixer to the second speed and let it run 3 minutes. Remove the dough hook and turn the dough onto a floured board or table. Knead 3 or 4 times to get the air bubbles out.
- Place it in an oiled bowl (you can put it back in the mixer bowl) and put it in a warm place, like your oven with a cloth draped over it for 1 hour. At the end of the hour, punch it down and turn it onto the floured surface and knead another three or four times. Form loaves and put into 2 loaf pans.
- Put them in the same warm place with a cloth draped over them and let them rise 45 minutes.
- Preheat oven to 375 degrees and bake for 30 to 35 minutes or until crust is the color you like. If you put a small pan of water on the rack below the bread, it will make the crust softer and chewier. Remove from pans and let cool at least 30 minutes on a wire rack.
- I usually brush the tops with olive oil because it softens the crust a bit and makes the loaves look nice.
- This bread has a wonderful flavor and keeps very well.

MAKE BREAD WITH A STAND MIXER: 7 EXPERT TIPS | KITCHENAID
From kitchenaid.ca
- HOW LONG SHOULD I KNEAD BREAD DOUGH IN A KITCHENAID® MIXER? Mix bread dough for no more than 2 minutes and then, depending on the recipe, knead for 2–4 minutes.
- WHAT SPEED SHOULD I USE TO KNEAD DOUGH IN A STAND MIXER? We recommend only mixing bread dough on speed 2. At a lower speed, the mixer won’t deliver enough momentum to effectively knead the dough.
- DECIDING WHICH STAND MIXER ACCESSORY IS MEANT TO KNEAD DOUGH? Depending on the model of your stand mixer and bowl, there are two types of dough hooks—“C” shaped or Spiral shaped.
- WHAT FLOUR IS BEST TO MAKE STAND MIXER BREAD? The good news is that you can use just about any kind of flour, perfect for experimenting with a range of stand mixer bread recipes and techniques.
- HOW MUCH WATER DO I NEED TO KNEAD DOUGH? How much water you need to knead dough depends on the recipe, flour type, and the humidity and temperature of your kitchen.
- HOW DO I STOP THE DOUGH FROM CLINGING TO THE STAND MIXER BOWL? You can stop the dough from sticking to the sides of the stand mixer bowl only by using the proper ratio of liquid ingredients to dry ingredients.
- I NEED A RECIPE FOR MAKING BREAD WITH A KITCHENAID® STAND MIXER. Use any of your favourite recipes as long as you adjust the kneading time. Start with this Basic Bread recipe if you’re new to this technique and want to master the basics.
