1 cup uncooked white rice
1 (10.75 ounce) can condensed cream of chicken soup
1 ⅞ cups water
1 (1 ounce) package dry onion soup mix
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread rice in the bottom of a 9x13 inch baking dish. Rinse chicken and pat dry; arrange chicken pieces on top of rice.
  • Mix soup and water together and pour over chicken and rice. Sprinkle dry onion soup mix on top. Cover and seal TIGHTLY with foil. Bake in the preheated oven for 1 to 1 1/2 hours. Enjoy!

4 tablespoons butter, divided
3 tablespoons flour
1 teaspoon dried thyme
1 cup chicken broth
1 cup milk
2 cups diced cooked chicken
1/4 teaspoon salt
1/8 teaspoon black pepper
2 cups cooked rice
3/4 cup frozen peas, thawed
1 tablespoon dry breadcrumbs
1 tablespoon grated parmesan cheese

Steps:

  • Melt 3 tablespoons of butter in a saucepan over medium heat, whisk in flour and thyme and cook for 1 minute.
  • Gradually stir in broth and milk, stirring until thick and smooth.
  • Stir in chicken and add salt and pepper; set aside.
  • Grease a 1 1/2 quart shallow baking dish.
  • Spread rice in prepared baking dish, sprinkle with the peas and then pour creamed chicken mixture over.
  • Dot with remaining tablespoon of butter and sprinkle with bread crumbs and cheese which you mix together.
  • Bake at 400° until hot and bubbly, about 20 to 25 minutes.

2 cups milk
2 cups uncooked white rice
2 (10.75 ounce) cans condensed cream of chicken soup

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine the milk, rice, soup and seasoned salt if desired. Mix well. Pour mixture into a lightly greased 9x13 inch baking dish. Add the chicken pieces.

1 cup diced dill havarti cheese (about 4 ounces)

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. The chicken can be cooked, diced, and frozen way ahead of time. The chicken needs to be thawed before assembling the recipe. I have used the lowest fat cream of celery & mushroom soups with success. If you can't find cream of onion soup, just substitute another cream soup. FYI: 6 cups diced cooked chicken weighs about 2 pounds.

2 (3 pound) fryer chickens
water to cover
1 cup dry sherry
1 onion, sliced
½ cup sliced celery
1 ½ teaspoons salt
½ teaspoon curry powder
½ cup butter
1 pound fresh mushrooms
2 (16 ounce) packages long grain and wild rice mix
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream

Steps:

  • Place chicken in a deep pot and cover with water; add sherry, onion, celery, salt, and curry powder. Bring liquid to a boil, cover pot, reduce heat to medium-low, and simmer until chicken is no longer pink near the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
  • Strain broth from chicken mixture into a bowl and transfer chicken to a work surface to cool until easily handled. Pull meat from the bones and cut into bite-size pieces. Discard bones, onion, and celery.
  • Heat butter in a skillet over medium-high heat; saute mushrooms until golden brown, about 10 minutes.
  • Bring reserved chicken broth and wild rice to a boil in a large saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender, about 45 minutes. Drain excess liquid, fluff rice with a fork, and cook uncovered 5 minutes more.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine chicken, rice, and about 1/2 of the mushrooms in a 4-quart casserole dish. Mix mushroom soup and sour cream together in a bowl and stir into chicken-rice mixture. Arrange remaining mushrooms in a circle on top of the casserole.
  • Bake in the preheated oven until bubbling, about 1 hour.

poultry seasoning
1 (12 ounce) package egg noodles, cooked
8 ounces cheddar cheese, grated
8 ounces mozzarella cheese, grated

3 tablespoons flour
3 cups milk
30 Ritz crackers

Steps:

  • Preheat oven to 350°F.
  • Place chicken breasts on cookie sheet and sprinkle poultry seasoning on top.
  • Bake in oven for 30 minutes (don't worry if not totally done, we will be baking casserole in oven too!).
  • Meanwhile prepare to make a cheese sauce, place butter in a sauce pan and melt.
  • Once melted, add the flour in and stir with wire whisk to combine. Let cook 1 minute.
  • Remove saucepan from heat and SLOWLY add a little of the milk. Stir. Continue doing this untill all flour mixture is incorporated into the milk.
  • Bring just to a boil then add cheeses. Stir to combine. Set aside.
  • Once chicken is done dice into pieces. Leave oven on!
  • Combine chicken, noodles and cheese sauce in a casserole dish and crush Ritz crackers on top.
  • Cover casserole and place into oven and bake for 30 minutes.
  • Uncover and continue cooking for 10 minutes until top is golden brown.
  • Enjoy!
