Number Of Ingredients 9

Unsalted butter, for pan
8 extra-large eggs, room temperature, separated
1/2 cup granulated sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup cake flour (not self-rising)
2 teaspoons sifted baking powder
1 pint heavy cream
2 tablespoons confectioners' sugar, plus more for work towel
1 quart strawberries, washed, dried, and hulls removed

Steps:

  • Preheat oven to 350 degrees. Butter and line a rimmed 15-by-10-by-1-inch jelly roll pan with parchment paper; set aside.
  • In a large bowl, beat egg yolks and sugar together until light in color, about 1 minute; stir in 1/2 teaspoon vanilla. Add cake flour and baking powder; stir until well combined.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites until stiff peaks form. Gently fold into flour mixture.
  • Pour cake batter in prepared pan and spread evenly with a spatula or the back of a spoon. Transfer baking sheet to oven and bake until cake springs back when touched, about 20 minutes.
  • Meanwhile, set 6 strawberries aside for garnish. Thinly slice remaining strawberries. Place heavy cream in the bowl of an electric mixer fitted with the paddle attachment; beat on medium speed. Slowly add remaining teaspoon vanilla and 2 tablespoons confectioners' sugar. Continue beating until soft peaks form. Set half of the whipped cream aside. Gently fold sliced strawberries into remaining half; set aside.
  • Lay a clean kitchen towel flat on a work surface with one of the short ends facing you. Generously sprinkle dish towel with confectioners' sugar. Flip cake onto towel, remove baking sheet, and peel off parchment paper. Using the dish towel, roll cake away from you; let cool.
  • Unroll cake. Evenly spread strawberry whipped-cream mixture over surface of the cake and re-roll. Transfer cake to a serving plate and evenly spread top and sides of cake with reserved whipped cream. Cut reserved whole strawberries in half lengthwise and place on top of cake for garnish.

1/2 cup pecans or 1/2 cup walnuts, toasted
1 1/2 cups flour
2 tablespoons sugar
3/4 cup cold butter
8 ounces cream cheese, room temperature
1/2 cup sugar
1 cup whipping cream
3 cups fresh strawberries, halved

Steps:

  • Preheat oven to 325° degrees F.
  • Place nuts in a food processor and pulse until chopped fine; add flour and sugar; When well blended, add the cold butter, two tablespoons at a time; Remove from processor and spread in a spring form pan, pushing the mixture one inch up the sides of the pan.
  • Bake 30 to 40 minutes until golden; Remove from oven and cool.
  • Place cream cheese and sugar in a mixing bowl and beat on high speed until fluffy and well blended.
  • While the motor is still running, add small amounts of the whipping cream in a steady small stream into the cheese mixture, NOT TOO FAST, or the mixture will be too runny.
  • When well blended, spread the cream mixture evenly into the baked, cooled crust (At this point, it can be covered and chilled up to 24 hours.).
  • When ready to serve, place halved strawberries on top of the chilled cream mixture, remove the spring form pan rim, slice and serve.

1 stick butter (unsalted, room temperature)
½ cup sugar (granulated)
3 large eggs
1 teaspoon vanilla extract
¼ cup milk
1¼ cup flour (all purpose)
¼ teaspoon salt
1 tablespoon baking powder
1 package instant pudding mix
1 ½ cup heavy whipping cream
½ cup sugar
½ cup water (divided)
1 tablespoon cornstarch
4 cups strawberries (sliced)

Steps:

  • Preheat the oven to 350° Fahrenheit. Grease the bottom of an 11" tart pan and lightly sprinkle with some flour. Be sure not to grease the sides of the tart pan as this will interfere with the batter rising.
  • Use a large mixing bowl and a hand mixer and beat the softened butter, sugar, vanilla extract, and salt together on high speed until smooth. About 2-3 minutes.
  • Reduce the speed to low and add in one egg at a time. Allow each egg to fully incorporate into the batter before adding the next egg.
  • Slowly add the milk into the batter. Beat on low until the milk is well combined.
  • Add the flour and baking powder to the batter and continue to beat on low speed. Use a spatula to scrape the sides. Beat until the dry ingredients are well combined.
  • Pour batter into the tart pan. Use a spatula to spread the batter evenly.
  • Bake for 20 minutes. Remove from the oven and transfer onto a cooling rack. Remove from the tart pan and allow it to cool completely.
  • Use a medium mixing bowl and combine instant pudding with heavy whipping cream. Use a hand mixer and whisk until the mixture is creamy. Set aside.
  • Use a small bowl and whisk 1 tablespoon cornstarch with 1/4 cup of water until there are no lumps. Set aside.
  • Use a small saucepan and bring a ¼ cup of water and ½ cup of sugar to a boil. Once the water has reached a boil, reduce the heat to medium and whisk in the liquid cornstarch into the boiling sugar water.
  • Whisk continuously for about 3-5 minutes until the mixture becomes thick and syrupy. Remove from heat and set aside.
  • Once the cake has fully cooled. Spread the pudding cream mixture with a spatula or cake spreader evenly across the cake.
  • Top the filling with sliced strawberries. Use a pastry brush to glaze the strawberries. Allow to harden for 30 minutes.

1 tablespoon cornstarch
1/8 teaspoon salt

1 package (12 ounces) frozen sweetened sliced strawberries, thawed and drained
Sliced fresh strawberries and mint leaves, optional

Steps:

  • Prepare and bake cake according to package directions, using two greased and floured 9-in. round baking pans. Cool for 10 minutes; remove from pans to wire racks to cool completely., In a saucepan, combine the sugar, cornstarch and salt; gradually stir in milk until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat. Stir in butter and vanilla. Cover and refrigerate until chilled., Place half of the whipped topping in a large bowl; add strawberries. Cut each cake horizontally into two layers. Place bottom layer on a serving plate; spread with half of the strawberry mixture. Top with a second cake layer; spread with custard.   • Whip cream cheese, sugar, and vanilla together.

1 tablespoon confectioners' sugar
1 package (.3 ounce) sugar-free strawberry gelatin
1/2 cup boiling water
1/4 cup seedless strawberry jam
1 package (8 ounces) reduced-fat cream cheese, cubed
1/3 cup fat-free milk
2 tablespoons lemon juice
3 cups reduced-fat whipped topping
1 package (3.4 ounces) instant cheesecake or vanilla pudding mix
1 cup sliced fresh strawberries
1 kiwifruit, peeled, halved and sliced
1-1/2 teaspoons grated lemon zest

Steps:

  • Line a 15x10x1-in. baking pan with ungreased parchment. Prepare cake mix according to package directions. Spread batter evenly in prepared pan. 2 tablespoons vegetable oil
1 large egg plus 1 egg yolk
2 tablespoons cold whole milk
1 teaspoon apple cider vinegar
1 1/4 cups all-purpose flour
1/8 teaspoon baking powder
3 tablespoons granulated sugar
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into 1/4-inch cubes
1 teaspoon unflavored gelatin
1/4 cup granulated sugar
1 vanilla bean, split lengthwise and seeds scraped out
1 1/4 cups cold light cream
1 quart strawberries, hulled and cut into 1/2-inch pieces
Confectioners' sugar, for dusting

Steps:

  • Make the crust: Whisk the vegetable oil, egg yolk, milk and vinegar in a bowl. Pulse the flour, baking powder, sugar and salt in a food processor to combine; add the butter and pulse until the mixture looks like coarse meal. Add the milk mixture and pulse once or twice, just to moisten the flour.
  • Transfer the dough to a 9-inch-round tart pan with a removable bottom and pat onto the bottom and up the sides. Cover with plastic wrap and refrigerate until firm, at least 30 minutes. Trim the edges, if necessary.
  • Preheat the oven to 350 degrees F. Pierce the dough all over with a fork. Line with foil and fill with pie weights or dried beans. Place the pan on a baking sheet and bake 15 minutes. Remove the foil and weights; continue to bake until golden, 10 to 15 more minutes. Beat the whole egg with 1 teaspoon water, then lightly brush over the crust and bake 5 more minutes. Cool completely on a rack.
  • Meanwhile, make the filling: Sprinkle the gelatin over 1 tablespoon cold water in a bowl and let soften 5 minutes. Put the granulated sugar and vanilla seeds in a saucepan and rub the seeds into the sugar with your fingers. Add 1 cup cream and whisk over medium heat to dissolve the sugar. When the mixture comes to a boil, remove from the heat and whisk in the gelatin mixture. Transfer to a bowl, then set in a larger bowl of ice water and stir with a rubber spatula until the mixture begins to thicken. Add the remaining 1/4 cup cream and stir until thick, about 2 minutes. Pour into the tart shell and refrigerate until set, about 1 hour.
  • Before serving, top the tart with the strawberries and confectioners' sugar.

¾ cup white sugar
2 teaspoons vanilla extract
1 pint heavy whipping cream
2 (12 ounce) packages ladyfinger cookies
1 (16 ounce) package frozen strawberries
1 tablespoon cornstarch

Steps:

  • Strain strawberries and set aside, reserving juices. In a saucepan bring cornstarch and strawberry juice to a gentle boil. Remove from heat and let cool.
  • Whip cream cheese, sugar, and vanilla together.
  • In a separate bowl beat whipping cream until stiff peaks form. Fold whipped cream into cream cheese mixture.
  • Arrange ladyfingers around sides and bottom of the 8 or 9 inch springform pan, standing ladyfingers lengthwise around sides of pan. Pour 1/2 of the filling into the pan, then place a layer of ladyfingers on top of filling. Pour remaining filling over ladyfingers.
  • Spread strawberry sauce over top of cake and place the whole strawberries on top. Refrigerate and remove from pan once thoroughly chilled.

1 1/4 c water
1/2 c sour cream
2 egg whites
1 c mashed strawberries
1 /2 c sugar
1/4 c cornstarch
1 /4 c water
2 c whipping cream

fresh strawberries,for garnish

Steps:

  • 1. Heat oven to 350 deg. Lightly grease 13x9 inch pan. Line with waxed paper.;grease and flour. In a large bowl,combine cake mix,water,sour cream and egg whites;beat at low speed until moistened. Beat 2 minutes at hight speed. Pour batter into prepared pan . Bake for 23 to 30 minutes. Cool on wire rack 15 minutes. Remove from pan;peel off waxed paper. In a medium sauce pan,combine mashed strawberries,sugar,cornstarch and water. Cook over medium heat until mixture thickens and boils,stirring constantly. Boil 1 minute. Cool;cover and refrigerate until well chilled. To assemble cake,slice cake in half lengthwise. PLace on half,top side down,on serving plate,spread with strawberry filling. Place remaining half top side up, on filling. In a large bowl,combine whipping cream,sugar and vanilla. Beat until stiff peaks form. Frost sides and top of cake. Garnish with fresh strawberries. 175g ground almond
175g butter softened
175g golden caster sugar
175g self-raising flour
1 tsp ground cinnamon
1 large egg , plus 1 egg yolk
450g strawberry , hulled and sliced
icing sugar , for dusting
whipped double cream mixed with Greek yogurt (half and half is good), to serve

Steps:

  • Preheat the oven to 180C/gas4/ fan 160C. Line the base of a loose-bottomed 23cm cake tin with greaseproof paper and butter the sides.
  • Mix almonds, butter, sugar, flour, cinnamon, egg and egg yolk in a food processor just until the ingredients are evenly combined.
  • Spread half the mixture over the base of the tin in a smooth layer with no gaps - easiest to do this with two forks. Lay the sliced strawberries on top. Add the remaining cake mixture and spread it as best you can, but don't worry if a few strawberries peep through.
  • Bake for 1 hour (it may need an extra 5 minutes), but check after 40 minutes - if it is getting too brown, cover loosely with foil. The torte should be slightly risen and dark golden brown when cooked.
  • Cool in the tin slightly, then loosen the edges with a knife and remove from the tin. Slide the torte onto a plate and sprinkle with a dusting of icing sugar. Serve warm or cold, in wedges with dollops of cream and Greek yogurt.

Not only does this look good, the ingredients sound fantastic! Haven't tried this recipe as yet but Rebecca Kremer from Hudson, Wi. has this entered in the Bake-Off 42(Orlando, 2006). Of course, the picture helps too! There is a long laundry list of ingredients but the time consuming process of this is the cooling and chilling time.

1 (19 1/2 ounce) box pillsbury brownie classics traditional fudge brownie mix
1/2 cup vegetable oil
1/4 cup water
3 eggs
3 tablespoons granulated sugar
8 ounces cream cheese, softened
6 ounces yoplait thick & creamy strawberry yogurt
1 1/2 cups finely chopped fresh strawberries
1/4 cup chopped almonds (optional)
1/2 cup whipping cream
1 1/2 cups hersheys semi-sweet chocolate chips (9 oz)
1 teaspoon powdered sugar
6 medium fresh strawberries, halved

Steps:

  • BROWNIES:.
  • Heat oven to 350°F.
  • Spray bottoms of 2(9 inch) round cake pans with nonstick cooking spray.*.
  • Make brownie mix as directed on box for cake-like brownies using oil, water and eggs.
  • Spread half of the batter evenly in each pan.
  • Bake 18-23 minutes.
  • Cool on wire racks 10 minutes.
  • Run knife around brownie layers to loosen.
  • Place wire racks upside down over pans; turn racks and pans over.
  • Remove pans.
  • Cool completely, about 35 minutes.
  • STRAWBERRY CREAM:.
  • Meanwhile, in small bowl, beat granulated sugar and cream cheese and with elecrtic mixer on medium speed until well blended.
  • Beat in strawberry yogurt until smooth and creamy.
  • Fold in chopped strawberries very gently, then add in chopped almonds.
  • Cool completely, about 30 minutes.
  • CHOCOLATE FUDGE:.
  • In 1 quart saucepan, heat whipping cream over medium heat, stirring constantly, just until cream begins to boil.
  • Remove from heat.
  • Add chcolate chips; press into cream.
  • Cover; let stand 3 minutes.
  • Vigrously beat with wire whisk until smooth.
  • Cool completely, about 30 minutes.
  • TORTE ASSEMBLY:.
  • To assemble torte, place 1 brownie layer on serving plate.
  • Spread half of the strawberry cream evenly over brownie to within 1" of edge.
  • Carefully spoon and spread half of fudge almost to edge of strawberry cream.
  • Repeat layers, ending with chocolate fudge.
  • Arrange halved strawberries in spoke fashion on top of torte.
  • Refrigerate for at least 1 hour before serving.
  • Voila - you now have a lovely looking and tasting, I hope, dessert.
  • To serve,** sprinkle powdered sugar over top of torte and around plate.
  • Carefully cut torte with hot knife into wedges to avoid "cracking" of chocolate fudge on top.
  • Store loosley covered in refrigerator.
  • NOTES:.
  • *For easy pan removal, line bottoms of pans with waxed paper or parchment paper before spraying with nonstick cooking spray.
  • **If torte has been stored for 3 hrs before serving, let stand at room temperature 10 minutes before cutting.

1 quart fresh strawberries, hulled and chopped
2 cups sour cream
1 cup white sugar

Steps:

  • Combine the strawberries and sugar in a bowl; mash until the strawberries are completely crushed and the sugar is incorporated. Add the sour cream to the strawberries and stir until the mixture is pink in color. Serve immediately.

Strawberry Cream Cheese Torte image

This is a most elegant dessert. I've had this recipe for years. Just pulled it out to make for a coffee group. Everyone always loves it, Hope you will too!

1 cup milk
1/4 cup butter or 1/4 cup margarine
1 1/2 cups sugar
1 teaspoon vanilla extract
4 eggs
1 3/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 pint cleaned fresh strawberries
2 (8 ounce) packages cream cheese
1/2 cup powdered sugar
1 pint whipping cream

Steps:

  • Heat milk to boiling in small saucepan. Add butter. Set aside.
  • In large bowl blend sugar, vanilla and eggs. Beat at high speed for 3 minutes until thick and lemon colored.
  • Add flour, baking powder and salt. Beat 1 minute at low speed. Add milk-butter mixture. Beat 1 more minute at low speed.
  • Pour into well-buttered and floured 10-inch springform pan. Bake at 350 degrees for 50 to 65 minutes. or until a tester in center come out clean. Cool thoroughly. Remove from pan.
  • Whip room temperature cream cheese until smooth. Beat in powdered sugar and whipping cream until mixture is very light and fluffy.
  • Split cooled cake into 3 layers. Fill between layers with about 3/4 cup filing.
  • placing sliced strawberries on top of filling before stacking cake.
  • Frost stacked cake with Cream Cheese filling. Press about 1 cup through pastry bag to decorate top. Garnish with more berries. Chill until ready to serve.
  • Tips: Cake can be made several hours before serving or the day before, but should be covered and refrigerated so it will not absorb odors from other foods.
