Strawberry Blueberry Yogurt Parfaits are healthy, budget-friendly, no bake desserts made with greek yogurt, granola, strawberries, and blueberries, and are sweet, creamy, crunchy and yummy!

Ingredients

12 ounces plain greek yogurt
1/4 cup sugar (or to taste. Or use your preferred sugar substitute. I used Whey Low.)
1/4 cup granola (store bought or homemade)
1 cup fresh strawberries (sliced)
1/2 cup fresh blueberries

Steps:

In a small bowl mix together yogurt and sugar or sugar substitute.
Add two tablespoons of granola in the bottom of a parfait glass.
Top with 1/4 of yogurt, followed by 1/4 of strawberries.
Sprinkle with 1/4 of blueberries.
Repeat layers.
Repeat steps 2 through 5 for the 2nd parfait glass.
Serve immediately.

Ingredients

2 24-ounce (or 3 16-ounce) containers vanilla yogurt
1/3 cup honey
2 cups fresh blueberries (washed)
4 cups fresh strawberries (washed, hulled and chopped)
4 cups granola

Steps:

In a mixing bowl, mix the yogurt and honey until well blended.
In another bowl, combine the blueberries and chopped strawberries.
Put 1/3 cup of the blueberry and strawberry mixture in the bottom of a cup, mason jar, or glass.
Spoon 1/3 cup of the yogurt and honey mix on top of the fruit.
Sprinkle 1/4 cup of granola on top of the yogurt.
Repeat the fruit, yogurt and granola layers a second time.
Serve immediately.

I take this to work with me and it has fruit, cereal and yogurt in it. Sweet, yet good for you and a quick thing to grab on the way out the door. For brown bagging, you can pack the cereal, berries and yogurt seperate and put a plastic glass and a long dessert spoon in the bag. This can also easily be breakfast. My friends always drool over this when I bring it to work.

Ingredients

5 -7 large frozen strawberries, slightly defrosted
1/4-1/2 cup frozen wild blueberries, slightly defrosted
1 -2 teaspoon Splenda sugar substitute or 1 -2 teaspoon powdered artificial sweetener, of choice
1 cup fat-free lemon yogurt or 1 cup non-fat vanilla yogurt (lemon is best, Vegans use soy yogurt, Wholesoy is the best)
1/2-1 cup blueberry almond cereal (I use Kroger Brand, you can get Blueberry Moring form Post, Vegans use your favorite flaked cereal w)

Steps:

Mix berries with Splenda in seperate bowls.
Layer yogurt, berries, cereal.
Repeat layers.
If using different berries, layer yogurt, strawberries, cereal then yogurt, blueberries then cereal.
Insert spoon and enjoy.
