BROILED HONEY LIME SALMON
Honey Lime Salmon has layers of flavor from a quick marinade, sweet and sour glaze, and is finished with more fresh lime juice. It cooks on a sheet pan under the broiler, resulting in tender fish with a golden brown surface. Want to adjust the servings in this recipe to make more or less? - Marinate salmon: Combine ingredients for marinade (garlic, 3 Tbsp lime juice, soy sauce, 2 tsp honey, and cooking oil). Place salmon in a shallow bowl or baking dish and pour marinade over top, gently turning salmon to coat. (If using skin-on salmon, leave the skin-side up so that the flesh-side is in the marinade.)
- Transfer salmon to refrigerator and leave to marinate for 30 minutes.
- Make glaze: While salmon marinates, melt butter in the microwave. Whisk together butter, 1 Tbsp honey, vinegar, salt, and cumin.
- Turn on the oven's broiler, placing a rack about 6 inches below the heat source.
- Line a sheet pan with foil (see note) and spray with nonstick cooking spray or brush it generously with oil or spray it with nonstick cooking spray.
- Remove salmon from marinade (discard marinade).
- Place salmon on prepared pan (if you are using skin-on salmon, cook them skin-side up first).
- Broil salmon: Broil salmon for 2 minutes on the first side.
- Remove pan and flip salmon filets to the other side. Give glaze stir and pour half of the glaze over salmon. (Don't worry if some of the glaze drips off.)
- Return pan to oven and continue broiling until salmon flakes easily with a fork, 5 to 6 minutes. If you have an instant read thermometer, check the temperature and remove when salmon is 145 degrees F in the center. (Note: any glaze that drips off the sides of the salmon may burn under the broiler. This won't affect the salmon, but be sure to turn on your stove's hood vent if needed.
- Finish salmon with glaze and lime juice: When salmon is done, pour the remaining half of the sweet and sour glaze and 2 tsp lime juice over top.
- Serve salmon with extra lime wedges and chopped cilantro.

BROILED SALMON
Individual salmon fillets are immersed in a flavorful honey-lime marinade and briefly soaked. Then aligned on a baking sheet, sprinkled with spices, and finished under a hot broiler until just cooked and gently charred. It's flawlessly delicious!

- In a small mixing bowl whisk well together light olive oil, lime juice, lime zest, honey, garlic, salt, and pepper.
- Place salmon fillets in a gallon size resealable bag* then pour marinade over salmon (be sure marinade is coating all sides of the salmon pieces), press out excess air from the bag and seal.
- Let rest at room temperature 20 minutes to 30 minutes (no longer).
- Align oven rack in center of oven. Preheat broiler to high heat for about 5 minutes.
- Meanwhie line a rimmed baking sheet with aluminum foil and spray with vegetable oil cooking spray.
- Remove salmon from marinade and align on baking sheet, leaving some space between each piece. Sprinkle tops evenly with cumin and coriander.
- Place salmon in oven (check on it frequently throughout broiling). Broil in preheated oven about 4 minutes then if needed tent with foil to prevent excess browning. Continue to broil about 3 - 6 minutes longer until cooked to desired doneness in center.**
- Remove from oven and sprinkle with cilantro and serve. If you want the salmon a little more tart you can serve with lime wedges for spritzing.

There are SO many ways to prepare salmon, and yet I'm always open to a new recipe. Salmon seems to be the most popular fish right now, so it's nice to have plenty of new ideas to change things up a bit. To keep this a guilt-free meal, serve with some steamed broccoli and brown rice.

- Preheat broiler to high. Line a rimmed baking sheet with foil and spray with nonstick cooking spray. Place fillets (skin-side down) on the baking sheet and sprinkle evenly with the garlic pepper. Place baking sheet under broiler and broil for 3 minutes.
- Meanwhile, for the glaze, heat olive oil in a small saucepan over medium heat. Whisk in honey, lime zest, lime juice and soy sauce. Remove from heat and set aside.
- Remove baking sheet from oven. Brush or spoon glaze evenly on the fillets. Return the baking sheet to the oven and broil for 4-7 minutes more or until the fish flakes easily with a fork. Remove from oven. Sprinkle salmon with cilantro (if desired) and serve.
HONEY 'N' LIME GLAZED SALMON

- Squeeze juice from both to measure about 1/3 cup.
- In a small bowl, stir juice with peel, honey, Dijon& salt until smooth.

- Preheat broiler.
- Combine all ingredients, except salmon fillets, in a small bowl, stir with whisk (or fork).
- Spoon a couple of teaspoons of sauce over salmon filets and let them sit for 10-15 minutes (you can marinate longer if you like, just make sure not to use too much of your sauce).
- Place salmon fillets on a broiler pan coated with cooking spray.

- In cup, mix honey, cumin, coriander, salt, lime peel, pepper, and 1 tsp very hot water until blended.
- With tweezers, remove any bones from salmon. With hands, rub honey-spice mixture all over salmon pieces.
- Lightly oil grill. Place salmon on grill over medium-heat and cook 4 minutes. With wide metal spatula, carefully turn salmon over; cook 4 to 5 minutes longer, just until salmon turns opaque throughout and flakes easily when tested with a fork.
- Sprinkle salmon with cilantro and serve with lime wedges.

BROILED SALMON WITH CILANTRO AND LIME
This is really delicious! I love the combination of the fresh cilantro, lime, and garlic. And to top it off, this recipe is lowfat!

- Place fish on plate.
- Combine cilantro, garlic, lime juice, oil and salt in a bowl.
- Set 2 tablespoons aside in a separate bowl.
- Pour the cilantro mixture over the fish (do not use the 2 Tbsp reserved marinade).
- Cover and let it sit 10 minutes.
- Spray broiler rack with nonstick cooking spray.
- Place salmon on rack and brush with 1 tablespoon marinade.
- Broil 6" from heat about 3-4 minutes.
- Turn steaks over and brush with remaining tablespoon of marinade.
- Broil 3 more minutes or until cooked through.
- Note: I have used two very thick salmon steaks instead of the four 3/4 inch thick ones that the recipe calls for, and I have used the same amount of marinade.
- However, since thicker steaks will take longer to cook, the marinade can burn.
- To compensate for this, I add a little bit of marinade at a time.
- For example, if the salmon steaks are 1- 1 1/2 inch thick or more, they can take around 10 minutes to cook.
- So I brush the salmon steaks with less marinade, around 1/2 tablespoon.
- I then remove them from the broiler after 2 1/2- 3 minutes, and add a little more marinade, reserving enough for two more applications.
- Then I broil for another 2 1/2 minutes.
- I then turn the salmon over and add more marinade, still reserving a little.
- I broil another 2 1/2 minutes.
- I then add the remaining marinade and broil the remaining 2 1/2 minutes or until cooked through.
- This may seem tiresome, but it's well worth it.
- The marinade is great and you definitely don't want it to burn!

- Adjust your oven rack 6 inches from the broiler element and pre-heat the broiler. Make a foil pan out of heavy duty foil (or use two sheets of regular foil). Just crunch up the sides to hold in the glaze. Place it on top of a broiler pan. This makes for easy clean-up!
