4 cups baby spinach
5 oz mandarin orange segments (canned, drained, about 1/2 small can)
6 medium strawberries (halved)
1/4 cup sliced almonds
1/4 cup red onion (thinly sliced (optional))
1/3 cup Goat cheese (crumbled)
5 Tbsp white vinegar
1 Tbsp cider vinegar
2 1/2 Tbsp white granulated sugar (or 1 Tbsp honey)
3/4 tsp salt
1/8 tsp dried mustard powder
1/4 cup onion (finely diced)
1 cup vegetable oil (or other neutral tasting oil)
1 Tbsp poppy seeds

Steps:

  • To make the Poppy Seed Dressing: In a food processor or blender, add the white and cider vinegars, sugar, salt, mustard powder and onion. Process or blend for 30-45 seconds, or until pureed. With the food processor or blender running on high speed, very slowly start adding the oil, in a very slow, steady stream, until all the oil is added. Add the poppy seeds and blend briefly to combine. Use dressing immediately or put in a jar with a lid and refrigerate until needed. *Note: Dressing will separate as it sits in the fridge. Just shake it in the jar to mix it back up again before using.
  • For the salad: Add the baby spinach to a bowl. Add the strawberries, mandarin oranges, sliced almonds and red onion, if using. Toss to combine. Top with crumbled goat cheese, then drizzle with poppy seed dressing, to taste.

1 bay leaf
1 tablespoon sugar
Salt and freshly ground pepper
10 ounces spinach
1/2 red onion, thinly sliced
1 cup thinly sliced white button mushrooms
For the dressing:
2/3 cup canola oil
1/3 cup apple cider vinegar
3 tablespoons honey
2 tablespoons dijon mustard
1 large egg
2 tablespoons poppy seeds
For the salad:
1 cup sliced strawberries

Steps:

  • Make the dressing: Put the oil, vinegar, honey, mustard, egg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a blender and blend until smooth. Stir in the poppy seeds. Refrigerate until ready to serve.
  • Make the salad: Put the strawberries in a nonreactive heatproof bowl. In a small saucepan over medium heat, combine the vinegar, 1/2 cup water, the bay leaf, sugar, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to a low boil and allow the sugar to dissolve. 3/4 cup raw pecans
1/2 small red onion (very thinly sliced)
10 ounces fresh baby spinach (I also love a 50/50 arugula and spinach blend)
1 quart strawberries (hulled and quartered (about 1 pound))
3/4 cup crumbled feta cheese (buy the block-style feta, not pre-crumbled; the texture is much better)
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
  • Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
  • Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
  • Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

1 lb strawberries (thinly sliced)
1 cup crumbled feta cheese
1 cup toasted almonds (*see recipe below)
1 container (6 oz) strawberry yogurt
3 tablespoons granulated sugar
3 tablespoons milk
2 tablespoons sour cream
2 tablespoons mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon poppy seeds
1 cup sliced almonds
2 tablespoons butter
2 tablespoons granulated sugar

Steps:

  • Add the spinach into a large mixing bowl (or whatever bowl you are planning on serving the salad in). Add the sliced strawberries, crumbled feta cheese, and toasted almonds.
  • HOW TO MAKE TOASTED ALMONDS : Add the almonds, butter, and sugar into a skillet pan and cook over medium-high heat. Watch carefully and stir often! Once the almonds are lightly browned and smell toasty, take them off the heat and spread out the almonds on a plate or onto some parchment paper on the counter. Cool for about 5 minutes before adding to the salad. * Do not put the almonds onto paper towel to cool! They will stick to the paper towel and will be impossible to get off.
  • MAKE THE DRESSING : Add all dressing ingredients into a bowl and mix together well with a whisk.
  • Pour the dressing over the salad and mix together until all the spinach leaves are coated in dressing. The toppings tend to sink to the bottom of the mixing bowl so I like to scoop them up from the bottom and put them back on top of the salad. This just makes the salad look pretty and then you can see all the yummy toppings. Serve immediately. Leftovers keep well for like a day, spinach will be softer, but this salad is best served right away.
  • MAKE AHEAD INSTRUCTIONS : Place the spinach in the mixing bowl. Put the strawberries, feta cheese, and toasted almonds in their own seperate containers. Mix up the dressing and put that into a container. When you are ready to serve toss everything together.

1/4 cup white vinegar
2 tablespoons sesame seeds

1 1/2 tablespoons poppy seeds
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon dried minced onions
1/2 tsp EACH dried basil, pepper

Steps:

  • Add all of the dressing ingredients to a medium bowl and whisk to combine or add to a mason jar, cover and shake. Adjust to taste if desired - adding additional sugar for sweeter or vinegar for tangier 1 teaspoon at a time. Refrigerate while you prepare the salad ingredients then whisk/shake again before drizzling over salad.
  • Prepare caramelized nuts according to recipe directions.
  • When ready to serve, toss all of the salad ingredients together in a large bowl. You can either drizzle with desired amount of dressing and toss to combine or if you expect leftovers, drizzle individual salad servings with dressing.

1 cup red cabbage, shredded
2 green onions, diced
1/4 cup cider vinegar
1/2 cup extra virgin olive oil
1/4 cup sugar
2 tablespoons poppy seeds
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
salt & freshly ground black pepper
1 cup fresh strawberries, halved
1/2 cup toasted slivered almonds
1 tablespoon toasted sesame seeds

Steps:

  • Combine the spinach, red cabbage and green onion.
  • Whisk the cider vinegar, olive oil, sugar, poppy seeds, paprika and worcestershire sauce together in a bowl.
  • Season to taste with salt and pepper.
  • Toss the salad with the poppy seed dressing and arrange on eight individual plates.
  • Top with fresh strawberries, almonds and sesame seeds.
