Strawberry Compote (3 Ingredients!) image

This fresh strawberry compote is bright and fruity, with big chunks of fresh strawberries and just the right amount of sweetness. Use it on anything from cheesecake to ice cream!

1 pound fresh strawberries (hulled and halved)
2 tablespoons granulated sugar (or to taste)
1 tablespoon lemon juice (optional for tartness)

Steps:

  • Place the strawberries, sugar (and lemon juice if using) in a medium sized saucepan set over medium heat.
  • Stir the strawberries to coat them in sugar and gently mash the strawberries, just until they begin to release a bit of liquid.
  • Bring the mixture to a simmer and cook the berries for 8-10 minutes, stirring often, or until the compote is your desired thickness.
  • Allow the compote to cool completely before transferring it to an airtight container.

This recipe for strawberries Romanoff is a classic Russian-American dessert invented by Michael Romanoff at his namesake now-closed restaurant.

1/4 cup strawberry liqueur
1/4 cup orange-flavored liqueur such as ​ Grand Marnier
2 tablespoons cognac
Juice of 1 lemon
2 tablespoons dark brown sugar (optional if the fruit is sweet)
2 quarts fresh perfectly ripe small to medium strawberries, rinsed
3 pints French vanilla ice cream
1 cup heavy whipping cream (whipped)
Garnish: mint sprigs

Steps:

  • Gather the ingredients.
  • In a large bowl, combine strawberry and orange liqueurs, cognac and lemon juice, and up to 2 tablespoons dark brown sugar if berries are not sweet.
  • Reserve 8 whole strawberries for garnish. Hull the remaining strawberries and cut them in half. Marinate the halves in the liqueur mixture at room temperature for about 15 minutes.
  • In a large bowl, soften 2 pints of the vanilla ice cream and then carefully fold in the whipped cream. Carefully fold in the marinated strawberries, leaving the liquid behind. (If desired, you can drizzle this on top of the finished dessert or drink it.)
  • Place a small scoop of the remaining 1 pint of vanilla ice cream in the bottom of 8 large stemmed glasses. Fill the glasses with the strawberry ice cream and whipped cream mixture.
  • Garnish with one of the reserved whole strawberries and a mint sprig. Sprinkle with brown sugar or confectioners' sugar, if desired. Serve immediately.

10 fresh mint leaves, washed
whipped cream, to taste
icing sugar, to taste
12 fresh strawberries, washed and sliced

Steps:

  • Drop the sliced strawberries, 3 in each glass, into 2 glasses.
  • Add icing sugar to taste on top.
  • Add the remaining fresh strawberries to both glasses, equally, and then, add whipped cream over the strawberries.
  • Top off with fresh mint leaves.
  • Refrigerate for 30 minutes before serving.

1 cup water
1-1/2 cups mashed unsweetened strawberries

Steps:

  • In a saucepan, bring sugar and water to a boil. Gradually add strawberries; return to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally. Serve over pancakes, waffles or ice cream.

2 cups quartered strawberries

Steps:

  • Combine water and sugar in a saucepan over medium-high heat; stir until sugar is dissolved. Mix strawberries into saucepan and bring to a boil; boil for 10 minutes. Reduce heat to medium-low and simmer until strawberries are mushy and sauce is thick, about 10 minutes. Strain liquid into a bottle and refrigerate.
