From Cooking Light magazine. Spanish for "fresh water", agua fresca is a refreshing, fruit-infused drink that is served throughout Mexico. Depending on the ripeness of the berries, adjust the amount of sugar for desired sweetness. Frozen strawberries would be fine in this. I like this with 2-3 times the water or seltzer water for a thinner drink. I also increase the sugar.

2 pounds cubed watermelon (about 6 cups)
4 cups diced stemmed strawberries (measured from 1 1/2 pounds)
3/4 cup sugar
1/8 teaspoon kosher salt
1 cup silver tequila
2 teaspoons fresh lime juice (from 1 large lime), plus extra as needed
3 whole strawberries, halved
6 lime wedges
Six 1-inch cubes watermelon

Steps:

  • Toss the watermelon, diced strawberries, sugar and salt in a large bowl to blend. Let stand until the sugar dissolves and a syrup forms, stirring occasionally, at least 15 minutes and up to 30 minutes.
  • Working in batches, puree the fruit mixture with the tequila and 2 teaspoons of the lime juice, combining each batch in a large pitcher. Stir to blend. Add more lime juice if desired. Refrigerate until very cold, at least 1 hour and up to 3 hours.
  • For the garnish: Thread 1 strawberry, 1 lime wedge and 1 watermelon cube onto 6 skewers. Divide the agua fresca among 6 chilled glasses. Stick a skewer with garnishes into each drink and serve.

1 large cantaloupe or half a watermelon, seeded and diced (about 3 cups)
1 1/2 cups water
2 to 4 tablespoons sugar

Steps:

  • This and other similar fruit drinks, which translate literally as "fresh water," are served all over Mexico and they're a cinch to replicate at home. The key is to strain the pulpy fruit to make a clearer liquid. Instead of melon, you could use strawberries, pineapple, or mango -- any fruit that is soft enough to puree.
  • Puree cantaloupe and pour through a fine sieve to eliminate pulp. In a pitcher, mix strained fruit puree with water and season with sugar and lime juice, to taste.

  • Add the water to a large glass or plastic pitcher and ask your child to empty the packet of drink mix and let him or her stir with a spoon. While your child is working on the mixing of the agua fresca, you can cut the oranges and the strawberries following the safety precautions as you don't want your children using sharp knives. The hibiscus has a very high acidity, which you have to balance with the sweet, fragrant strawberries. This one takes a bit more time to make, but it's worth it. Purchase the 'jamaica' flowers at your local Mexican specialty store - they last quite a long time if stored properly.

2 cups dried hibiscus flowers (jamaica)
4 cups water
2 lbs strawberries, washed, hulled, and sliced (keep the juice!!)
1 cup sugar or 3/4 cup agave nectar

Steps:

  • Combine the flowers with the water in a pan and bring up to a boil over medium high heat. Boil for 6 minutes, then remove from heat, cover, and allow to steep for 2 hours.
  • Clean the strawberries, slice them into a bowl, and cover with sugar, toss, and let stand on the counter for half an hour.
  • Puree the strawberries and the liquid they cast , then strain through a fine mesh sieve into a large pitcher or a sun-tea jar, then pour the hibiscus liquid in and stir well.
  • Taste and adjust with more water or sugar to your taste.
  • Serve over plenty of ice. Keep refrigerated or iced if serving at a party outdoors.

1 lime, cut into 8 wedges
8 fresh mint sprigs

Steps:

  • In a medium bowl, mix together sliced strawberries, sugar, and 1 cup of water. Cover the bowl with plastic wrap and place in the refrigerator for 4 hours.
  • Remove the strawberry mixture from the refrigerator and pour into a blender. Blend on high until smooth. Pour the blended berry mixture through a wire mesh strainer set over a large mixing bowl; discard the pulp and seeds.
