2 cups 2% cottage cheese
1 carton (8 ounces) mascarpone cheese
3 large egg yolks
2 tablespoons sugar
1 teaspoon rum or vanilla extract
1/4 teaspoon ground cinnamon
BATTER:
1-1/2 cups sour cream
6 large eggs, room temperature
1/2 cup butter, softened
1/2 cup frozen apple juice concentrate, thawed
1-1/4 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon grated lemon zest
TOPPING:
1/4 cup butter, cubed
3 medium apples, peeled and chopped
1 tablespoon lemon juice
3/4 cup packed brown sugar
1/4 teaspoon salt
1 teaspoon rum or vanilla extract

Steps:

  • For filling, place first 6 ingredients in a food processor; process until smooth. Transfer to a small bowl., Place batter ingredients in food processor; process until smooth. Pour half of the batter into a greased 13x9-in. baking dish. Drop tablespoons of filling over batter; cover with remaining batter. Refrigerate, several hours or overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake 45-50 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes., Meanwhile, in a large skillet, melt butter over medium heat. Add apples and lemon juice. Cook and stir 5-7 minutes or until apples are tender. Add brown sugar and salt; cook 1 minute longer or until thickened. Stir in extract; cool slightly. Serve with casserole.

My mother is a wonderful cook who always likes to prepare (and improve on!) dishes she's sampled at restaurants. That's what I did with these blintzes, and my family loves my fruity version even more than the original.

9 large eggs, room temperature
1 cup all-purpose flour
1/4 cup cornstarch
1/8 teaspoon salt
3 cups 2% milk
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup confectioners' sugar
Pureed raspberries or strawberries
Whipped cream, optional
Optional: Fresh raspberries or strawberries

Steps:

  • In a large bowl, beat eggs. Add flour, cornstarch and salt; stir until smooth. Stir in milk. , Heat a lightly greased 8-in. nonstick skillet; pour 1/3 cup batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Keep in a warm oven, covered with foil. Repeat with remaining batter. , For filling, in a small bowl, beat cream cheese and confectioners' sugar until smooth. Place about 2 tablespoons in the center of each blintz; overlap sides and ends on top of filling. Place folded side down. Serve with pureed berries; garnish with whipped cream and fresh berries if desired.

CREPE BATTER:
1 cup milk
1/4 cup cold water
2 eggs
1 cup all-purpose flour
Pinch salt
1 tablespoon sugar
3 tablespoons unsalted butter, melted, plus more for sauteing the crepes
CHEESE FILLING:
1 1/2 cups ricotta cheese
4 ounces cream cheese
3 tablespoons confectioners' sugar (I used 5 tablespoons.)
1 teaspoon vanilla
1 tablespoon orange zest
1 egg
Strawberry sauce (optional); strawberry preserves work well, too
1 quart strawberries hulled, sliced
1/4 cup sugar
1/4 cup water
1 teaspoon cornstarch
1 orange zest finely grated

Steps:

  • Combine the milk, water, eggs, flour, salt and sugar in a bowl (or blender) Blend on medium speed for 15 seconds, until the batter is smooth and lump-free. Scrape down the sides of the bowl and pour in 3 tablespoons of melted butter. Blend it again for a second just to incorporate. Refrigerate the batter for 1 hour to let it rest. If the crepes are made immediately, they have a tendency to be rubbery; when you let the batter rest, the crepes have a better texture and a softer bite. CHEESE FILLING: In a food processor, combine the ricotta cheese, cream cheese, confectioners' sugar, lemon zest, and egg and blend until smooth. Chill the filling to firm it up a bit so it doesn't squirt out of the blintzes. Put an 8-inch crepe pan or nonstick skillet over medium heat and brush with a little melted butter for added assurance. SAUCE: Combine the strawberries, sugar, water, cornstarch, and zest in a small pot over medium heat. Bring to a simmer and stir gently until the berries release their natural juices. The consistency should remain a bit chunky, it will thicken up when it cools down. CREPES: Pour 1/4 cup of batter into the pan and swirl it around so it covers the bottom evenly; pour back any excess. Cook for 30 to 45 seconds, until the crepe batter sets. Lightly bang the edge of the pan with a wooden spoon to loosen the crepe; then flip it and cook another 30 seconds. The art of flipping a crepe in the air takes practice, so make sure no one is looking when you get the first one going. If this intimidates you, use a heatproof rubber spatula to loosen and flip the crepe. The crepes should be pliable, not crisp, and lightly brown. Slide them onto a platter and continue making the crepes until all the batter is used. Cover the stack of crepes with a towel to keep them from drying out. ASSEMBLY: Preheat the oven to 400°F. Forming the blintzes is kind of like making burritos. Spoon 1/4 cup of the cheese filling along the lower third of the crepe. Fold the bottom edge away from you to just cover the filling; then fold the 2 sides in to the center. Roll the crepe away from you a couple of times to make a package, ending with the seam side down. Put an ovenproof skillet over medium heat. Brush with melted butter. Set the blintzes into the pan, and brush lightly with melted butter. Transfer the pan to the oven and bake for 10 minutes so the egg in the filling cooks slightly and the cheese sets. Using a spatula, transfer the blintzes to serving plates. OPTIONAL: Spoon the strawberry sauce on top, dust with confectioners' sugar, and serve right away.

Batter:
4 large eggs (no substitutes)
1 1/4 cups milk
2 tablespoons sour cream
1/4 cup butter, melted (for best flavor, no substitutes)
3/4 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1 to 2 tablespoons sugar
1 1/4 teaspoons baking powder
Filling (see notes):
2 (7 1/2- to 8-ounce) packages curd-style farmer cheese
1 (15- to 16-ounce) container ricotta cheese, any type
2 large eggs or 1/2 cup egg substitute
2 to 3 tablespoons sugar
2 tablespoons lemon juice
To serve:
sour cream
plain or vanilla yogurt
applesauce
sliced fresh strawberries or other fruit

Steps:

  • Preheat the oven to 350 degrees. Butter a 9 by 13-inch baking dish or coat it with nonstick cooking spray.
  • In a blender or a food processor (fitted with a steel blade), combine all batter ingredients. Process until very smooth, scraping down the sides of the container once or twice. Measure out 1 1/2 cups of the batter, and pour it into the bottom of the prepared baking dish. Bake at 350 degrees forabout 10 minutes, or until it is set.
  • Meanwhile, combine all the filling ingredients in a large bowl, and mix them well. When the bottom layer has set, remove it from the oven and spread the filling over it, smoothing the top. Steps:

  • Preheat the oven to 350 degrees. Butter a 9-by-13-inch cake pan or baking dish.
  • For the batter, place all the ingredients in the bowl of a food processor fitted with the steel blade and blend until smooth. (You can also use a blender.) Pour half the batter (about 1 3/4 cups) into the prepared dish and bake for 10 minutes, until set.
  • Meanwhile, for the filling, whisk together the ricotta, mascarpone, eggs, and sugar in a large bowl. Add the lemon zest, lemon juice, vanilla, and salt and mix until thoroughly combined. Spread the cheese filling over the baked pancake. Carefully spoon the remaining pancake batter to cover the cheese.
  • Return the pan to the oven and continue baking for 35 to 40 minutes, until the top is lightly golden and the filling is almost set. Remove from the oven and allow to stand 10 to 15 minutes. Cut the blintzes in squares and serve warm with the Fresh Blueberry Sauce.
  • Combine the orange juice, sugar, and cornstarch in a medium saucepan and bring to a boil, stirring occasionally. When the mixture is translucent and thickened, stir in the blueberries and simmer for 4 to 5 minutes, just until a few berries have burst but most are still whole. Stir in the lemon zest and lemon juice and cool.

1 cup all-purpose flour
2 tablespoons Grand Marnier (orange flavored liquor)

6 ounces low-fat ricotta cheese
6 ounces mascarpone cheese

3/4 teaspoon vanilla extract (or orange liquor)
1 teaspoon lemon zest
1/4 teaspoon salt
6 cups rhubarb, cut into 1-inch pieces
3 cups strawberries, cut in half lengthwise
3 tablespoons flour
2 cups sugar
1 tablespoon lemon juice
1/2 cup light sour cream, for garnish

Steps:

  • BLINTZES: Using a blender, mix the eggs, milk and flour at low speed. Add the Grand Marnier. Once the batter is well mixed and coats the spoon with a thin film, refrigerate, covered for 1 hour in a pitcher or bowl.
  • Stir the batter thoroughly and before making the crepes, test the liquid by dunking a spoon in the mixture; again, it should coat the spoon with a thin film. Adjust by adding milk if necessary.
  • Using a 8-10" nonstick pan, spray with oil, and heat the pan over medium-high heat. Pour about one cup of batter to coat one pan. Once covered, pour a thin layer of batter into the heated pan, swirling to coat if necessary.
  • When the crepes pull away from the edge of the pan in about 20 seconds, remove from the heat, tap them lightly or run a knife across the edge of the pan to release, and invert the crepes on a dry towel to cool. Stir the batter at brief intervals to re-suspend the ingredients.
  • FILLING: Mix together the ricotta, mascarpone, sugar, vanilla extract, lemon zest and a small pinch of salt.
  • ASSEMBLY: With the cooked side up, spoon about 1/4 cup filling inside the center of the wrapper.
  • Fold and hold the two opposite sides of the crepe over the filling until they almost meet and then fold over the ingredients pulling the stuffing toward you.
  • Fold the crepe over until you form a seam on the blintz. Set finished 2-inch by 1 1/2-inch flat "eggroll" shaped blintz on a dry towel with the seam side down.
  • COOK: Melt butter or margarine in a skillet over medium high heat, beginning with the seam side down. Saute each blintz until golden brown, carefully so the cheese does not escape.
  • Flip the blintz onto the other side. Lower the flame and cook slowly, about 2 to 5 minutes to avoid burning the crepe.
  • TOPPING: Gently toss the rhubarb, strawberries, flour, sugar and lemon and let stand until moist, 5 to 10 minutes.
  • In a large saucepan, melt the butter and add the fruit mixture. Cook the fruit for approximately 35 minutes, stirring to make sure the fruit does not brown. Cover 5 minutes or until rhubarb is soft.
  • TO SERVE: Ladle the warm fruit over the blintz and top with a dollop of sour cream. Garnish with a fresh strawberry half.

1/2 cup orange juice
2 tablespoons sugar
1 teaspoon vanilla extract
2 cups sour cream
2 cups strawberry preserves
1 to 1 3/4 pound Bread Bowl

Steps:

  • 1. Preheat the oven to 350°F. 2. Arrange the blintzes in a well-oiled casserole dish or baking pan. Set aside. 3. Combine the eggs, orange juice, sugar, vanilla, and 1 cup of the sour cream. Evenly pour over the blintzes. 4. Bake the casserole for 1 hour, or until the top is brown and the egg mixture is thoroughly cooked. Remove from the oven and set aside. 5. Place the bread bowl in the oven and warm for 3 minutes. Remove and generously spread most of the preserves on the inside of the bowl, reserving the rest to serve with the blintzes. 6. Using a spatula, cut the casserole into large squares and place in the bread bowl. Serve with the remaining sour cream and strawberry preserves on the side.

  • BLINTZ: Combine ricotta and sweetener. Cover and place in fridge.

  • Put the 12 blintzes in the buttered casserole to cover bottom.
  • Mix all ingredients together and pour over the blintzes.
  • Bake at 350* for 45 minutes to 1 hour.

Everyone in our family loves this casserole. It appeals equally to those who are finicky and others with more sophisticated tastes. We like a nonsweet filling, but you can replace the salt with a couple tablespoons of sugar if you prefer. This recipe can be doubled. Then bake it in a larger casserole for about an hour. Depending on the size of your blender, you may need to make the batter for the double recipe in two batches. Serve hot with sour creme.

3 eggs
3/4 cup milk
1/4 cup vanilla yogurt
1/2 teaspoon vanilla
1 teaspoon baking powder
1 tablespoon sugar
2 1/2 tablespoons butter, melted
1 cup flour
8 ounces farmer cheese
12 ounces cottage cheese
2 tablespoons butter, melted
1 egg
2 tablespoons sour cream
salt

Steps:

  • Mix the first 7 ingredients in a blender until blended.
  • Add the flour and mix again.
  • Pour half of batter mixture into a 9" square greased or Pam'd casserole.
  • Bake at 350 for about 10 min or until set.
  • Mix the remaining ingredients to make the filling.
  • Spread filling evenly over the baked bottom layer.
  • Re-stir the remaining batter and pour it over the filling, trying to cover all the cheese layer.
  • Bake at 350 for about 40 min or until slightly browned.
  • Optional - brush top with melted butter the last 5 minute.

4 large eggs
1 1/4 cups milk
2 tablespoons sour cream or 2 tablespoons plain yogurt
1/4 cup melted butter
3/4 teaspoon vanilla extract
1 1/3 cups flour
1 tablespoon sugar
1 1/4 tablespoons baking powder
1 lb farmer cheese
1 lb ricotta cheese
2 large eggs
2 tablespoons sugar
2 tablespoons fresh lemon juice
sour cream or yogurt
applesauce
strawberries or cherries, heated with sweetener
fruit preserves, with a dash of cinnamon

Steps:

  • Preheat oven to 350°F.
  • With a blender or mixer, combine the batter ingredients until very smooth.
  • Pour 1 1/2 cups of the batter into a greased 9X13 baking pan.
  • Bake for about 10 minutes or until set.
  • Meanwhile, comine the filling ingredients and mix well.
  • When bottom layer of batter has set, remove the baking pan from the oven and smoothly spread the cheese filling over it.
  • Briefly remix the remaining batter and then gently pour it over the filling, covering it completely.
  • Return the pan to the oven and continue to bake for 45-50 minutes or until the top is puffed, set, and browned.
  • Remov the Blintz Puff from the oven and allow it to rest for 10 minutes before cutting it into squares.
  • Serve immediately, plain or with toppings.
