Balsamic Garlic Brussels Sprouts and Mushroom Stir Fry image

Caramelized Brussels sprouts and mushrooms in a sticky, sweet, and spicy garlic balsamic sauce served over rice.

2 tsp sesame oil
8 oz Shiitake Mushrooms, stems removed and sliced
8 oz cremini mushrooms, stems removed and sliced
4 oz button mushrooms, sliced
1/2 yellow onion, thinly sliced
8 oz Brussels sprouts, trimmed and cut in half
4 garlic cloves, minced
1 tsp chopped fresh cilantro
1 tsp Worcestershire sauce
1 1/2 tbsp Balsamic Vinegar
1 tbsp low-sodium soy sauce
1 tbsp fish sauce
1/2 tsp sriracha sauce
1/2 cup vegetable stock or chicken stock
salt and pepper to taste
serve over brown rice or jasmine rice
garnish with sliced green onions

Steps:

  • Heat the sesame oil in a large skillet over medium/high heat. Once the oil is shimmering add the mushrooms. Cook the mushrooms for 10 minutes until slightly caramelized.
  • Add the onions and Brussels sprouts. Season with salt and pepper. Try to keep all the sprouts cut side down to halp caramelize them. Cook for another 5 minutes.
  • While the Brussels sprouts are caramelizing, mix the sauce. Combine the garlic, cilantro, Worcestershire, balsamic, soy sauce, fish sauce, sriracha, and stock along with a pinch of salt and a few turns of black pepper. Whisk to combine.
  • Increase the heat to high. Mix int he sauce to the pan to get all the veggies coated. Once the sauce is bubbling, cover the pan with a lid, and cook for 5 more minutes.
  • Serve the stir fry on top of rice with green onions as garnish along with more sriracha sauce and soy sauce as you see fit.

¼ cup low sodium chicken broth
2 tsp oyster sauce
2 tsp low sodium soy sauce
½ tsp ginger

Steps:

  • Slice the brussels sprouts, mushrooms, and onion. Mince or finely chop the garlic.
  • In a small bowl add all the stir-fry sauce ingredients and mix until well blended. Set aside
  • In a hot wok, drizzle 1 tbsp canola oil, add crimini mushrooms and stir-fry on medium heat until tender. Set aside
  • In the same wok, drizzle 1 tbsp canola oil. Saute onion for a minute. Add brussels sprouts, stir-fry for 2 minutes, then add garlic. Stir-fry for another 2 minutes or until tender but still firm.
  • Add the stir-fry sauce and cooked mushrooms. Stir-fry for another 2 minutes until the sauce thickened.

1 cup sliced cremini mushrooms
2 teaspoons minced garlic
2 cups Brussels sprouts leaves
2 tablespoons rice wine, such as michiu or sake

  • In a wok or large skillet, heat 1 tablespoon of oil over high heat until shimmering. Add the mushrooms and sauté until soft, adding a bit of water if necessary. Remove the mushrooms and set aside.
  • Pour remaining oil into the wok and add the garlic and Brussels sprouts. Stir-fry the vegetables, adding the rice wine, fish sauce, and cooked mushrooms, and continue stirring 15-30 seconds so the liquid can evaporate. Remove from the wok and serve immediately.

1 cup jasmine rice
Kosher salt
2 cloves garlic, peeled and finely grated
1-inch piece fresh ginger, finely grated
2 tablespoons low-sodium soy sauce
1 tablespoon honey
Pinch crushed red pepper
4 tablespoons vegetable oil or ghee
1 pound Brussels sprouts, trimmed and halved lengthwise (quartered if large)
One 3.5-ounce package shiitake mushrooms, stemmed, caps thickly sliced
8 ounces large shrimp (8 to 10), peeled and deveined, tails intact
1 scallion, thinly sliced
Toasted sesame oil, for serving
Sesame seeds, for serving

Steps:

  • Combine the rice with 2 cups water and 1/2 teaspoon salt in a medium saucepan. Bring to a boil, stirring occasionally, and then reduce the heat to low. Cover and cook until the rice is tender, about 15 minutes. Remove from the heat.
  • Meanwhile, whisk together the garlic, ginger, soy sauce, honey and crushed red pepper in a small bowl. Set the sauce aside.
  • Heat a 12-inch cast-iron skillet over medium-high heat. Add 2 tablespoons of the vegetable oil to the hot skillet, then swirl to coat the bottom entirely. Place the Brussels sprouts cut-side down in a single layer. Cook, undisturbed, until the sprouts have developed a golden-brown crust, about 2 minutes. Toss the sprouts, then continue to cook until they're bright green and crisp tender, about 2 minutes.
  • Add 1 more tablespoon of the vegetable oil to the skillet along with the mushrooms and 1/2 teaspoon salt. Cook, stirring occasionally, until the mushrooms are tender and browned in spots, about 2 minutes.
  • Create space for the shrimp in the middle of the skillet and add the remaining 1 tablespoon vegetable oil. Lay the shrimp flat in a single layer and cook until the shrimp have turned pink and a light crust begins to form, about 3 minutes. Flip and continue to cook until just cooked through, about 1 minute.
  • Pour the sauce over the shrimp and vegetables, then toss until everything is evenly coated and the sauce has reduced slightly, about 1 minute.
  • Divide the rice and Brussels sprout mixture between 2 serving bowls. Top with the scallions, drizzle with sesame oil and sprinkle with sesame seeds.

Brussels sprouts caramelize to a deep, delicious brown while retaining a fresh bite in minutes when cooked on the stovetop. In this adaptation of wok stir-frying, the sprouts quickly sear in a single layer in a skillet, then steam through with a splash of water to tenderize their tough cores. Crushed garlic cloves release their aroma into the hot oil, but are in chunks big enough to not burn and get bitter. A final sprinkle of sugar, soy sauce and red-pepper flakes give the sprouts a nice balance of sweet, salty and spicy. You can eat this with other stir-fries and steamed rice or alongside any main dish. Leftovers, reheated or cold, can be tossed into grain bowls and salads.

4 garlic cloves, smashed, then peeled
1 pound brussels sprouts, halved or quartered, if large
Salt and pepper
1/2 teaspoon granulated sugar

Steps:

  • Heat a large skillet over high for a few minutes. Drops of water should skitter across the surface then evaporate quickly. Set the pan lid and 1/2 cup water next to the stove. Add enough oil to coat the bottom of the pan (3 to 4 tablespoons), then add garlic and sizzle until fragrant and wisps of smoke rise from the oil, about 15 seconds. Add brussels sprouts, sprinkle with salt and pepper, and stir to coat with oil. Spread in an even layer, carefully add water and immediately cover.
  • Cook without stirring until the water has almost completely evaporated, 4 to 6 minutes. After silent simmering, there will be loud popping sounds that quiet to a crackle.
  • Uncover, sprinkle with sugar and soy sauce, and stir for 1 minute. Sprinkle with red-pepper flakes and serve.

Steps:

  • Tip the sprouts into a pan and add a couple of cm water and a pinch of salt - a large pan works better so they're not piled up too high. Cover and bring the water to the boil, turn down to a simmer and cook with the lid on for 3- 5 mins depending on size.
  • Test with a sharp knife to see if they are cooked through. If not, cook for a little longer and test again.
  • Drain and tip the sprouts into a bowl. Serve with a knob of butter, if you wish.

1 pound brussels sprouts, trimmed and shredded
Salt and pepper
1 cup bean sprouts

1 pound medium shrimp (41 to 50), peeled and deveined (tails left on)

  • In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high. In 2 batches, saute brussels sprouts until tender, 5 minutes total; season with salt and pepper. Transfer to a platter. Add bean sprouts to pan and cook until heated through, 1 minute; add to platter.

1 large egg white
2 teaspoons cornstarch, divided
6 ounces boneless skinless chicken breasts, cut into 3/4 inch pieces
2 cups Brussels sprouts, trimmed and halved, if large, quartered
1 1/2 tablespoons soy sauce
1/2 teaspoon sugar
3/4 tablespoon rice vinegar
3 tablespoons chicken broth
1/2 teaspoon sesame oil
1/2 teaspoon cold water
2 tablespoons vegetable oil
1 shallot, minced
1 garlic clove, minced
2 teaspoons gingerroot, peeled and minced
1/2 red bell pepper, cut into 3/4 inch pieces

Steps:

  • Whisk egg white and 1 1/2 tsp cornstarch; add chicken and set aside for 10 minutes; boil Brussels sprouts in salted water for 2 1/2 minutes, or until just crisp-tender,drain and cool under cold water.
  • In a small bowl combine soy sauce, sugar, vinegar, broth, remaining 1/2 tsp cornstarch, sesame oil and water; set aside.
  • Heat oil in a wok; add drained chicken and stir-fry until opaque and just firm, about 1 minute; remove and set aside.
  • Stir-fry shallot, garlic and gingerroot for 30 seconds; add red bell pepper and stir-fry for 2 minutes; add the scallions and the Brussels sprouts and stir-fry 1 minute.
  • Make a well in the center of the stir-fry mixture; whisk the soy sauce mixture and add to the well, whisking until it boils; stir into the vegetable mixture and simmer for 1 minute.
  • Add the chicken, water chestnuts and salt and pepper and stir-fry until chicken is heated through, about 30 seconds.

2 -3 extra large russet baking potatoes, scrubbed and cubed
1/4 cup extra virgin olive oil
1 teaspoon sea salt
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon ground black pepper
2 -3 cups fresh Brussels sprouts, cut from stem and halved
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
2 teaspoons sea salt, to taste
1 teaspoon ground black pepper, to taste
2 tablespoons pine nuts
1 tablespoon coconut oil
1 medium onion, chopped
8 fresh garlic cloves, minced
1 lb baby bella mushroom, sliced
13 ounces field roast brand smoked apple sage vegan seitan sausage, sliced
1 teaspoon sea salt, to taste
1/2 teaspoon ground black pepper, to taste
1 cup fresh spinach leaves (may sub kale or chard)

Steps:

  • First get your potatoes roasting. Start by preheating your oven to 400 degrees F and lining a large baking sheet with parchment paper.
  • Combine olive oil with salt, garlic powder, paprika, and pepper. I like to mix it all up and pour it into a ziploc bag, add the cubed potatoes, seal it up, and shake well to coat the potatoes with oil and spices. You could also add everything into a large mixing bowl and stir until coated.
  • Spread potatoes out on baking sheet and roast for 30-40 minutes, until tender and slightly browned.
  • While the potatoes are roasting, prep your Brussels sprouts in much the same way you did the potatoes--line a baking sheet with parchment paper, mix the sprouts with the lemon juice, oil, salt, pepper, and pine nuts (either in a ziploc bag or a mixing bowl) and spread the coated sprouts out on the baking sheet. Set aside until potatoes have only about 15 minutes of cooking time remaining, then scoot them over and slide your Brussels sprouts in next to them. Let them roast for the remaining 15 minutes, or until they turn a lovely golden-brown.
  • As soon as your potatoes are in the oven and your Brussels sprouts are prepped and ready to go, get to work on the stir-fry. Melt the coconut oil in a large skillet and add onions and garlic. Saute until onions are soft and garlic is just beginning to brown.
  • Add mushrooms and seitan sausage and stir-fry until heated through, adding salt and pepper as you go (to taste).
  • Add fresh raw spinach leaves and stir-fry just until wilted. then remove skillet from heat.
  • Toss roasted potatoes, roasted Brussels sprouts, and stir-fry mixture in skillet or large pot/bowl. Serve hot!
