As the name implies, these buttery potatoes are prepared on the stove, and make a great alternative to roast spuds for your Sunday lunch

50g unsalted butter
500g baby new potatoes

Steps:

  • Melt butter in a large frying pan with a lid. When it is foaming, add potatoes. Shake well so they are covered in butter and in a single layer. Sprinkle over a little salt.
  • Cover and cook gently for about 30 mins, tossing the pan frequently, until the potatoes are tender. Leave them in the hot butter until ready to serve and sprinkle with salt and pepper.

In Scotland, everybody's grandmother has a slightly different recipe for stoved potatoes (a/k/a "stovies"). This is one of countless variations, but it's my favourite.

1 -2 tablespoon bacon or 1 -2 tablespoon meat drippings
2 medium onions, sliced
4 -6 large potatoes, cut in thick slices
1 swede, diced
water (1/2 inch in pan)
1 pinch salt
1/2 cup fine oatmeal

Steps:

  • Melt bacon or meat drippings in a saucepan.
  • Sauté onions until golden but not brown.
  • Add potato slices, diced swede, water, and salt.
  • Cover tightly, and then simmer very gently until cooked.
  • Shake occasionally (try not to stir) to avoid sticking.
  • Check for readiness after ½ hour (may require up to 1 hour).
  • If potatoes are new, add oatmeal when done.
  • Cover, shake well, and leave 10 minutes off heat.

1 tablespoon oil
1 large onion, finely chopped
1 lb beef mince
2 medium carrots, sliced
1 tablespoon toasted pinhead oats
water (to cover)
1 -2 beef bouillon cube (or equivalent powdered beef bouillon -- Oxo if you can find it)
salt and pepper
gravy mix (Bisto if you can find it)
1 lb boiled potato

Steps:

  • Heat the oil in a pan and sauté the onion until it is brown.
  • Add in the mince and cook until well browned.
  • Drain off the liquid.
  • Add the carrots and oatmeal, mix well and pour in enough water to just cover.
  • Crumble in the stock cubes, season and stir.
  • Cover the pan and simmer the mince for about 20 minutes.
  • Once the mince is cooked thicken the mince with about 3 teaspoons of gravy powder or cornstarch mixed with a little cold water.
  • Serve the mince with boiled potatoes.

Steps:

  • Place the potatoes and half the water in a heavy saucepan. Sprinkle with salt and pepper and add the rest of the water. Cover and cook over low heat for 30 minutes or until the potatoes are soft.

My best friend married a gent from Glasgow, and he gave me this recipe because he got tired of cooking it for me all the time! It's simple and savoury, and if you want a truly authentic Scottish meal, serve it with buttered peas.

1 lb ground beef
1 (1 1/4 ounce) package bisto gravy mix (any gravy mix will do, but Bisto has a bit more flavor)
1 cup water
2 tablespoons onions, chopped
2 tablespoons Worcestershire sauce
1 (8 ounce) can mushrooms
1 teaspoon pepper
1 teaspoon salt
4 -6 potatoes, peeled and boiled
2 tablespoons butter
1/2 cup milk
1/2 teaspoon salt (to taste)

Steps:

  • Brown ground beef and onion in skillet over medium heat. Drain fat.
  • Make a small well in the center of the meat, and add the gravy mix and water.
  • Stir until gravy boils and thickens.
  • Stir in Worcestershire sauce, mushrooms, salt and pepper.
  • Heat through and turn down to low to keep warm.
  • Adjust the seasonings with more salt and pepper, if you like.
  • With a ricer or a potato masher, mix the boiled potatoes with the butter, milk and salt to taste.
  • Serve the meat with the potatoes. It's good with peas!

What is "mince and tatties"? - I hear you ask. Basically it is meat and potatoes, but with a Scottish recipe. Ever since I was a kid, I have loved mince & tatties, and even these days I could live on it.

Number Of Ingredients 7

1 lb beef mince (Yanks call it 'ground sirloin', we usually buy the 8%-10% fat range)
1 large onion
vegetable oil or olive oil
carrot
peas (we use frozen)
1 (1 1/4 ounce) packet beef gravy
6 boiling potatoes

Steps:

  • In a good sized pan (non-stick is best) heat up some oil, chop up the onion, and stir fry.
  • Break up the mince, and place in the pan.
  • Stir until brown.
  • Make up the brown gravy (see packet for directions! LOL).
  • Add the gravy to the mince, and start to simmer.
  • Chop up the carrots (as much/little as you want) and add to the mix.
  • Pour in some peas.
  • Add salt (we use low sodium)& pepper, stir and simmer the mixture for about 20 minutes.
  • Peel and chop the potatoes, and boil for about 20 minutes, adding some salt.
  • Serve and enjoy.
  • Also great if served with some boiled cabbage or Brussels sprouts.
