1 pound ground turkey
1 pound bulk pork sausage
1 cup jellied cranberry sauce
1/2 cup chili sauce
1/4 cup orange juice
3 tablespoons brown sugar
1 teaspoon soy sauce
1/2 teaspoon grated orange zest

Steps:

  • Place stuffing in a large bowl. Crumble ground turkey and pork sausage over stuffing and mix well. Shape into 2-in. balls. Place on a greased rack in a shallow baking pan. Bake at 375° for 15-20 minutes or until a thermometer reads 160°. Drain on paper towels., Meanwhile, in a small saucepan, combine the remaining ingredients; heat through. Serve with meatballs. Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary. Meanwhile, combine and heat remaining sauce ingredients as directed. Serve over meatballs.

1/2 cup dry breadcrumbs
1/3 cup onion, finely chopped
1/4 cup milk
1 egg
2 tablespoons dried parsley flakes
1 teaspoon poultry seasoning
1 teaspoon Worcestershire sauce

1/8 teaspoon ground black pepper
1 cup ketchup
1 (12 ounce) jar apricot preserves

Steps:

  • Mix together ground turkey, bread crumbs, onion, milk, egg, parsley flakes, poultry seasoning, Worcestershire sauce, salt and pepper.
  • Shape into one-inch balls.
  • Brown meatballs in a large non-stick skillet over medium heat.

2 slices white sandwich bread
1 cup whole milk
1 pound ground beef
1 pound ground veal
1 pound ground pork
1 medium onion, chopped
4 cloves garlic, minced
4 sprigs fresh thyme, leaves picked
1 large egg
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
1 bottle red wine
1 quart low-sodium beef stock
1 tablespoon honey
1 tablespoon Dijon mustard
1/2 teaspoon caraway seeds
2 tablespoons creme fraiche
10 ounces frozen cranberries
1 orange, juice only

Steps:

  • Preheat oven to 325 degrees F.
  • Begin by preparing the meatballs. Remove crusts from bread and soak in milk.
  • In a large mixing bowl combine veal, beef and pork. Squeeze out excess milk and add bread, onion, garlic, thyme and egg. Season with salt and pepper and mix well to combine. Make small golf ball sized balls. Set a heavy-based roasting dish over medium-high heat. Add a 3-count of olive oil and brown meatballs. Cook for 3 to 5 minutes ensuring to brown meatballs evenly all over. Turn the heat up to high and add red wine and beef stock. Bring to a boil then cover pan with aluminum foil and bake in oven for 45 minutes basting the meatballs every 20 minutes. If all the liquid evaporates add some more beef stock as you go. When done, remove the meatballs and set aside. Set the pan with the braising liquid on the stove top over medium heat, add honey, mustard, caraway seeds and reduce until thick and syrupy. Finish with creme fraiche and season with salt and plenty of freshly ground black pepper.
  • Place cranberries with orange juice in a small saucepan and simmer until sauce is pulpy and thick - about 10 minutes. For an appetizer, serve meatballs skewered on toothpicks with cranberry sauce on the side.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.
  • Mix ground pork, apricots, onion, ginger, garlic, and salt together in a large bowl until well combined. Use a tablespoon-sized cookie scoop to form into meatballs. Place on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are cooked through, about 15 to 17 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
  • Meanwhile, whisk apricot preserves, soy sauce, Dijon, brown sugar, sesame oil, Sriracha, and Worcestershire sauce together in a saucepan over medium-low heat until well combined. Cook until heated through, 3 to 4 minutes.
  • Stir cornstarch into water until dissolved, then add it to the saucepan. Cook, whisking constantly, until glaze thickens, 2 to 3 minutes.
  • Add meatballs to the glaze. Toss to combine and simmer for 2 minutes.

1 teaspoon ground turmeric

1 large egg, beaten

Steps:

  • Heat 1 tablespoon oil in a large straight-sided skillet or braiser over medium. Add onion and cook, stirring occasionally, until soft but no color has developed, about 5 minutes. Remove half of onion and reserve. Add remaining 1 tablespoon oil, garlic, ginger, coriander, turmeric, and 1/2 teaspoon pepper to onion in skillet, stirring to combine. Cook until fragrant, about 45 seconds. Transfer to a large bowl, reserving skillet (do not wipe clean); stir breadcrumbs and 1/4 cup broth into bowl with spiced onion. Let cool slightly.
  • Add turkey, mint, egg, and 1 1/2 teaspoons salt to bowl, gently stirring to combine (do not overwork, or meatballs with be tough). With dampened hands, form into golf-ball-size meatballs and transfer to a parchment-lined tray (you should have about 20, each roughly 2 inches in diameter). Refrigerate until firm, about 30 minutes or, loosely covered, up to 1 day.
  • Meanwhile, combine apricots, cinnamon stick, and remaining 2 3/4 cups broth in a small saucepan. Bring to a boil, then reduce heat to low and simmer, covered, until apricots are very soft and plump, about 15 minutes. Let cool slightly; discard cinnamon. Transfer to a blender with reserved onion and purée until smooth.
  • Melt 2 tablespoons butter in reserved skillet over medium-high. Add tomato paste and cook, stirring, until fragrant, about 1 minute. Stir in apricot mixture and bring to a boil. Gently nestle meatballs into sauce. Lower heat, partially cover (leaving about a 1-inch steam vent), and simmer, turning meatballs a few times, until almost cooked through and sauce has thickened and darkened slightly, 15 to 17 minutes.
  • Uncover and continue to simmer until sauce reduces to a thick gravy, about 5 minutes more. Meanwhile, melt remaining 1 tablespoon butter in a small skillet over medium heat. Add almonds and cook, stirring occasionally, until nutty and golden in places, 2 to 3 minutes. Top meatballs with almonds and mint leaves; serve.

Substituting French's® French-Fried Onions for bread crumbs, kicks this recipe up a notch. These meatballs are easy to make and much tastier than the frozen variety. Delicious with the traditional cranberry/chili sauce or your own favorite sauce.

½ cup milk
1 small onion, minced
1 teaspoon salt
1 cup crushed French-fried onions (such as French's®)
1 (14 ounce) can jellied cranberry sauce (such as Ocean Spray®)
1 (12 ounce) bottle chili sauce (such as Heinz®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat eggs in a mixing bowl. Add beef, milk, onion, and salt; mix well. Sprinkle in crumbled fried onions and mix until evenly combined.
  • Form the mixture into 40 meatballs and place into a 9x13-inch and 9x9-inch baking dish; set aside.
  • Blend cranberry sauce and chili sauce together in a bowl with an electric hand mixer.
  • Pour 2/3 of the sauce mixture over the meatballs. Brush the remaining sauce over to completely cover the meatballs.

1 (16 ounce) can whole berry cranberry sauce
1 cup brown sugar
1/2 cup pinot noir wine
2 teaspoons dry mustard (can use hot chinese if you wish)
2 lbs lean ground beef
1 1/2 cups fresh breadcrumbs
1/2 cup finely chopped celery
1/2 cup finely chopped onion
2 eggs, beaten
1 tablespoon Worcestershire sauce
2 teaspoons garlic salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly oil a shallow baking dish.
  • In a large mixing bowl, combine ground beef, bread crumbs, celery, onion, eggs, Worcestershire sauce, garlic salt and pepper.
  • Shape into 24- 1 1/2 inch balls.
  • Place in one layer in baking dish.
  • Bake for 20 minutes.
  • Meanwhile, in a medium saucepan, stir together the cranberry sauce, brown sugar, Pinot Noir and mustard.
  • Simmer over medium heat for 5 minutes, stirring often.
  • Remove from heat and set aside until needed.
  • After the first 20 minutes of baking, pour Cranberry and Pinot Noir Sauce over meatballs.
  • Bake an additional 15 minutes.
  • Remove meatballs and sauce to a serving platter and serve warm.
  • A chafing dish or crockpot keeps them warm for buffets.
