I love this recipe for a light summer evening meal. This is my personal variation of a salad I have had in the past. Very quick and easy. Classified as regional to the West for ZWT.

Steps:
- Rinse spinach leaves, discarding stems; pat dry.
- Combine spinach, strawberries, and kiwi in large bowl.
- Add almonds, feta, and onion.
- Toss lightly.
- Top with grilled chicken breasts.
- Add dressing and toss lightly again.

- For the dressing:
- Add 3/4 cup strawberries, white wine vinegar, basil, olive oil, sugar, salt, and pepper to a food processor or blender and puree until smooth.
- For the salad:
- Toss the spinach, cheese, almonds, and remaining 1/4 cup strawberries in a large bowl and lightly drizzle with dressing.

Steps:
- Wash spinach several times.
- Pat dry with paper towels or use a salad spinner.
- The salad spinner works great.
- In a large bowl, combine sugar, oil, vinegar, paprika and Worcestershisre sauce, cover and process for 30 seconds.
- Add onions and seeds.
- Pour over salad and toss to coat.
- Serve immediately.
- You can prepare dressing ahead of time and place in refrigerator.
- Don't pour over salad until time to serve.
- This will keep the spinach fresh and the flavor of the dressing great.
BEST EVER SUMMER STRAWBERRY SPINACH SALAD
This is a very simple and delicious salad to make, especially in the summer. My family does not like spinach very much, but they love this dish. Also great to take to pot luck or church dinners as it is a "different" salad. The secret is to find the pale green fresh baby spinach leaves as opposed to the larger, tough, dark green ones in a bag! Hope you enjoy it as much as we do!

- DRESSING:.
- Beat together egg and vinegar Put in a small pot and simmer, stirring well.
- Continue to simmer, add sugar and onion and cook for 5 minutes.
- Stir occasionally.
- Chill in fridge for 1 hour.
- Wash and drain baby spinach leaves and romaine lettuce well.
- Place in large salad bowl.
- Pour chilled dressing over salad and add strawberries or mandarines on top.
- Mix well.
- Prep time does not include refrigeration.
- If you are low carbing -- use Splenda in place of sugar, and strawberries, no oranges.

- In a large skillet, cook and stir almonds and sugar over low heat until sugar is dissolved and almonds are coated; spread on foil to cool and break apart.
