Strawberry Chicken Salad with Poppy Seed Dressing image

A quick, light, and flavorful lunch or dinner salad that's ready in just 15 minutes!

3 cups fresh baby spinach
3 cups chopped Romaine lettuce
2 cups sliced strawberries
1 stalk celery, thinly sliced
1 avocado, diced
⅓ cup crumbled feta cheese
½ cup slivered almonds, toasted and salted
3-4 cups cooked, shredded or sliced chicken (such as the meat from a store-bought rotisserie chicken)
½ cup Brianna's Poppy Seed dressing, or more or less to taste

Steps:

  • In a large bowl or platter, or on individual plates, arrange spinach and Romaine.
  • Top with strawberries, celery, feta, almonds and chicken.
  • Drizzle with poppy seed dressing, to taste. Serve immediately.

3/4 pound boneless skinless chicken breasts, cut into strips
1/4 cup reduced-sodium chicken broth
1/4 cup poppy seed salad dressing, divided
2 cups fresh baby spinach
1 cup torn romaine
1 cup sliced fresh strawberries
1/4 cup sliced almonds, toasted

Steps:

  • Place chicken on a double thickness of heavy-duty foil (about 18 in. x 15 in.). Combine broth and 1 tablespoon poppy seed dressing; spoon over chicken. Fold edges of foil around chicken mixture, leaving center open. Grill, covered, over medium heat until chicken is no longer pink, 10-12 minutes., In a large salad bowl, combine the spinach, romaine and strawberries. Add the chicken and remaining poppy seed dressing; toss to coat. Sprinkle with almonds.

1/4 cup sugar
3 tablespoons white or balsamic vinegar
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1 tablespoon chopped onion
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 package (9 ounces) fresh spinach, trimmed
4 cups fresh strawberries, sliced
1/4 cup chopped pecans, toasted

Steps:

  • Place the first eight ingredients in a jar with a tight-fitting lid; shake well. Refrigerate for 1 hour., Just before serving, combine the remaining ingredients in a large bowl. Shake dressing and drizzle over salad; toss to coat.

4 cups fresh baby spinach
4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips, cooked and crumbled
DRESSING:
1/4 cup red wine vinegar
1/4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds

Steps:

  • In a large bowl, combine spinach, lettuce, mushrooms and bacon. Place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Transfer to a bowl; stir in poppy seeds., Divide salad among 6 plates; drizzle with dressing.

  • Prep: Cook your chicken and bacon. We like to do our bacon in the oven, according to package directions. I like to season the chicken breast with salt, pepper, and garlic powder. Add 1 TBSP olive oil to a medium pan on the stove top over medium heat and cook chicken 4-6 minutes on each side, until done in the middle (no pink!). OR grill your chicken!
  • Dressing: Add all dressing ingredients (starting with only 3 TBSP sugar) to a mason jar, tightly screw on the lid, and shake for a minute to combine everything. Taste, and add the extra TBSP of sugar if desired.
  • Salad: Assemble the salad - start with your greens - roughly chop them - then add the chicken, bacon, pecans, berries, and cheese. Add the dressing just before serving.
  • Make Ahead + Serving Tips: I do NOT recommend assembling the salad ahead of time. You can have the individual components prepped (slice the strawberries, cook and slice the chicken and bacon, etc.) a day ahead, but wait until just before serving to assemble the salad.
