SLOW COOKER SHORT RIBS

1 tbsp. canola oil
3 pounds bone-in beef chuck short ribs
2 medium onions, peeled and quartered
2 medium carrots, cut into large chunks
2 medium parsnips, cut into large chunks
2 medium turnips, peeled and cut into large chunks
4 sprigs fresh rosemary
4 sprigs fresh thyme
4 sprigs fresh parsley, stems and leaves separated
1 tbsp. Worcestershire sauce
1 tbsp. spicy brown mustard
1 (12-ounce) dark stout beer, such as Guinness
Kosher salt
Black pepper

Steps:

  • In a large skillet over medium-high heat, add the oil. Season the short ribs with salt and pepper. When the oil is hot, brown the short ribs, in batches, until they are browned on all sides, about 3-4 minutes per side.
  • While the short ribs are browning, place a layer of onion and carrot pieces into the bottom of a slow cooker and season them with salt and pepper. Place the browned meat on top. Add the remaining onions and carrots along with the parsnips and turnips. Tie together the rosemary and thyme with the parsley stems and add them to the pot along with the Worcestershire and mustard. Pour over the stout and add enough water to almost cover the contents. Cover and cook on low for 6-8 hours, or until the meat is very tender.
  • To serve, carefully remove the meat and vegetables from the slow cooker. Strain the juices. Serve the ribs with the juice and garnish with chopped parsley leaves.

  • Put in slow cooker.
  • In same skillet, combine remaining ingredients.
  • Bring to a boil, stirring.

  • Cover and cook on low for 9 hours.

1/2 cup packed light brown sugar
2 tablespoons sesame oil
2 tablespoons rice vinegar

3 tablespoons cornstarch

1/3 cup soy sauce
1 tablespoon honey
brown rice noodles

Steps:

  • In a small bowl, combine the 5-spice powder, paprika, salt, and pepper.
  • Place the onion and garlic in the bottom of the slow cooker.
  • Put the ribs on top of the onion and coat them evenly with the spice mixture. Keeping the ribs on top of the onions helps to keep them out of the juices and fat that will collect at the bottom during cooking.
  • Turn slow cooker onto LOW and cook for 9 to 10 hours. (No need to add any water or liquid before starting.)

3 1/2 pounds meaty English style cut short ribs, ( bone-in (preferably local farm raised and grass-fed),)
3 tablespoons olive oil
1 cup diced onion (about 1 medium)
4 garlic cloves, (minced)
1/2 cup good quality red wine
2 cups good quality beef stock (homemade or store bought (can substitute chicken broth))
2 tablespoon tomato paste
1/2 teaspoon dried thyme
12 oz mushrooms, (cleaned and quartered (optional))
fresh fresh flat-leaf Italian parsley, (chopped (optional))

Steps:

  • Take the beef short ribs out of refrigerator and let come to room temperature before cooking (about 1/2-1 hour).
  • Preheat oven to 325F/162C degrees.
  • Heat a large dutch oven over high heat. Add tablespoon of olive oil and sear short ribs on all sides until brown, adding additional olive oil as needed. Remove from pan and set aside.
  • Add onion and garlic to the pan and sauté until lightly browned, about 3 minutes. Add wine and cook until reduced by half. Add beef stock, tomato paste, and thyme. Stir well and bring to a boil.

3 lbs beef short ribs ((cut into 2-3-inch pieces crosswise, fat trimmed off))
4 bacon strips
1/3 cup all-purpose flour
2 tsp kosher salt
1/2 tsp ground black pepper
2 Tbsp butter
1 yellow onion ((large, diced or sliced))
4 garlic cloves ((pressed))
2 cups beef broth
2 Tbsp red wine vinegar
1 Tbsp honey ((or brown sugar))
2 Tbsp dark soy sauce

Steps:

  • In a large skillet, fry the bacon strips until most of the fat has rendered out. Remove the bacon and reserve for other uses, or snack on it.
  • Season the ribs with salt and pepper and brown over medium-high heat on all sides, about 4 minutes per side, until deep golden brown. If they brown too fast, reduce heat to medium-high.
  • Transfer short ribs to a slow cooker. For three pounds of beef short ribs a 4-quart slow cooker would be sufficient but you can go as high as 6 quarts.
  • In the same skillet, saute the onion over medium-high heat, until golden brown. Add the garlic and cook for another 20 seconds.
  • Once the garlic is fragrant, add the butter to the skillet and let it melt. Add the flour and stir well. Keep cooking, continuously stirring, until the flour is brown and has a nutty flavor.
  • Add the beef broth and stir well. Add the vinegar, honey and dark soy sauce. Using a wooden spoon, keep stirring and scraping the bottom of the pan to scrape off all the tasty brown bits.
  • Taste the sauce and adjust as needed. It should taste just right. If you want more sweetness, add more honey.
  • Once the sauce starts to bubble, transfer it to the slow cooker. The sauce should cover the ribs at least 3/4 way.
  • Cook on low for 6-7 hours, or 3-4 hours on high. You can cook longer but more fat will be rendered out and the meat won't taste as succulent.
  • Stir well, but be careful to not break the meat pieces. Serve hot over mashed potatoes, pasta, etc.

  • Lay out the ribs on a large baking tray.
  • Season evenly with salt, pepper, garlic powder, paprika, and oregano. Rub in on all sides.
  • Pour half the BBQ sauce over the ribs and brush to evenly coat all sides.
  • Transfer the ribs to a large slow cooker. Position the ribs so they are standing up, with the meatier side down, and so the meat side is against the walls of the slow cooker, with the bone sides facing in.
  • Cover and cook on low for 7 - 8 hours, or high for 4 hours. Check after the allotted time, you want to make sure the meat is cooked through and tender, but you do not want it to be so tender it falls off the bone. If they seem a little tough, allow to cook an additional 30 minutes, as needed.
  • Remove the ribs and transfer to wire rack set over a foil-lined baking sheet.
  • Paint the ribs with additional BBQ sauce, ensuring they are well-coated on both sides.
  • Broil HIGH for 5-8 minutes to caramelize the sauce, making it slightly charred and bubbly.
  • Remove and carefully cut between the bones to separate into individual ribs.
  • Serve with additional BBQ sauce, as needed.

5 pounds ( 3-inch thick cut) bone-in beef short ribs
1 bunch each fresh thyme, rosemary, and sage leaves, chopped
1 bunch each fresh thyme, rosemary, and sage leaves, chopped
2 tablespoons each kosher salt and freshly ground black pepper
2 (750-ml) bottles Cabernet Sauvignon
Olive oil, for searing ribs
1 yellow onion, medium dice
2 carrots, peeled and medium dice
2 ribs celery, medium dice
3 cloves garlic
4 quarts veal stock
3 bay leaves
1-ounce dry porcini mushrooms

Steps:

  • Season the ribs liberally with herbs and salt and pepper. Place in a large non-reactive bowl or deep container and cover with wine. Marinate for 12 hours in the refrigerator.
  • Preheat oven to 375 degrees F.
  • Remove ribs from marinade, pour all the wine into a sauce pot, and reduce by half. Meanwhile, heat a layer of olive oil in a large cast iron pan over medium-high heat. Sear ribs on all sides until well browned. Place browned ribs into a braising or deep roasting pan. Brown onion, carrots, celery, and garlic in the same cast iron pan, adding more oil as needed. Scatter browned vegetables over the ribs. Add the reduced wine, the stock, bay leaves, and mushrooms. Cover the pan with parchment paper and foil and place in the oven for 5 hours. Transfer from the oven and allow the ribs to rest for 1 hour before removing the bones. Skim any fat from the sauce. Remove vegetables from the pan and set aside. While ribs are resting, strain sauce into a sauce pot and reduce for 1 hour. Pour hot sauce over ribs and vegetables and serve.

3 lb bone in, english-cut, short ribs, cut into 2 in (5 cm)
kosher salt, to taste
freshly ground black pepper, to taste
2 tablespoons olive oil
⅓ cup soy sauce
½ cup beef broth
1 teaspoon sesame oil
1 tablespoon red pepper flakes
¼ cup light brown sugar
4 cloves garlic, grated
3 tablespoons ginger paste
2 cans Campbell's® Tomato Soup
2 tablespoons cornstarch
¼ cup water
2 teaspoons mirin
white rice, for serving, cooked
scallion, for garnish
sesame seed, for garnish

Steps:

  • Season the short ribs all over with salt and pepper.
  • Turn the pressure cooker on to the Sauté setting. Add the olive oil to the pot and heat until shimmering. Working in batches, add the short ribs and sear on all sides until browned, 2-3 minutes per side. Once all of the short ribs have been seared, return to the pot, nestling to fit in an even layer.
  • In a small bowl, whisk together the soy sauce, beef broth, sesame oil, red pepper flakes, brown sugar, garlic, and ginger.
  • Pour the sauce and Campbell's® Tomato Soup into the pot over the short ribs. Secure the lid and turn off the Sauté setting, then set to pressure cook on high for 1 hour.
  • In a small bowl, whisk together the cornstarch, water, and mirin until smooth.
  • Release the pressure valve until all the steam has been released. Transfer the short ribs to a bowl and skim off any fat from the surface of the braising liquid. Turn on the Sauté setting and stir the cornstarch slurry into the braising liquid. Bring to a simmer and cook until the sauce has thickened, about 3 minutes. Return the short ribs to the pressure cooker and turn to coat in the sauce.
  • Serve the short ribs over white rice and garnish with sliced scallions and sesame seeds.
