KITTENCAL'S CREAMY ITALIAN SALAD DRESSING
This dressing must chill for 6 or more hours before serving don't even think about serving it right away as the flavors intensify with chilling time, even better if made a day ahead, I have left the Parmesan as optional you may add in or omit, you may adjust all amounts to taste.

Steps:
- In a blender or food processor blend all ingredients together (except Parmesan cheese and black pepper) until well blended, starting with 2 teaspoons sugar and adding in more if needed after mixing.
- Season with black pepper then mix in Parmesan cheese (if using).
- Adjust all ingredients to taste.
- Cover, and refrigerate for 6 or more hours before using.

POPPY SEED SALAD DRESSING
This is a recipe that our dear friend, Mary, gave to me a couple of years ago. I'm making it prior to our holiday dinner so the flavors have time to meld, and thought I would share it. Now to be honest with you, my first taste of this was okay... my second was better... after the third bite I fell in love with it! (I guess it's an acquired taste, so eat your entire salad). I hope you enjoy this as much as we do. *Note: The recipe is posted per Mary's instructions, but I only use 1/2 cup sugar.

Steps:
- Thoroughly combine the first 6 ingredients. *Note: I only use 1/2 cup sugar, so please use your own judgement).
- Slowly pour, but vigorously whisk, in the oil.
- Stir in the poppy seeds and refrigerate in an airtight jar, if not using immediately. (Best if it has time to meld the flavors for several hours). Be sure to shake dressing well before each use.

- In a blender, combine 1/2 of an onion and just enough water necessary to make smooth.
- Measure 2 TBL of onion puree (or slightly more) and discard any excess.
- Return onion to blender and combine with sugar and oil. Mix well.
- Add dry mustard and salt. Add vinegar. Blend all ingredients well.
- Add poppy seeds and slowly combine with other ingredients. Do not blend.
- Refrigerate overnight for best flavor.

KITTENCAL'S CREAMY RANCH DRESSING/DIP
A creamy dressing with the perfect blend of spices, adjust the amount of dill to suit taste I advise not to use more than 2 teaspoon fresh garlic or it will overpower the dressing, all other amounts may be adjusted to suit taste --- don't even think about serving this dressing until after it's chilled for at least 4 or more hours and the longer the better --- for a lower fat option use low-fat mayonnaise, sour cream and buttermilk --- for Ranch Peppercorn dressing add in 1 tablespoon cracked black pepper or to taste, and for Parmesan ranch dressing add in 1/4 cup grated Parmesan cheese or to taste --- this makes a fantastic veggie dip!
