Number Of Ingredients 6

2 cups whole pecans
1 tablespoon vegetable oil
1 tablespoon light brown sugar
2 teaspoons smoked sweet paprika
2 teaspoons kosher salt
1 teaspoons freshly ground black pepper

Steps:

  • Place the pecans in a bowl. Pour the oil, sugar, paprika, salt and pepper over the pecans. Stir to combine.
  • Place a heavy-bottomed pot on the stovetop, and have on hand a pasta pot insert or a steamer basket that fits inside this pot, and a tight-fitting lid. Line the bottom of the pot with heavy-duty aluminum foil. Fill the bottom with the drained wood chips. Top with the pasta pot insert or the steamer basket. Place the pecans in the insert. Turn the heat to medium-high. As soon as smoke is visible, place the lid on the pot and reduce the heat to low. Smoke the pecans for 20 minutes.
  • Remove from the heat and pour the warm pecans on a serving platter. (Allow the wood chips to cool completely before discarding.) If making ahead, store the pecans in an airtight container.

Steps:

  • Halve and remove seeds from the peppers.
  • Place cut side down in the smoker and smoke for 15 minutes over medium.
  • heat using hickory wood chips.
  • Remove from the smoker and dice 1/2 of each pepper, saving the remainder for garnish, or use in a southwestern salad.
  • In a blender, mix melted butter, Szechwan peppercorns, lime juice and zest. Then stir in 1/3 cup of the diced peppers and serve over grilled chicken. Fantastic!

1/4-1/2 cup diced bacon
5 ears corn (lightly smoked in the husk)
2 tablespoons mesquite wood chips, divided
1 1/2 cups smoked ham (diced after smoking)
1 cup diced onion
1/2 cup diced celery
1/2 cup diced carrot
1 cup diced green bell pepper, and
red bell pepper
2 large potatoes, peeled and diced small
1 cup chicken stock
salt
white pepper
1 bay leaf
cayenne pepper
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 cup heavy cream (optional)

Steps:

  • Render the fat from the bacon over low heat in a saucepan.
  • Place the corn, still in the husk, in the smoker on medium heat, using 1 tablespoon of the mesquite wood chips, for 10 minutes. Remove corn, clean and cut kernals off of the cob. Set aside.
  • Add the remaining tablespoon of mesquite wood chips and smoke the ham for 15 minutes over medium heat. Dice the ham and set aside.
  • When the fat is rendered and the bacon is cooked, remove and reserve.
  • Add butter to pan if more fat is needed. Saute the onion, celery, carrots, and peppers until golden. Add the corn and potatoes. Saute 2 more minutes. Add the ham and chicken stock. Season to taste. Bring to a boil, lower heat, cover and simmer until potatoes are done, about 20 minutes.
  • Meanwhile, prepare the white sauce. Melt butter over medium heat, stir in flour, and cook about 3 minutes, stirring constantly. Whisk in the milk and cook until smooth. Lower heat and cook about 10 minutes. Add to corn mixture for final 5 minutes. Season to taste. Add cream, if desired.

1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
1 teaspoon smoked paprika
¼ teaspoon red pepper flakes
½ teaspoon dried oregano
½ teaspoon ground mustard
1 tablespoon light brown sugar
6 small chicken drumsticks, or 8 small drumsticks
1 cup applewood chips
heavy duty aluminum foil
vegetable steamer basket

Steps:

  • Soak the applewood chips in cold water for at least 30 minutes. Drain before using.
  • In a small bowl, whisk together the salt, pepper, garlic powder, smoked paprika, red pepper flakes, oregano, ground mustard, and brown sugar.
  • Add the chicken drumsticks to a large bowl and pat dry with a paper towel. Season the chicken with the dry rub and toss to coat evenly. Set aside while you build the stovetop smoker.
  • Line a Dutch oven or large, heavy-bottomed pot with a lid with 2-3 sheets of heavy-duty aluminum foil. Spread the drained applewood chips in an even layer in the bottom of the pot and place the steamer basket on top.
  • Place the pot over high heat. Once the wood chips start to lightly smoke, add the chicken drumsticks to the steamer basket, place another sheet of foil on top, and cover with the lid. Smoke the chicken over high heat for 8-10 minutes, then reduce the heat to medium-low and continue cooking for another 20 minutes. Turn off the heat and allow the chicken to sit in the smoker, covered, for an additional 10 minutes. The internal temperature of the chicken should register between 165-170°F (74-78°C).
  • Arrange a rack in the upper third of the oven. Turn the broiler on high. Remove the chicken from the smoker, place on a rimmed baking sheet, and broil for 5-7 minutes, until the chicken has crisped and charred in spots. Serve immediately.

A third approach: smoke them lightly to keep their briny goodness and plump texture intact. If you like the heavy-smoked flavor and drier texture of canned smoked oysters, increase the wood to 2 1/2 tablespoons and the smoking time to 25 minutes. Use alder, corn cob or cherry wood chips.

1 tablespoon wood chips (any more than that won't have a chance to burn in the limited time the oysters smoke)

Steps:

  • Put the wood chips in the bottom of the smoker.
  • Replace the bottom tray, and set in the rack.
  • Lay the oysters in the half shell on the smoking rack.
  • Start the oysters over medium heat and lower the heat slightly once the smoker lid is closed.
  • Smoke until the oysters are very lightly colored and firm, but still plump and moist, 9 minutes over the heat after closing the smoker lid and about 6 minutes off the heat with the smoker lid closed.
  • Check the oysters for doneness after they have been off the heat 5 minutes.
  • Serve right from the smoker or drizzle them with melted butter and pass lemon wedges, a pepper mill, and a bottle of hot red pepper sauce.

Growing up in the South gave me a real soft spot for smoked barbecue, especially fall-off-the-bone baby back ribs. Did you know you can recreate smokehouse favorites at home, right on your stovetop? Smoking gives meat a rich flavor, crispy exterior "or bark" and amazing tenderness. Slather all of that in a four-ingredient homemade barbecue sauce and you have a blue-ribbon winner!

1 tablespoon kosher salt
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons ground mustard
2 teaspoons garlic powder
1 teaspoon ground coriander
1/2 teaspoon ground allspice
3 pounds baby back ribs, cut into sections of 3 to 4 bones
1/2 cup ketchup
1/2 cup date syrup
1/2 cup yellow mustard
1/2 teaspoon Worcestershire sauce
Coleslaw and cornbread, for serving

Steps:

  • Soak 8 ounces (about 4 cups) barbecue wood chips in water to cover for 1 hour. Drain and discard the water.
  • Prepare the stovetop smoker: Place a 7-quart black Dutch oven on the stovetop (see Cook's Notes). Cut two pieces of heavy-duty aluminum foil long enough to line the bottom of the pot and still come up the sides with overhang. Lay the pieces one on top of the other in a crisscross pattern (like a plus sign). Place the soaked wood chips on top of the foil and spread in an even layer. Fold one piece of foil overhang over the wood chips. Top with a metal steamer basket.
  • For the ribs: Whisk together the salt, paprika, cumin, ground mustard, garlic powder, coriander and allspice in a small bowl. Sprinkle generously all over the ribs. Press the spice rub into the ribs with your hands and transfer them to the steamer basket (it's okay if the ribs overlap slightly). Cover with the lid and fold the excess foil over the lid. You can use more aluminum foil to create a tight seal around the lid as needed to keep the smoke in the pot.
  • Cook the ribs in the smoker over medium heat until the meat easily pulls away from the bone, about 1 hour.
  • Preheat the oven to 300 degrees F and prepare the slather sauce: Whisk the ketchup, date syrup, mustard and Worcestershire sauce together in a small saucepan and cook over medium heat until warmed through, about 5 minutes.
  • Once the ribs are smoked, remove and discard the foil around the seal of the pot. Set the steamer basket of ribs on a sheet pan and carefully lift the warm wood chips out of the pot using the excess foil. Allow them to cool completely on a sheet pan before discarding them.
  • Place the steamer basket of ribs back into the pot and cover. Roast until the ribs are fall-off-the-bone tender, about 30 minutes.
  • To serve, cut between the bones to separate each rib. Pour the slather sauce on top and serve with coleslaw and cornbread.

The butter should be very soft so it melts easily when spooned on the clams.
  • Line the bottom of a 9 x 11-inch aluminum foil tray with an even 1/2-inch layer of rock salt.
  • Nestle the clams on their half shells into the salt to keep them level during smoking.
  • Set up the smoker using the wood chips and smoke the clams over medium heat until they are cooked through and tinged with brown, about 12 minutes, after closing the top.
  • Remove the smoker lid and drop about 1/2 teaspoon of the butter onto each clam. Let them.

  • Gather all the ingredients. Bring the meat to room temperature (important!). I use this stovetop smoker.
  • Season both sides of the meat with salt and pepper and then sprinkle generously with dry rub. Allow to season at room temperature for at least 1 hour. It can also be covered and refrigerated for 6-10 hrs. If you do so, be sure to bring the meat back to room temperature.
  • Place 2 Tbsp of wood chips (hickory, oak, etc) in the center of the smoker pan, covering an area roughly the size of your burner. Then place the drip pan lined with a sheet of aluminum foil (easy cleanup!).
  • Place the tri-tip on the rack. Make sure to leave space between the tri tip and the sides of the smoker.
