Strawberry and Hazelnut Salad with Orange Blossom Dressing image

1/2 cup golden raisins
1 1/2 cups raw hazelnuts
2 tablespoons white wine vinegar
1 tablespoon orange blossom water
2 teaspoons honey
Kosher salt
1/4 cup olive oil
8 ounces strawberries (about 12 medium), thinly sliced
9 fresh or dried figs, quartered
1/2 cup dried Turkish apricots, thinly sliced
5 ounces spring mix

Steps:

  • Cover the raisins with hot water in a small bowl and let stand until plump, about 10 minutes. Drain and set aside.
  • Meanwhile, toast the hazelnuts in a large pan over medium-high heat, shaking the pan frequently, until the skins begin to fall off and the nuts are toasted, 5 to 7 minutes. Transfer to a cutting board and coarsely chop. Set aside.
  • Mix the white wine vinegar, orange blossom water, honey and 1/4 teaspoon salt in a large bowl. Whisking constantly, slowly drizzle in the olive oil until emulsified. Add the strawberries, figs, apricots, spring mix, hazelnuts, raisins and 1/2 teaspoon salt to the bowl and toss until well combined. Serve immediately.

⅓ cup vegetable oil

hot sauce

1 (11 ounce) can mandarin oranges, drained
1 cup sliced fresh strawberries

  • Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.

1 bunch of fresh romaine lettuce, freshly torn
1 slice red onion
1 carton of freshly sliced strawberry
1 lb of crisply fried bacon
1 cup slivered almonds or 1 cup sliced almonds
1/3 cup sugar
1 tablespoon butter
3/4 cup mayonnaise
1/4 cup milk
1/3 cup sugar
2 tablespoons poppy seeds
2 -4 tablespoons raspberry vinegar

Steps:

  • Toast almonds with sugar and butter mixed together in 350 degree oven until lightly browned (watch closely) Tear lettuce leaves and toss with red onions, strawberries and chopped fried bacon.
  • When almonds are cool sprinkle on top of salad.
  • Whisk dressing together and pour over salad and toss all together.

My Favorite Strawberry Bacon Salad image

This is our favorite strawberry bacon salad because it's always a crowd-pleaser and if you already have cooked bacon, it takes about 15 minutes to throw together.

8 cups chopped romaine lettuce
1 pound strawberries, sliced
5-6 slices bacon, cooked and chopped
2/3 cup crumbled blue cheese*
2/3 cup chopped pecans*
1/4 cup extra virgin olive oil
2 Tablespoons balsamic vinegar
2 Tablespoon honey
1 teaspoon dijon mustard
salt & freshly ground black pepper, to taste

Steps:

  • Make the vinaigrette first by whisking all of the vinaigrette ingredients together. Taste, then add salt and pepper as needed. You can make the dressing ahead of time and keep it in the refrigerator until ready to use. It's great for up to 2 weeks when stored in the refrigerator.
  • If your bacon is not already cooked, cook it according to its package directions. Cool until ready to handle, then chop it up.
  • In a large bowl, toss all of the salad ingredients together, then mix in the vinaigrette. You may not need all the vinaigrette- use as much or little as you prefer.
  • Plate and serve. Cover and store leftovers in the refrigerator for up to 2 days.
