WAFFLE TACO WITH SPICY SAUSAGE AND HOT HONEY



Waffle Taco with Spicy Sausage and Hot Honey image

Yield 16 to 20 tacos

Number Of Ingredients 10

2 cups "just add water" waffle mix
2 teaspoons vanilla paste
1 pound bulk pork spicy breakfast sausage, such as Jimmy Dean, crumbled
3 tablespoons unsalted butter
6 large eggs
1 1/2 tablespoons heavy cream
Kosher salt and freshly ground black pepper
3 slices American cheese, torn into small pieces
Lightly crushed blue corn tortilla chips, for garnish
Hot honey, to drizzle

Steps:

  • Preheat a mini (4-inch) round waffle maker.
  • Mix the waffle mix with 2 cups water and the vanilla paste until there are no more large lumps; do not overmix. Let the batter sit while you prepare the sausage and eggs.
  • Cook the sausage in a large nonstick skillet over medium heat, breaking the sausage into small pieces with a wooden spoon, until the sausage is cooked through, 8 to 10 minutes. Transfer to a bowl and set aside to keep warm.
  • Wipe out the skillet. Melt the butter in the skillet over medium-low heat. Meanwhile, in a medium bowl, beat the eggs until smooth and evenly yellow. Add the cream and salt and pepper to taste and beat until well mixed. Add the eggs to the skillet and gently scramble. When the eggs are halfway done, sprinkle the cheese over the eggs, then stir to mix in and continue to cook until desired doneness, about 5 minutes. Transfer the eggs to a bowl and keep warm.
  • Cook the waffles, spreading 2 1/2 to 3 tablespoons batter into the waffle maker for each. Cook until the waffles are yellow, not golden, and still pliable, about 1 1/2 minutes per waffle. Transfer the waffles to a kitchen towel to steam and soften as done. (This should yield 16 to 20 waffles.)
  • To assemble the waffle tacos, spoon about 2 tablespoons sausage, some crushed tortilla chips and 1 tablespoon eggs onto each waffle. Drizzle with the hot honey and serve immediately.

One 22-ounce bag frozen waffle fries
1 1/2 teaspoons vegetable oil
8 ounces ground beef (85% lean)
1 tablespoon taco seasoning (about half of a 1-ounce package)
1 cup shredded Cheddar
1 cup shredded iceberg lettuce
1/2 cup drained pinto beans
1/4 cup pickled jalapenos
1/4 cup sliced black olives
2 Roma tomatoes, seeded and chopped
1 small avocado, chopped
Sour cream, for serving
1/2 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons hot sauce, such as sriracha

Steps:

  • For the taco fries: Preheat the oven to 450 degrees F.
  • Spread the waffle fries out on a large rimmed baking sheet and bake, stirring once, until golden brown and crisp, about 25 minutes.
  • Meanwhile, heat the oil in a medium skillet over medium-high heat. Add the ground beef and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Stir in the taco seasoning, then add 1/4 cup water and simmer until the liquid evaporates, about 2 minutes.
  • Transfer the waffle fries to a large plate. Mound the beef in the middle, then sprinkle the cheese, lettuce, beans, jalapenos, olives, tomatoes and avocado over the top. Dollop with sour cream.
  • For the creamy hot sauce: Mix together the mayonnaise, yellow mustard and hot sauce in a small bowl. Drizzle over the top and serve.

1 cup salsa
1 (4 ounce) can chopped green chilies
1 (1 1/2 ounce) envelope taco seasoning
8 frozen waffles

Steps:

  • In a large skillet cook beef over medium heat until no longer pink; drain.
  • Stir in salsa , chilies and taco seasoning. Bring to a boil. Reduce heat; simmer for 5 minutes.
  • Meanwhile, toast waffles according to package directions.
  • Spoon about 1/4 cup beef mixture onto each waffle.
  • If desired top with cheese, lettuce, tomatoes, avocado, salsa or sour cream.

1 cup cooked taco meat, fajita beef or shredded chicken
1/2 cup shredded iceberg lettuce
12 cherry tomatoes
1/4 cup sour cream
1/4 cup Old El Paso™ Thick 'n Chunky salsa
1/4 cup shredded sharp Cheddar cheese (1 oz)

Steps:

  • Top warm waffles with taco meat, lettuce, tomatoes, sour cream, salsa and cheese. Serve immediately and enjoy!

I have experimented for a long time perfecting this recipe. I finally have the secret! I am requested to bring this to every pot luck, family dinner, etc. You won't be disappointed!

1 head lettuce, washed & drained well
1 (8 ounce) container grape tomatoes
1 (12 ounce) bag Doritos (I prefer Pepper Jack or Extra Nacho)
2 cups grated sharp cheddar cheese
1 (8 ounce) bottle fat-free Catalina dressing (regular makes it way too greasy!!)
1/2 lb ground beef
taco seasoning

Steps:

  • Brown ground beef and drain. Add taco seasoning - follow package directions. Alow to cool slightly or put in refrigerator if you don't want to use the salad right away.
  • TEAR lettuce into bite size pieces, but into bowl. Cut tomatoes in half, and spread out on top of lettuce. Put cheese on top of tomatoes. Cover and chill until ready to serve. Just before serving, add Doritos, meat (if refrigerated, use microwave to take chill off of meat), and salad dressing. Toss well!
  • Don't skimp on the cheese or doritos, the more the better! I use the whole bag of Dorito's. Not snack size, or Extra large, just the regular size bag -- .

1 (16 ounce) bag lettuce, bite size
1 (16 ounce) bag tortilla chips (plain or flavored)
2 cups sour cream
3 -6 green onions, sliced (tops included)
1 1/2 cups guacamole, sauce
1 cup black olives, sliced
1 -2 cup tomatoes, deseeded, diced
2 cups cheddar cheese, shredded
2 cups salsa, sauce (or picante)
2 -3 cups taco meat, seasoned

Steps:

  • Dump lettuce in a large serving bowl (or the lid of Tupperware Serving Center).
  • Dump chips in another serving bowl (or the lid of the Serving Center if you didn't put the lettuce in it).
  • Mix sour cream and green onion slices; place in center compartment of serving center.
  • Place each of remaining ingredients (except chips) into one compartment of the serving center--being artistic in your arrangement so the colors look "nice."
  • BRIGHT IDEA #1: Heat up a can of refried beans, slather some on a burrito skin, and use to wrap around a hard-taco shell, then fill shell with fav ingredients--it won't crack!
  • BRIGHT IDEA #2: Mix everything up in a bowl, drizzle with Western Salad Dressing, and call it Western Taco Salad.
