Beef Lo Mein image

This home-cooked Beef Lo Mein recipe tastes just like what you'd get at a Chinese takeout restaurant (or better, because it uses more vegetables than your typical takeout). It's also easy to make. If you love lo mein, it's a must-try recipe!

12 ounces flank steak
1 teaspoon cornstarch
1 teaspoon soy sauce
1 teaspoon vegetable oil
1/4 teaspoon baking soda
1 tablespoon light soy sauce
1 tablespoon oyster sauce
2 teaspoons dark soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon salt ((or to taste))
1/4 teaspoon sugar
1/4 teaspoon white pepper
1 pound fresh lo mein noodles
1 clove garlic ((minced))
1 carrot ((medium carrot, julienned))
1/2 red bell pepper ((julienned))
1/2 cup mushrooms ((sliced))
1/2 cup bamboo shoots ((strips or sliced))
2 cups Napa cabbage ((shredded))
2/3 cup snow peas
2 cups mung bean sprouts
2 tablespoons vegetable oil ((divided))
1 tablespoon Shaoxing wine
2 scallions ((julienned, white and green parts separated))

Steps:

  • Slice the beef into thin strips against the grain. Place the sliced beef in a small bowl with baking soda, corn starch, soy sauce, and oil. This velveting step will make the beef tender and flavorful, with a glistening look. Set aside to marinate for 30 minutes.
  • Prepare the lo mein sauce by combining the soy sauce, oyster sauce, dark soy sauce, sesame oil, salt, sugar, and ground white pepper in a small bowl.
  • If using cooked lo mein noodles, rinse them under hot tap water to loosen them and drain thoroughly. If using uncooked noodles, cook them according to package instructions until they're al dente, and drain thoroughly. Set aside. Prepare the garlic and all the vegetables to have them ready for cooking. Arrange them in the order you will add them to the wok.
  • Place your wok over high heat until it's smoking lightly. Add 1 tablespoon of vegetable oil to coat the wok, and add the beef so it's all in one layer on the hot wok surface. Sear each side for about 30 seconds. Remove the beef from the wok and set aside.
  • Add another tablespoon of oil, along with the garlic, carrots, peppers, and mushrooms. Stir-fry for 30 seconds.
  • Add the bamboo shoots and the white parts of the scallions. Stir-fry for another 20 seconds, and then add the napa cabbage. Make sure your heat is at its highest now, and stir-fry everything together for another 30 seconds.
  • Add the prepared noodles. They should be warm or at room temperature, and not stuck together! If they are, just rinse them in hot water to loosen them up.
  • Add the Shaoxing wine around the perimeter of the wok, and toss the vegetables and noodles together using a scooping motion. After the noodles are warmed up (about 30 seconds to 1 minute), and your pre-mixed sauce.
  • Continue stir-frying with a scooping motion until the sauce is evenly distributed, making sure to scrape the bottom of the wok to prevent the noodles from sticking. High heat and a well-seasoned wok should also prevent any sticking.
  • Next, add the snow peas, mung bean sprouts, and beef (along with any juices that may have collected in the bowl). Continue stir-frying until the noodles are heated through and everything is thoroughly mixed.
  • Toss in the green parts of the scallions, and taste the lo mein. Adjust the seasoning to your liking (feel free to add more salt, soy sauce, oyster sauce, sesame oil, or white pepper according to your own palate). Plate and serve with homemade chili oil or hot sauce on the side!

Steps:

Meanwhile, in a small bowl, combine the cornstarch, soy sauce, vinegar, hoisin sauce, ginger and garlic; set aside., In a large skillet or wok, stir-fry chicken in 1 tablespoon oil for 5-8 minutes or until no longer pink. Remove with a slotted spoon. Stir-fry broccoli and carrots in remaining oil for 5-6 minutes or until crisp-tender. Drain pasta. Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in chicken and pasta; heat through. Sprinkle with peanuts.

1 pound (450g) fresh lo mein noodles
1 pound (450g) country-style boneless pork ribs or boneless pork loin chops
1 teaspoon (3g) baking soda
3 tablespoons (40g) sugar
3 tablespoons (45ml) soy sauce
3 tablespoons (45ml) oyster sauce
2 tablespoons (30ml) Chinese black or balsamic vinegar
1 tablespoon (15ml) toasted sesame oil
2 tablespoons (30ml) Shaoxing rice wine or dry sherry
1 tablespoon (15ml) Asian fish sauce
1 tablespoon (15g) cornstarch
3 tablespoons (45ml) neutral oil, such as grapeseed, peanut, or canola, divided
1 (3-inch) knob fresh ginger, peeled and minced (about 2 tablespoons; 12g)
3 medium garlic cloves, minced
4 scallions, white parts cut in 1-inch pieces, light green parts very thinly sliced; divided
1 1/2 cups shredded cored purple cabbage (5 ounces; 150g)
1 1/2 cups shredded Chinese broccoli or cored Napa cabbage (5 ounces; 150g)
1 cup julienned carrots (2 1/2 ounces; 75g)
Toasted sesame seeds, for garnish (optional)
Sambal oelek (chili paste), for serving (optional)

Steps:

  • Bring a pot of salted water to a boil and cook noodles according to package directions, stirring regularly with tongs or long chopsticks, until al dente and separated. Drain noodles and set aside.
  • Trim pork of excess fat and cut into thin strips, about 1/4 inch wide by 2 inches long. In a bowl, stir together baking soda and 1/2 cup cold water. Add pork, stir until thoroughly coated, then let stand at room temperature for 15 minutes.
  • Meanwhile, in a medium bowl, whisk together sugar, soy sauce, oyster sauce, vinegar, sesame oil, wine, fish sauce, and cornstarch until sugar is dissolved. Set sauce aside.
  • Drain pork well, rinse with cold water, then pat dry with paper towels. Add pork back to rinsed and dried bowl. Stir in 2 tablespoons (15ml) of the sauce and mix well.
  • In a wok or large cast iron skillet, heat 1 tablespoon (15ml) neutral oil over medium-high heat until shimmering. Add ginger, garlic, and white scallion pieces and stir-fry for 30 seconds. Increase heat to high and add purple cabbage, Chinese broccoli (or Napa cabbage), and carrots. Cook, stirring and tossing, until vegetables are charred in spots and just softened, 3 to 5 minutes. Transfer to a plate.
  • Add 1 tablespoon (15ml) neutral oil to wok or skillet and heat over high heat until smoking. Add pork, spreading it out in a single layer, and let cook on one side until crisp and brown, 2 to 3 minutes. Continue to cook, stirring and tossing, until just cooked through, about 1 minute longer. Transfer to plate with vegetables.
  • Wipe out wok or skillet, then add remaining 1 tablespoon (15ml) neutral oil and heat over high heat until smoking. Add noodles and cook, tossing and stirring, until hot.
  • Add remaining sauce, vegetables, and pork to noodles and toss well over heat to combine. Transfer lo mein to a platter and sprinkle sliced green scallions all over, along with sesame seeds, if using. Serve right away, passing sambal oelek at the table if desired.

8 ounces Chinese egg noodles
1/2 cup dried shiitake mushroom
3/4 lb shrimp
1 tablespoon oyster sauce
1/2 cup chicken stock
2 tablespoons soy sauce
2 teaspoons sesame oil
3 tablespoons vegetable oil
2 teaspoons garlic, minced
2 teaspoons ginger, minced
1/4 cup green onion, chopped
1 cup bok choy, cut into 1 1/2-inch pieces

Steps:

  • Drop noodles into a large quantity of boiling water - at least 2 quarts - and cook 3 1/2 to 5 minutes, until barely tender to the bite. Drain, rinse with cold water and reserve.
  • Place the mushrooms in a bowl and add boiling water to cover. Let stand 15 to 30 minutes, until tender, then drain and squeeze the mushrooms to extract most of their moisture. Cut off and discard the tough stems and julienne the caps.
  • Combine the beef and oyster sauce in a bowl; stir to coat. Let stand for 10 minutes.
  • In another bowl, combine the chicken broth, soy sauce and sesame oil. Set aside.
  • Heat a wok over high heat. When hot, add the vegetable oil, swirling to coat the sides. Add the garlic, ginger, and green onions and cook, stirring until fragrant, about 30 seconds. Add the beef and cook, stirring constantly, about 1 minute. Add the mushrooms and bok choy and cook for a minute longer. Add the sauce and noodles. Gently toss until heated through and sauce has thickened. Serve immediately.

The sauce is tangy and sweet with a nice nutty taste from the sesame oil. The noodles soak up all the delicious flavors. Get your chopsticks ready for this easy and yummy dinner.

1 pkg spaghetti or thin spaghetti noodles
2 boneless skinless chicken breasts
veggies of your choice (we used 3 cups of frozen stir fry veggies)
SAUCE
1 c chicken broth
6 Tbsp Hoisin sauce
6 Tbsp soy sauce, low sodium
2 Tbsp Teriyaki sauce
2 Tbsp rice vinegar
2 Tbsp brown sugar, lightly packed
1/2 tsp hot sauce (or a sprinkle of hot pepper flakes)
2 tsp pure sesame oil
2 tsp ginger paste
1 Tbsp corn starch
1 Tbsp cold water

Steps:

  • 1. Cut up your chicken into bite-sized pieces and add them to a wok or large frying pan. Cook all the way through.
  • 2. In a separate pot cook the noodles to al dente (just a minute short of the directions). Drain and set aside.
  • 3. In a small saucepan, add all of the ingredients for the sauce except for the corn starch and the water. Bring to a boil.
  • 4. Once it is boiling, mix the corn starch and water together. Add to the sauce stirring until it has thickened. Reduce to low and cover.
  • 5. In the Wok/frying pan add your veggies and half the sauce and cook the veggies through. Once they are no longer raw add the pasta and the rest of the sauce. Toss it all together. Once it's all warm and has had a few minutes to get all the flavors happy together, dish up and serve!!
