- Reduce heat to medium-low, cover, and simmer for 15 minutes.
- Whisk 2 tablespoons water and cornstarch in a small bowl.
- Whisk cornstarch mixture into strawberry mixture. Cook, stirring constantly, until mixture thickens, 1 to 2 minutes. Remove from heat.

- In a large bowl, gently toss the strawberries with the sugar and vinegar. Let sit at room temperature until the strawberries have released their juices but are not yet mushy, about 30 minutes. (Don't let the berries sit for more than 90 minutes, or they'll start to collapse.)
- Just before serving, stack the basil leaves on a cutting board and roll them vertically into a loose cigar shape. Using a sharp chef's knife, very thinly slice across the roll to make a fine chiffonade of basil.
- Portion the strawberries and their juices among four small bowls and scatter with the basil to garnish, or choose one of the serving suggestions below.
- Serve the strawberries over grilled or toasted pound cake. Garnish with a dollop of crème fraîche.
- Put the berries on split biscuits for shortcakes; top with whipped cream and scatter with the basil.

- For the glaze: In a saucepan, over medium heat, add olive oil, and heat, then add onion, garlic and Europe's Best Country Strawberries and cook, stirring occasionally for 5-6 minutes, or until strawberries are just softened. Add vinegar, honey, salt and pepper and cook for 2 minutes. Purée in blender or food processor.
- For the Steak: In a small bowl, combine the mustard, garlic, pepper and salt. Rub over steak. Grill steak for 4-5 minutes pr side for medium-rare, or longer until desired doneness. Let stand for 5 minutes. Carve steak thinly, across the grain. Arrange on a serving platter. Spoon over sauce. Garnish with basil.
- Boneless rib steaks can be substituted for sirloin steaks.

- In a mixing bowl, whisk the honey and vinegar until well-blended. Stir in the pepper. Add the strawberries and stir gently to coat with the syrup. Let stand for 5 to 10 minutes at room temperature. Stir in the banana. Serve the fruit and syrup in shallow dessert bowls or stemmed goblets.

- In a small pot place the sugar and water together and stir to dissolve. Over medium-high heat bring to a boil and simmer until sugar syrup is caramel color. Do not burn.
- Remove from heat. Pour in the Cognac and vinegar then put back on a low heat. Swirl to dissolve caramel. Remove from heat. Stir in the pomegranate juice or molasses, the peppercorns, and the one cup of diced strawberries. Return to the heat source and cook for one minute. Sauce sould be thick and syrupy.
