ORANGE RICOTTA COOKIES

Be forewarned: it is nearly impossible to stop eating these cookies once you've tasted your first. Fortunately, this dough freezes extremely well, so you can make sure you always have some stocked away for emergencies.

2 cups ricotta
2 cups granulated sugar
2 sticks unsalted butter
1 large egg
4 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons vanilla extract
Zest of 1 large orange
1 1/4 cups confectioners' sugar
1/4 cup milk

Steps:

  • Cream together the ricotta, granulated sugar, butter and egg and in the bowl of a stand mixer fitted with the paddle attachment. Add the flour, baking powder, vanilla and orange zest and mix on low until a smooth dough forms. Refrigerate until firm, 1 hour.
  • Preheat the oven to 350 degrees F, and line 2 baking sheets with parchment paper or silicone baking mats.
  • Scoop tablespoon-sized balls of dough and arrange them 2 inches apart on the prepared baking sheets. Bake, rotating halfway through, 15 minutes. Let cool on baking sheets, 20 minutes.
  • In a small bowl, whisk together the confectioners' sugar and milk until a smooth glaze forms. Dip the tops of cooled cookies, and let sit until the glaze hardens.
  • Cookies can be stored in an airtight container for 5 days, or frozen for 3 weeks.

CHOCOLATE-CHERRY DROP COOKIES

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter
4 ounces unsweetened chocolate, chopped
4 ounces semisweet chocolate, chopped
1 1/2 cups granulated sugar
1 cup packed light brown sugar
2 tablespoons milk
1 teaspoon pure vanilla extract
4 large eggs
One 11-ounce bag semisweet chocolate chunks
1 cup dried cherries

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 325 degrees F. Line 3 baking sheets with parchment.
  • Whisk the flour, cocoa and salt together in a medium bowl. Put the butter, unsweetened and semisweet chocolates in a large microwave-safe bowl. Microwave in 30 second increments, stirring until melted, 3 to 4 minutes.
  • Stir the granulated and light brown sugars into the chocolate mixture until blended and then add the milk, vanilla and eggs and beat vigorously with a wooden spoon or spatula until thick and glossy. Add the flour mixture and stir until just combined. Stir in chocolate chunks and dried cherries.
  • Drop the batter in heaping tablespoons onto the prepared baking sheets, about 2-inches apart. Bake until the cookies are set on the edges but still soft in the middle, 12 to 15 minutes, rotating the pans halfway through the baking time. Cool on the baking sheets on a wire rack for 5 minutes, then transfer to the wire rack to cool completely.

COCONUT AND OATMEAL DROP COOKIES

1 cup (2 sticks) butter
1 cup granulated sugar
1 cup packed light brown sugar
2 eggs
1 tsp. vanilla extract
1 tsp. baking powder
1 tsp. baking soda
2 cups all-purpose flour
2-1/2 cups shredded coconut
1 cup chopped walnuts or pecans
2 cups old-fashioned oatmeal

Steps:

  • Heat oven to 350 degrees. Grease 2 large cookie sheets. Cream butter and sugars in mixer until light and fluffy. Add eggs, beat together. Add vanilla, baking powder and baking soda. Then add the flour. Mix until well combined. Stir in coconut and nuts. Mix in oatmeal.
  • Drop on greased cookie sheets by the tsp., spacing about 1/2 inch apart. Bake 12 to 15 minutes, just until the edges begin to brown. Transfer to a wire rack to cool.

ITALIAN LEMON DROP COOKIES

2 cups Pillsbury BEST® All Purpose Flour
1/3 cup sugar
1 tbsp. baking powder
1/4 stick Crisco® Baking Sticks All-Vegetable Shortening
or 1/4 cup Crisco® All-Vegetable Shortening
1/2 cup milk
1 large egg, beaten
2 tsps. lemon extract
Frosting
2 cups powdered sugar
1/3 stick Crisco® Baking Sticks All-Vegetable Shortening
or 1/3 cup Crisco® All-Vegetable Shortening
1/4 cup warm milk, divided
1 tsp. lemon extract

Steps:

  • HEAT oven to 375°F. Coat baking sheet lightly with no-stick cooking spray. Combine flour, sugar and baking powder in a large bowl. Add shortening. Beat with electric mixer on low speed until shortening is completely blended into flour mixture. Add milk, egg and lemon extract, mixing just until blended.
  • ROLL dough into 1-inch balls. Place 1-inch apart on prepared baking sheet. Bake 10 to 12 minutes or until lightly browned. Cool completely on baking sheet on wire rack.
  • For frosting, BEAT powdered sugar, shortening, 2 tablespoons warm milk and lemon extract in medium bowl with electric mixer on low speed until blended. Beat in additional warm milk, a little at a time, until desired consistency. Spread on top of cookies.

CHOCOLATE BROWNIE DROP COOKIES

1/2 cup unsalted butter
1 3/4 cups sugar
4 large eggs
1 teaspoon vanilla
1 1/4 cups flour
3/4 cup each white and dark chocolate chips
1/4 cup toasted ground pecans (optional)

Steps:

  • Preheat the oven to 350 degrees. Place the chocolate and butter in a large metal bowl set over a pan of simmering water. When the chocolate is just melted, remove from the heat. Add the sugar and mix well. Add the eggs and vanilla and mix well. Add the flour, chips and pecans, and mix well. Drop by large spoonfuls onto a well-greased sheet pan. Bake 7 to 10 minutes, or just until the cookies are set. Let cool on the pan at least 5 minutes, then remove.
