EASY STRAWBERRY MOUSSE
An easy, airy, strawberry mousse recipe that only requires 4 ingredients. The perfect light dessert that can also double as a stabilized strawberry whipped frosting!

Steps:
- Dissolve jello mix in hot/boiling water. Set aside to cool. Don't let it get chunky though.
- Whip heavy cream and powdered sugar together until medium peaks form.
- Once Jello mixture has cooled but is still runny (not chunky) slowly pour it into the cream mixture with mixer on low speed. (If jello mixture is to warm add 2-4 ice cubes to it to help cool but make sure it doesn't cool too much and become jelly. This will cause your mousse to have clumps in it.) NOTE: If jello mixture is too warm it will deflate the cream and become very runny).
- Finish whipping strawberry mousse mixture until stiff peaks are formed then refrigerate until ready to serve.
EASY FRESH STRAWBERRY MOUSSE
This Easy Fresh Strawberry Mousse is made with only 3 ingredients, no gelatin and no bake. The perfect creamy fluffy Mousse dessert. A delicious dessert to serve at any occasion.

- Clean and slice the strawberries, In a blender or food processor add the sliced strawberries and the sugar and puree. Remove 1/2 a cup of puree and set aside.
- In a cold bowl add the cream and beat until stiff peaks form. Then fold in the remaining puree (not the 1/2 cup) gently.
- Divide the 1/2 cup of puree between the 4 small/medium** glasses and top with the strawberry mousse. Refrigerate for approximately 1 hour or even over night if desired. Top with fresh sliced strawberries and serve. Enjoy.
- ** for size purposes, the glasses I used hold 1 cup of water.

STRAWBERRY MOUSSE
Strawberry season is right around the corner. Try this delicate, heavenly dessert from Everybody Eats Well in Belgium. Raspberries can also be substituted for strawberries.

Steps:
- Place half the strawberries in a bowl and sprinkle with the granulated sugar and kirsch.
- Let macerate for 15 minutes.
- Puree the remaining strawberries together with the confectioners' sugar in a blender.
- Whip the cream to stiff peaks.
- Reserve a quarter of the whipped cream for garnish and refrigerate.
- Carefully fold the remaining cream into the pureed strawberries.
- Arrange the macerated strawberries in 4 balloon-shaped wine glasses, reserving a few strawberry slices for garnish.
- Fill the glasses with the strawberry cream, cover with plastic wrap, and refrigerate for a few hours.
- Pipe the reserved whipped cream through a pastry bag fitted with a star tip over the mousse and decorate with the remaining sliced strawberries.
- Variation: Substitute an equal amount of raspberries for the strawberries.
STRAWBERRIES AND CREAM MOUSSE
Strawberries and cream mousse - a creamy, billowy and fluffy dessert, that's a refreshing and luscious summer treat. It would also be the perfect end to a romantic meal.

- Pour the water into a small or medium bowl and sprinkle the gelatin on top of it. Mix until all the gelatin is saturated in the water. Set aside for about 5 minutes for the gelatin to bloom.
- Meanwhile, hull and chop 1 pound of strawberries. Sprinkle 3 Tablespoons of sugar over the strawberries and allow to stand for about 5 minutes as well.
- Pulse a few times in a food processor or mash the berries together finely.
- Whip the cold cream with the powdered sugar and vanilla until stiff peaks form.
- Melt the gelatin in the microwave for about 30 seconds or in a small saucepan on the stovetop on low heat just until the gelatin dissolves. Do NOT boil.
- Pour the gelatin into the pureed berries and fold carefully into the whipped cream.
- If you're serving the mousse within 12-18 hours, chop the remaining pound of strawberries and sprinkle with 1 1/2 -3 Tablespoons of sugar. Mix.
- Place some of the strawberries (about half) into the bottom of each individual serving container. Top with the mousse mixture. Transfer the mousse mixture into a large ziplock bag, cut off one of the corners and pour the mousse mixture into individual serving containers. (You can also use a spoon or pour it from the bowl, but it will be a bit messier.)
- Chill for about 4 hours in the refrigerator until the mousse is set.
- Garnish with the remaining chopped berries and more whipped cream.
STRAWBERRY CREAM CHEESE MOUSSE TART
Steps:
- COMBINE cookie crumbs, oats and brown sugar in medium bowl. Stir in melted butter with a fork until evenly moistened. Press into 8-inch springform pan.
- BEAT 1 cup heavy cream until stiff peaks form. Beat in 2 tablespoons sugar and almond extract. Place cream cheese on microwave-safe plate. Microwave on HIGH 15 to 20 seconds or until very soft. Add to whipped cream, beating until smooth. Pour boiling water over gelatine in small bowl. Stir about 2 minutes or until gelatine is completely dissolved. Beat into cream cheese mixture until blended. Stir in 3/4 cup preserves. Spread over crumb crust. Chill 2 hours or overnight.
- BEAT remaining 1/2 cup heavy cream until stiff peaks form. Beat in 1 tablespoon sugar. Place in resealable plastic bag. Cut small corner off bag. Remove outer rim of pan. Place dollops of whipped cream around outside edge of cheesecake. Stir remaining preserves with fresh strawberries in small bowl. Spoon evenly in center of cheesecake.
STRAWBERRY MOUSSE
This make-ahead mousse combines strawberries and marshmallows for a gorgeously fluffy texture. It's ready in under 15 minutes to enjoy as a light summer dessert

- Put all but 2 strawberries into a pan along with 100ml water and the sugar. Over a medium heat, cook strawberries until soft enough to mash, about 3 mins. Take off the heat and squash the berries, using a fork, until pulpy. Add the marshmallows, then stir them into the hot strawberries until they dissolve. Leave to cool.
- Whip the cream until it holds its shape. Fold the cream into the cooled strawberry mix, then spoon into one bowl or separate pots and chill for about 2 hrs, or until set. Cut the reserved strawberries in half and use to decorate.

EASY STRAWBERRY MOUSSE

- Choose four of the best-looking strawberries and set these aside to finish the mousse, then hull and roughly chop the rest. Tip these into a blender or food processor along with the sugar and blitz until smooth.
- Whisk the cream to stiff peaks. Reserve roughly 4 tbsp of the strawberry purée in a small dish, then fold the rest through the whipped cream until it turns an even shade of pink. Divide the reserved purée between four small serving glasses or ramekins. Spoon the mousse over the top, then chill for at least 1 hr. Will keep chilled for up to a day. Just before serving, halve the reserved strawberries and use these to decorate the mousse.
