6 ounces dried Chinese mushrooms
1 lb snow peas
3 tablespoons peanut oil
1/2 cup bamboo shoot, cut into 1/8-inch pieces
1 tablespoon chopped garlic
1 tablespoon chopped ginger
1 teaspoon salt
1/2 teaspoon sugar
2 tablespoons reserve mushroom water

Steps:

  • Cover the mushrooms in a small bowl with warm water. Let sit for 30 minutes to soften. Drain mushrooms and reserve about 2 tablespoons of water. Cut mushrooms into 1/4-inch slices; set aside.
  • Snap tips off of snow peas and remove strings from pods; set aside.
  • Place 3 tablespoons of peanut oil in a wok set over high heat. Add the mushrooms and bamboo shoots and stir-fry for 2 minutes.
  • Add the snow peas, chopped garlic. ginger and stir-fry for another minute.
  • Add the salt, sugar, and mushroom water. Cook for another 2 minutes to evaporate liquid.
  • Serve hot.

1 lb. pork tenderloin, cut into bite-size pieces
2 cups quartered fresh mushrooms
1 cup fresh snow peas
1 small yellow pepper, cut into strips
2 cloves garlic, minced
1 Tbsp. minced fresh ginger
1/4 cup KRAFT Lite CATALINA Dressing
1 Tbsp. lite soy sauce
1/4 cup PLANTERS Cashews
2 green onions, chopped
3 cups hot cooked long-grain brown rice

Steps:

  • Heat oil in wok or large skillet on high heat. Add meat; stir-fry 1 min.
  • Add next 5 ingredients; stir-fry on medium-high heat 3 to 5 min. or until meat is lightly browned. Stir in dressing and soy sauce; stir-fry 2 min. or until vegetables are crisp-tender and meat is done.
  • Top with nuts and onions. Serve with rice.

1 lb boneless skinless chicken breast
1 tablespoon cornstarch
1 tablespoon dry sherry
8 ounces shiitake mushrooms, fresh
8 ounces bamboo shoots
1 cup snow peas (for best results, it is suggested to use peas that are "fresh from the pod", rather than frozen etc.)
vegetable oil cooking spray
1 tablespoon soy sauce
1 teaspoon sugar
1/2 cup chicken stock
1 tablespoon cornstarch, dissolved in water
2 cups minute instant brown rice

Steps:

  • Remove all visible fat from chicken and cut into bite size pieces.
  • Marinate in cornstarch, one teaspoon soy sauce and sherry.
  • Slice mushrooms.
  • Remove stems from pea pods.
  • Heat oil in wok.
  • Add snow peas and stir fry until covered with oil.
  • Add chicken stock.
  • Cover and cook about 30 seconds until jade green.
  • Remove and drain.
  • Stir fry chicken until no longer pink.
  • Add mushrooms and bamboo shoots and stir fry for one additional minute.
  • Add back snow peas and toss to heat.
  • Make well in center of wok or skillet and add sauce mixture.
  • Stir until it starts to thicken, then mix in chicken and vegetables.
  • Serve over rice.

2 tablespoons slivered almonds
2 tablespoons butter
1 package (6 ounces) fresh or frozen snow peas, thawed
1-1/2 cups sliced mushrooms
1-1/2 teaspoons cornstarch
1/4 teaspoon chicken bouillon granules
1/2 cup water
1 tablespoon soy sauce

Steps:

  • In a large skillet, stir-fry almonds in butter for 2 minutes or until lightly toasted. Add snow peas and mushrooms; stir-fry 2 minutes longer., In a small bowl, combine the cornstarch, bouillon, water and soy sauce until smooth. Add to skillet; bring to a boil. 1/2 lb snow peas (can use frozen if fresh are not available) or 1/2 lb sugar snap pea (can use frozen if fresh are not available)
1 (8 ounce) package sliced mushrooms (don't substitute canned)
3 tablespoons peanut oil
1 1/2 tablespoons chopped garlic
1 1/2 tablespoons chopped ginger
3/4 teaspoon kosher salt
1 1/2 teaspoons sugar
3 -5 drops sesame oil

Steps:

  • String the snow peas.
  • Heat a skillet over high heat and add the peanut oil.
  • When hot, add the mushrooms and stir briefly over high heat.
  • Add the garlic, ginger, and snow peas, and stir until well coated with the oil.
  • Add the salt and sugar.
  • Continue to stir over high heat until most of the liquid has disappeared and the peas are crisp yet tender.
  • Serve sprinkled with the sesame oil.

1 tablespoon olive oil
½ pound snow peas
4 ounces fresh mushrooms, thinly sliced
2 tablespoons teriyaki sauce

Steps:

  • In a medium skillet over medium heat, cook the sesame seeds about 5 minutes, stirring frequently, until lightly browned. Remove from heat, and set aside.
  • Heat oil in the skillet over medium high heat. Stir in snow peas and mushrooms, and cook 3 to 4 minutes, until tender.
  • Transfer snow peas and mushrooms to a medium bowl. Toss with sesame seeds and teriyaki sauce, and serve warm.

1/2 pound snow pea
1/4 cup lean pork
1/2 cup bamboo shoots
2 tablespoons oils
1/4 cup Stock, Chicken or favorite stock
1 tablespoon cornstarch
pinch sugar
1/4 cup water
1 teaspoon soy sauce

Steps:

  • 1. Soak dried mushrooms. 2. Stem and string snow peas. Slice pork thin. Slice bamboo shoots and soaked mushrooms. 3. Heat oil. Add pork and stir-fry until it loses its pinkness (2 to 3 minutes). 4. Add mushrooms and stir-fry to coat with oil. Then add bamboo shoots then snow peas, stir-frying each briefly. 5. Add stock and heat quickly. Then cook, covered, 3 minutes over medium heat. 6. Meanwhile blend cornstarch, sugar and cold water to a paste. First sprinkle vegetables with soy sauce then stir in cornstarch paste to thicken. Serve at once. VARIATION: * For the pork, substitute white meat chicken. 3 tablespoons water
2 tablespoons teriyaki sauce
Accompaniment: steamed rice

Steps:

  • Toss pork with cornstarch and 1 teaspoon salt.
  • Heat 2 tablespoons oil in a wok or 12-inch heavy skillet over medium-high heat until it shimmers. Stir-fry pork until pale golden and almost cooked through, about 4 minutes, then transfer to a plate. Add 1 tablespoon oil to wok and stir-fry snow peas with garlic until crisp-tender, about 1 minute. Transfer to plate.
  • Add mushrooms to wok with water and remaining tablespoon oil and cook, covered, until softened, about 5 minutes. Add pork, snow peas, and teriyaki sauce and stir-fry until pork is cooked through, about 2 minutes.
