I got this super-easy recipe from a restaurant back in the 90s. It is a must-have whenever I serve sweet potato fries. Plain Greek yogurt and sugar-free syrup can be substituted to make it lighter. Feel free to adjust the amount of ingredients depending on your tastes. Hope you enjoy!

Our sweet and savory fries are best served with a side of creamy coconut-maple dipping sauce.

2 sweet potatoes
2 eggs
2 tablespoons milk
1 1/2 cups Original Bisquick™ mix
1/3 cup cornstarch
1/2 cup sugar
1 1/2 teaspoons salt
4 1/2 teaspoons ground cinnamon
2 cups coconut oil (for frying)
2 containers (6 oz each) Yoplait® Original 99% Fat Free coconut cream pie or French vanilla yogurt
2 tablespoons real maple syrup

Steps:

  • Peel sweet potatoes; cut into 1/4x1/4-inch strips. In large bowl, beat eggs and milk with whisk. Add potato strips; stir to coat completely.
  • In pie plate, place Bisquick mix and cornstarch. In small bowl, stir together sugar, salt and cinnamon. Add 2 tablespoons of the sugar-cinnamon mixture to the Bisquick mixture; stir until combined. Set aside remaining sugar-cinnamon mixture.
  • Heat coconut oil in 10-inch skillet over medium heat.
  • Remove sweet potatoes from egg mixture; coat with Bisquick mixture. Place 15 to 20 strips of coated sweet potatoes in hot oil; fry until golden brown. Remove potatoes from oil; place on plate lined with napkins or paper towels. Sprinkle fries with 1/2 tablespoon of the remaining sugar-cinnamon mixture. Fry remaining sweet potatoes until all sweet potatoes are fried, coating with sugar-cinnamon mixture as soon as they come out of the hot oil.
  • Place yogurt in medium serving bowl. Drizzle with maple syrup. Serve hot fried sweet potatoes with dip.

The bacon fries in the oven while the sweet potato cooks, leaving the stove open (grits? oatmeal? fried eggs?) and avoiding the messy sputtering of bacon cooking in a skillet.

2 pounds sweet potatoes (about 4 medium potatoes), scrubbed and dried
2 tablespoons olive oil
2 teaspoons kosher salt
2 tablespoons plus 1 teaspoon maple syrup
8 ounces thick-cut bacon
Flaky salt, to serve

Steps:

  • Heat the oven to 425 degrees, and line a baking sheet with parchment paper. Cut each sweet potato in half lengthwise, then slice each half into 3 or 4 wedges, 1- to 1 1/2-inches thick.
  • In a large bowl, toss the sweet potatoes with the oil and salt. Spread onto the baking sheet in a single layer, leaving a little space between the pieces. (Use two baking sheets if you need to).
  • Bake for 20 minutes, then drizzle with the maple syrup, toss, and return to the oven for another 15 to 20 minutes, until the wedges are deeply brown on both sides.
  • Once you've tossed the potatoes, place the bacon on an unlined sheet pan. Bake for 13 to 15 minutes, until crisp and cooked through. Place on a paper towel to drain (pour fat from the sheet pan into a jar and store in your refrigerator to use later, or discard), then chop into 1/2-inch pieces and toss with sweet potato wedges and the remaining teaspoon maple syrup. Garnish with flaky salt and serve immediately.

  • Preheat oven to 425°F
  • Spray rimmed baking sheet with cooking spray.

4 large sweet potatoes, peeled and chopped into rough chunks
1/4 cup grade B maple syrup, plus 2 tablespoons
1/4 cup extra-virgin olive oil, divided in 1/2
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons butter
1 large Vidalia or other sweet onion, thinly sliced
Hot water

Steps:

  • Preheat oven to 375 degrees F.
  • Place sweet potatoes, 1/4 cup of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and place on sheet tray. Roast in the preheated oven for 35 to 40 minutes or until sweet potatoes are soft. Be sure to check on them after 15 minutes and stir, if needed.
  • Meanwhile, in a medium saucepan over medium-high heat, melt butter and add remaining 2 tablespoons of olive oil. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste. Saute until deep golden brown, about 2 minutes. Remove from the heat and set aside. Add water, 1 tablespoon at a time, if the pan becomes dry.
  • Transfer sweet potato mixture to a food processor, (may need to be done in batches) and add about a tablespoon of hot water. Pulse until just blended and then add half the caramelized onions. Pulse just a few times until desired consistency, adding more hot water for a smoother puree. Fold in remaining caramelized onions, reserving some for garnish.
  • Serve in a warm dish and garnish with the reserved caramelized onions. YUMMY!!!
