Want a virtuous alternative to chocolate hazelnut spread? Tahini-tella is made with dark chocolate and tahini and makes morning toast into a no-guilt treat! I love to spread this on sourdough toast, then top with sliced banana and a sprinkling of cinnamon and sesame seeds.

2 ounces dark chocolate, chopped
¼ cup extra-virgin olive oil
⅔ cup tahini
3 ½ tablespoons honey
½ teaspoon ground cinnamon

Steps:

  • Place chocolate and olive oil in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat and set aside.
  • Combine tahini, honey, and cinnamon in a bowl. Stir in melted chocolate mixture until smooth and well combined. Refrigerate spread until set and spreadable, about 15 minutes.

Here's a simply delicious smooth and creamy sesame honey spread for your toast, or for dipping (try pita bread chunks, dates or banana slices). Ingredient quantities are estimates, adjust to your tastes. Inspired by breakfast at Café Shosh (the old one, on Rechov Ha-Palmach) in Jerusalem, where on a single plate you'd get eggs made to order, chopped tomato & cucumber salad, yogurt, toast, jam, and a lovely honeyed tahini spread. 1 tbsp tahini
2 tsp honey
2 slices of bread , sourdough works well for toasting
50g feta
a few thyme leaves
butter
1 tsp sesame seeds
a drizzle of honey

Steps:

  • Mix the tahini and honey together. Spread the mixture on a slice of bread (sourdough works well for toasting). Scatter over the feta and a few thyme leaves, then top with another slice of bread. Butter the outsides and press sesame seeds into each side. Fry in a hot pan, weighed down by another pan, for 2 mins on each side (or use a toasted sandwich maker), then drizzle with honey.

1 tablespoon honey
36 slices baguette, toasted
sliced apple (for garnish)
fresh thyme (for garnish)
toasted chopped walnuts (for garnish)
honey (for garnish)

Steps:

  • Place ricotta in a large mixing bowl. Beat with an electric mixer on medium speed for 2 minutes. Stir in Gorgonzola, 1/2 t. thyme, and 1/4 t. rosemary until combined. Fold in 1 T. honey until just combined. Spoon mixture into a serving bowl. Cover and chill 1 to 24 hours.
  • To serve, spread on baguette slices and top with apple slices, thyme, and/or walnuts. Drizzle with honey.
