Strawberry season is right around the corner. Try this delicate, heavenly dessert from Everybody Eats Well in Belgium. Raspberries can also be substituted for strawberries.

- Place half the strawberries in a bowl and sprinkle with the granulated sugar and kirsch.
- Let macerate for 15 minutes.
- Puree the remaining strawberries together with the confectioners' sugar in a blender.
- Whip the cream to stiff peaks.
- Reserve a quarter of the whipped cream for garnish and refrigerate.
- Carefully fold the remaining cream into the pureed strawberries.
- Arrange the macerated strawberries in 4 balloon-shaped wine glasses, reserving a few strawberry slices for garnish.
- Fill the glasses with the strawberry cream, cover with plastic wrap, and refrigerate for a few hours.
- Pipe the reserved whipped cream through a pastry bag fitted with a star tip over the mousse and decorate with the remaining sliced strawberries.
- Variation: Substitute an equal amount of raspberries for the strawberries.

- Hull and quarter 1 quart strawberries. Toss with 1 teaspoon sugar in a large bowl. Sprinkle a layer of gingersnap crumbs or graham cracker crumbs in the bottom of parfait glasses. Top with the berries. Mix 1 cup nonfat Greek yogurt with 2 tablespoons honey and 1/2 teaspoon cinnamon, then spoon over the berries.

- Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
- Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
- Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
- Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
- In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.
STRAWBERRY MOUSSE
An nifty, classy-looking creamy, strawberry mousse flavoured with orange zest and Cointreau. Looks as if it would probably have taken ages to make. But it won't have done. Just don't let on. For a non-alcoholic version, omit the Cointreau. The chilling time has not been included in the time taken between preparing the mousse and serving it. This mousse can also be made with other berries or with other fruits.

- Add the contents of the jelly packet to a large heatproof bowl, pour 1 cup of boiling water over the jelly crystals, and stir with a fork until the jelly crystals have dissolved.
- Chill the jelly in the refrigerator until it is the consistency of unbeaten egg whites.
- When the jelly is partially set, add the 11/2-13/4 cups of well-chilled evaporated milk, the orange zest and the Cointreau. Basically add 11/2-13/4 cups of liquid, so 11/2-13/4 cups of evaporated milk if you are NOT adding Cointreau. And if you are adding Cointreau, reduce the quantity of evaporated milk by the amount of Cointreau added.
- Beat the mixture with an electric beater until it is light and fluffy, fold in the cream and most of the strawberry slices. Reserve some strawberry slices for garnish.
- Spoon the mixture evenly into 8 parfait glasses or dessert dishes. If you use smaller glasses, you may well have enough for 10 serves. It looks more elegant in parfait glasses.
- Chill the mousse for several hours, preferably overnight.
- Just before serving, dust each parfait glass with sifted icing sugar (optional), top with several slices of strawberry and serve immediately.
- Chef's Note: Fruits vary enormously in how much moisture they contain, so when it comes to deciding how much liquid to add (i.e. the evaporated milk and the Cointreau) be mindful of this. Since posting this recipe, having not used this recipe for a while, I made this mousse and for the first time added black cherries. The mousse still tasted delicious, but the cherries being a lot heavier than strawberries sunk to the bottom - not a major problem; I still made sure that the mousse and cherries were evenly distributed between the parfait glasses. But because the cherries had a lot more moisture in them than do strawberries, the consistency of the mousse was not as thick as I should have liked. So I have amended the total quantity of liquid to 11/2-13/4 cups Originally, I had specified TWO cups of liquid. It's probably better to err on the side of adding a little less liquid - but it really does depend a lot on what fruit you are adding.

- In a large bowl combine all 3 ingredients and mix until the dough comes together when pinched between fingers.

This is one of my hubby's delicious and eye-pleasing creations. He used tall parfait glasses, filled them 1/3 full of sliced strawberries, filled the glass the rest of the way with the strawberry mousse and then garnished it with a fresh, whole strawberry and sprig of mint. I should have taken a picture! DH used strawberries, but I look forward to trying it with other fruits such as mango, raspberries/blackberries (seived to remove the seeds) and peaches. Yum!

- Place 2 cups of sliced strawberries in a medium bowl. Stir in sugar and allow to macerate at room temperature for 15-20 minutes.

- Soak the gelatine in a bowl of cold water for 10 minutes, or until soft.
- Meanwhile, blend the strawberries, lemon juice and 1 tablespoon of sugar in a food processor until smooth. Remove 100g/3½oz of the purée, cover and store in the fridge until ready to serve (this is to top the mousses).
- Drain the gelatine and add to a bowl with 2 tablespoons of the purée. Melt in the microwave or a small saucepan, but don't let it boil.
- Whisk the egg whites until they hold firm peaks. Add the remaining 4 tablespoons of sugar and whisk again, until stiff, smooth and glossy.
- Whip the cream with the vanilla extract until it holds medium-firm peaks. Using a large spoon, fold the remaining strawberry purée, followed by the gelatine mixture, into the cream until thoroughly combined. Gently fold in the egg whites. Spoon the mousse into glasses, then cover and chill for at least 2 hours, or until set.
- To serve, spoon the reserved strawberry purée over the top of each mousse and top each mousse with a halved strawberry.

- Prepare the raspberry mousse first. Using a large fork or masher, crush the raspberries into a sauce. If using frozen berries, let them thaw first. Add the raspberry liqueur (if making non-alcoholic, omit), sparkling wine extract, and sweetened condensed milk. You can also add a few drops of red food coloring to intensify the color. Melt the white chocolate chips in the microwave until smooth and add to the mixture. Use a whisk to blend all of the ingredients together; set aside.

- Place a metal mixing bowl and the beaters in the freezer. Make sure they chill for 30-60 minutes before whipping the cream. Add the cream container to the freezer in the last 5 minutes of this process so the cream is very cold also.
- Place the strawberries, lemon juice, and the 1/4 C sugar in a blender. Blend for a minute on high until combined and a thick puree results. Set aside.
- Once everything is chilled for the whipped cream, add the cold cream, powdered sugar, and vanilla to the cold mixing bowl.
