Yummy!! This recipe will knock the socks off any guest! This recipe my mother originally found out of a cookbook, but unfortunately I do not know which. This works well with both frozen and fresh strawberries. I'd imagine almost any fruit could be substituted as well. (Prep time does not include chilling of strawberries).

2 cups sliced strawberries
1/4 cup sugar
1 (8 ounce) package cream cheese, softened
1/4 cup powdered sugar
2 tablespoons sugar
1/2 teaspoon vanilla
4 eggs
1 1/3 cups milk
2 tablespoons oil or 2 tablespoons melted butter
1 cup flour
1/2 teaspoon salt

Steps:

  • To make strawberry cream: Combine the strawberries and sugar and chill, anywhere from an hour to overnight.
  • Drain excess water from strawberries and sugar.
  • In mixing bowl blend cream cheese and powdered sugar until smooth.
  • Stir in reserved strawberries.
  • To make dessert crepes: Beat eggs; add remaining ingredients (batter can be refrigerated up to 2 hours).
  • Heat pan over med-high heat (you can use an actual crepe pan, but I just use a small frying pan).
  • When a few drops of water sprinkled on the pan bounces is about the right temperature.
  • Pour about 1/8 C of batter into pan, tilting to spread evenly.
  • When the crepe has turned a light brown color you may or may not want to turn to brown other side.
  • Turn to brown other side if batter has not set.
  • Fill crepes with strawberry cream.
  • May serve immedietly or chills well in the refrigerator (up to 2 days).
  • Before serving I usually sprinkle a little extra powdered sugar on the crepes.
  • The dessert crepe receipe will also work well with many other fillings.

Every time I make this, I want to eat it with a spoon. It's creamy but not too rich, thick and refreshing. You can dip fruit in this (bananas, apples, etc) cookies, cake, crepes, ice cream... oh, gosh, anything that goes with strawberries! My favorite way to eat this is to tear off pieces of a desert crepe and scoop up about a teaspoon at a time.

1 lb frozen strawberries or 1 pint fresh strawberries
8 ounces cream cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • Pour strawberries into a microwave safe bowl and thaw in microwave (about 2 1/2 minutes, tossing every 30 seconds), or let them sit in the frig overnight to thaw.
  • Cut berries into 1/2-inch pieces; set aside.
  • Cube cream cheese into a medium mixing bowl: add powdered sugar and vanilla.
  • Using whisk beaters, mix on medium speed until fluffy.
  • Remove bowl from mixing stand.
  • Pour strawberries and any accumulated liquid over creamy mixture and fold in.
  • until completely mixed.
  • Optional: blend berries in blender or food processor before folding into cream to make a smooth dip.
  • Serving suggestions: Toss with fruit to make a fruit salad; serve with dessert crepes, pancakes or waffles, either as filling or topping; pour over vanilla ice cream; use as the cream element for a smoothie; spoon over chunks of sponge cake; use as a dip for cookies, fruit, broken pieces of ice cream cone; etc.

1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
2 teaspoons sugar
1 teaspoon vanilla
1/4 teaspoon salt
2 tablespoons butter (melted) or 2 tablespoons margarine (melted)
3 cups sliced fresh strawberries
1/3 cup sugar
2/3 cup light cream cheese, softened
1/3 cup powdered sugar
3/4 cup nonfat sour cream

Steps:

  • Place ingredients in blender container in order given.
  • Blend 30 seconds,stop and stir down sides.
  • Blend 30-60 seconds until smooth.
  • Or, mix in bowl with wire whisk or mixer, first combining flour and eggs, adding liquid gradually. Beat until smooth; add other ingredients.
  • NOTES : Batter can be used immediately. However, an hour or two standing will produce slightly more tender crepes.
  • Or, refrigerate batter up to three days for use as needed.
  • Measure flour and liquid carefully, since consistency of batter is important. (It should be about the consistency of thick heavy cream.).
  • Spoon flour into 1 cup measure and level off with straight edge of knife or spatula.
  • CREPES: Lightly grease. Measure about 1/4 cup batter into pan. Tilt pan to spread batter. Once crepe has lots of little bubbles, loosen any edges with spatula. Flip crepe over. This side cooks quickly. Slide crepe from pan to plate. Make all the crepes, stacking them as you go. no need to oil the pan again, after the first crepe.
  • Once the crepes have cooled, trim them all to the same size. Make them about 6". Using a lid from a margarine container works great. When no one is looking, eat the scraps -- you worked hard for them, don't throw them out ;).
  • Filling: Combine strawberries and granulated sugar in a bowl; stir well.
  • Cover and chill 1 hour. Combine cream cheese and powdered sugar in a bowl, and beat at medium speed of an electric mixer until blended. Add sour cream, beat until smooth.
  • Spread 1/4 cup cream cheese mixture over half of each crepe, and top with 1/2 cup strawberry mixture. Sprinkle crepes with 1 tablespoon powdered sugar. Serve immediately.

1 tablespoon butter
1 cup frozen strawberries
1 tablespoon cold water
1/4 teaspoon cornstarch
4 teaspoons sugar
1 pinch salt
1/2 teaspoon ground cinnamon (optional)

Steps:

  • In a pot, melt butter on medium heat.
  • Put in frozen strawberries.
  • Dissolve cornstarch in cold water, add to pot.
  • Add sugar and salt.
  • Stir and turn heat down to low-medium.
  • Allow to simmer until strawberries are soft.
  • Smoosh strawberries.
  • If you'd like a thicker consistency, allow to simmer on low heat, uncovered.
  • Remove from heat and allow to cool for one minute.
  • Add cinnamon and vanilla.
  • Wrap in crepes. Make beautiful with fresh strawberries and powdered sugar or whipped cream.

¼ cup skim milk
⅓ cup water
1 tablespoon vegetable oil
⅔ cup all-purpose flour

Steps:

  • In a large bowl, beat together egg, milk, water and oil. Beat in flour, sugar and salt until smooth.
  • Heat a medium, nonstick skillet over medium-high heat. Place a ladleful of crepe batter into center of pan, tilting to coat the bottom. Cook until golden brown on one side, turning once, 2 to 5 minutes. Continue with remaining batter.

7/8 cup flour
1/4 cup sugar
1/8 teaspoon salt
3 eggs
1 teaspoon grated lemon rind (or a lttle grated vanilla bean)
2 tablespoons cognac
2 tablespoons melted butter
1 1/2 cups milk
For filling
1 quart fresh ripe strawberries
Sugar
1/2 cup oloroso sherry
1/3 cup cognac, warmed
Cream or whipped cream

Steps:

  • Make crêpes:
  • Sift flour, sugar, and salt. Add eggs, one at a time, and mix until no lumps remain (you may use an electric mixer at slow speed). Mix in lemon rind or vanilla, cognac, and melted butter. Slowly add milk and mix until batter is consistency of thin cream. Let it stand an hour or two before making crêpes.
  • Heat a crêpe pan (either 6-inch or 10-inch, according to desired size of crêpes) and rub it with butter. For each crêpe, pour a little batter into the pan, tilting about to let it run over the bottom in a fairly thin layer. When lightly browned on the bottom, turn carefully and brown other side. As each crêpe is cooked, remove it to a hot platter and keep warm. Re-butter pan as needed.
  • Make filling:
  • Sprinkle washed, hulled, and sliced strawberries with sugar to taste and add sherry. Let stand to mellow. Heap each crêpe with sliced strawberries, roll up and arrange in a buttered chafing dish and heat over hot water. Melt currant jelly and pour over crêpes. Add and ignite cognac. Serve with plain or whipped cream.

1 (1 1/2 g) package artificial sweetener (or equivalent of 3 teaspoons sugar)
nonstick cooking spray
1 (10 ounce) jar no-sugar-added strawberry all-fruit spread
1 cup cold water
2 tablespoons cornstarch
3 cups thinly sliced strawberries
1/2 cup no-sugar-added orange marmalade spreadable fruit
1/4 cup water
1 cup thinly sliced strawberry

Steps:

  • To prepare crêpes, place egg substitute, milk, margarine and vanilla in blender. Blend 15 seconds. Add cornstarch, salt and artificial sweetener. Blend 30 seconds until smooth.
  • Spray 6-inch nonstick skillet with cooking spray; heat over medium-high heat. Pour 2 tablespoons crêpe batter into skillet. Immediately rotate skillet to swirl batter over entire bottom of skillet. Cook 1 to 2 minutes or until crêpe is golden brown and top is dry. Turn crêpe; cook 30 seconds.   • To assemble crêpes, spread 1/4 cup filling down center of each crêpe; roll tightly. Repeat with remaining crêpes. Place 2 crêpes on each serving plate. Divide 1 cup strawberries among crêpes. Top each serving with 2 tablespoons sauce. Garnish, if desired.

The beef sauce is a recipe that I've developed loosely from beef stroganoff, made with beef stew meat, potatoes, green onions, and any veggies you choose (I prefer carrots and/or broccoli.) The result of this recipe is a creamy, savory dinner that'll leave you wanting more. Serve sauce inside or on top of crepes.

1 tablespoon olive oil
1 pound cubed beef stew meat
salt and ground black pepper to taste
1 medium potato, peeled and cubed
2 medium carrots, chopped
3 stalks green onions, or more to taste, chopped
1 cup milk
1 cup warm water
1 ½ teaspoons beef bouillon granules
2 tablespoons all-purpose flour, or more as needed
¼ cup dry white wine
1 ½ teaspoons Worcestershire sauce
¼ teaspoon garlic powder, or to taste
¼ teaspoon onion powder, or to taste
¼ teaspoon dried cilantro, or to taste
¼ teaspoon dried rosemary, or to taste
1 head broccoli, cut into florets

Steps:

  • Heat oil in a saucepan over medium-high heat. Add beef and season with salt and pepper. Cook and stir until it starts to brown, 4 to 5 minutes. Toss in potato, carrots, and green onions, then pour in milk. Reduce heat to medium and bring to a simmer.
  • Mix 1/2 cup water with bouillon granules. Mix remaining water with flour, whisking until well combined. Add both mixtures to the saucepan and stir to combine. This recipe has been a family favorite for over 30 years! These crepes are delicious and very rich! Be sure you have at least 1 hour to prepare, they are worth every minute!

½ cup milk
½ cup water
3 tablespoons butter, melted
¾ cup all-purpose flour
½ teaspoon salt
1 (8 ounce) package cream cheese, softened
1 ¼ cups sifted confectioners' sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
½ teaspoon vanilla extract
1 cup heavy cream, whipped
4 cups sliced strawberries

Steps:

  • Place the eggs, milk, water, melted butter, flour, and salt in the pitcher of a blender; blend until smooth.
  • Blend the cream cheese, confectioners' sugar, lemon juice, lemon zest, and vanilla with an electric mixer until smooth. Gently fold in the whipped cream.
  • Heat a lightly oiled griddle or non-stick skillet over medium heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Flip over when the batter is set and the edges are beginning to brown. Cook until the other side begins to brown. Stack finished crepes on a plate, cover with a damp towel and set aside.
  • To serve, fill each crepe with 1/4 cup sliced strawberries and 1/3 cup of the cream cheese filling, roll up and top with a small dollop of the cream cheese filling and more sliced strawberries.

3/4 cup instant flour
1 tablespoon granulated sugar
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 cup milk
3 eggs
3 tablespoons butter, melted and cooled
1/2 teaspoon almond extract
1 teaspoon vegetable oil
2 tablespoons butter
2 1/2 cups strawberry halves
2 tablespoons packed brown sugar
2 tablespoons orange juice
1 tablespoon balsamic vinegar or red wine vinegar
1 teaspoon vanilla
Dash of salt
2 tablespoons powdered sugar

Steps:

  • In medium bowl, mix flour, granulated sugar, nutmeg and 1/8 teaspoon salt; set aside. In another medium bowl, beat milk, eggs, 3 tablespoons butter and the almond extract with wire whisk. Make a well in center of dry ingredients and pour in wet ingredients. Gradually beat wet and dry ingredients together until no dry flour mixture is visible. The batter should have the consistency and look of beige house paint. If it's too thick, add more milk, 1 tablespoon at a time.
  • In 8-inch nonstick skillet or crepe pan, pour about 1 teaspoon oil. Use a folded paper towel to wipe oil around entire interior of skillet. Heat skillet over medium heat until hot (a drop of water should skitter across the bottom). Add about 3 tablespoons batter to skillet and immediately tilt skillet to swirl batter so it covers the bottom of the skillet. Cook until tiny bubbles form around the edge and crepe is lightly browned on bottom. Use a spatula to loosen and flip the crepe. Cook other side just a few seconds. Turn finished crepe out onto plate. (Your first crepe may not turn out perfect-that's okay. The second one will.)
  • Repeat with remaining batter. If crepes stick, re-oil bottom of skillet using the same paper towel. Stack crepes, placing a piece of cooking parchment paper or waxed paper between each so they don't stick together. Cover crepes with a kitchen towel so they don't dry out before making the filling. (Stacked crepes, wrapped in plastic wrap, can be stored in the refrigerator 1 day. Bring to room temperature before filling.)
  • In 10-inch skillet, melt 2 tablespoons butter over medium heat. Add strawberries and brown sugar. Cook, stirring occasionally, until strawberries become slightly soft and exude some juice. Add orange juice, vinegar, vanilla and dash of salt. (Mixture will bubble up and you may want to avert your head; the fumes from the vinegar can take your breath away.) Cook uncovered 2 minutes, stirring occasionally, until liquid becomes slightly syrupy. Remove from heat.
  • Remove a crepe from the stack and place it on clean work surface. (Be sure to fill crepes so the more attractive side will be on the outside.) Place about 2 tablespoons warm strawberry filling (try not to include too much of the juice) down middle of crepe. Fold sides of crepe, one at a time, over filling until they meet in the middle and overlap slightly. Repeat with remaining crepes and filling. Dust with powdered sugar.
