FILIPINO BEEF STIR-FRY

Filipino Beef Stir-Fry image

This is an easy Pinoy recipe if you don't have much time. The beef can be sliced and marinated ahead of time making the meat even tastier. Eat the dish alone or serve with rice. Use a tender cut such as New York steak or prime rib.

Provided by lola

Categories     World Cuisine Recipes     Asian     Filipino

Time 3h

Yield 4

Number Of Ingredients 15

2 (1/2 pound) New York strip steaks, sliced into thin strips
2 tablespoons cornstarch
2 tablespoons soy sauce
1 ½ teaspoons white sugar
3 tablespoons olive oil
1 sweet onion, chopped
2 cloves garlic, crushed
1 tablespoon oyster sauce
salt and pepper to taste
1 pound snow peas
¾ cup green peas
1 carrot, sliced
2 stalks celery, sliced
1 red bell pepper, seeded and cut into chunks
¼ cup oil for deep frying

Steps:

  • Place the sliced steak in a large bowl. Sprinkle the cornstarch over the beef slices and mix to coat. Whisk the soy sauce and sugar together in a small bowl until the sugar dissolves; pour over the beef slices. Mix and marinate in the refrigerator for at least 2 hours or overnight.
  • Heat 3 tablespoons olive oil in a large skillet over medium heat; cook and stir the onion and garlic in the hot oil until tender, 5 to 7 minutes. Stir the oyster sauce into the onion and garlic; season with salt and pepper. Add the snow peas, green peas, carrot, celery, and red bell pepper; cook and stir until the vegetables are slightly tender, yet still crisp, 7 to 10 minutes. Remove the skillet from the heat.
  • Heat 2 tablespoons oil in a separate skillet. Remove the beef from the marinade, shaking off any excess moisture; discard the marinade. Fry the beef slices in the hot oil to your desired degree of doneness, 3 to 5 minutes per side for medium. Add the cooked beef to the vegetable mixture and mix well. Serve hot.

BEEF WITH SNOW PEAS

Beef with Snow Peas image

This is not a Thanksgiving recipe. I repeat: This is not a Thanksgiving recipe.

Categories     main dish     meat

Time 20m

Yield 8 servings

Number Of Ingredients 12

1 1/2 lb. Flank Steak, Trimmed Of Fat And Sliced Very Thin Against The Grain
1/2 c. Low Sodium Soy Sauce
3 tbsp. Sherry Or Cooking Sherry
2 tbsp. Brown Sugar
2 tbsp. Cornstarch
1 tbsp. Minced Fresh Ginger
8 oz. weight Fresh Snow Peas, Ends Trimmed
5 whole Scallions, Cut Into Haf-inch Pieces On The Diagonal
Salt As Needed (use Sparingly)
3 tbsp. Peanut Or Olive Oil
Crushed Red Pepper, For Sprinkling
Jasmine Or Long Grain Rice, Cooked According To Package

Steps:

  • In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour half the liquid over the sliced meat in a bowl and toss with hands. Reserve the other half of the liquid. Set aside. Heat oil in a heavy skillet (iron is best) or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a separate plate. Set aside. Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the scallions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.) Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate. Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat, the rest of the marinade, and the snow peas. Stir over high heat for 30 seconds, then turn off heat. Check seasonings and add salt only if it needs it. Mixture will thicken as it sits.Serve immediately over rice. Sprinkle crushed red pepper over the top to give it some spice.

STIR-FRIED BEEF AND SUGAR SNAP PEAS

Stir-Fried Beef and Sugar Snap Peas image

Here's a stir-fry far better than most take-out Chinese, and you can make it with any lean cut of meat - flank steak, London broil, tenderloin, sirloin or skirt steak - so long as it is cut thin against the grain. Most takeout joints use snow peas, but sugar snaps are juicier and more succulent, and just as crunchy. (Their downside is that they are slightly more work: they need to be thinly sliced.) As for the sauce, it's simple: thick dark soy sauce (tamari works well), sesame oil, chicken broth and Madeira.

Categories     dinner, easy, quick, weekday, weeknight, one pot, main course

Time 30m

Yield 4 servings

Number Of Ingredients 16

1 pound lean beef, cut into 1/4-inch strips
3 tablespoons tamari or dark soy sauce
2 teaspoons toasted sesame oil, more for drizzling
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 pound sugar snap peas, trimmed
3 fat scallions
2/3 cup chicken broth
2 1/2 tablespoons Madeira or sweet sherry
1 tablespoon cornstarch
3 tablespoons peanut or olive oil
4 garlic cloves, minced
Rice, for serving
2 tablespoons toasted sesame seeds (optional)
Sriracha or other hot sauce, or rice wine vinegar for garnish
chili oil, for garnish

Steps:

  • In a medium bowl, mix beef, 2 tablespoons tamari, sesame oil, salt and pepper. Set aside.
  • Thinly slice sugar snap peas crosswise into disks. Thinly slice scallions, reserving dark green parts for garnish.
  • In a small bowl, mix chicken broth, Madeira, 2 tablespoons water, remaining 1 tablespoon tamari and cornstarch.
  • Heat a large skillet over high heat. Add 2 tablespoons oil. When pan is hot, stir-fry beef until browned, about 2 minutes. Transfer beef and any liquid to a plate.
  • Add remaining tablespoon oil to skillet and when hot, add garlic and white and light green scallion parts until lightly browned, about 1 minute. Add sugar snap peas and chicken broth mixture, lower heat to medium and cover. Let cook for 2 minutes. Transfer beef and juices to skillet and stir-fry 2 minutes. Serve over rice, garnished with more sesame oil, sesame seeds, dark parts of scallions, and hot sauce or vinegar and chili oil.

BEEF, BROCCOLI, AND SNOW PEA STIR FRY

Beef, Broccoli, and Snow Pea Stir Fry image

This quick and flavorful stir fry is perfect for a weeknight meal! Thinly sliced beef, broccoli florets, and snow peas are cooked in delicious Asian flavors and aromatics.

Provided by Joanne Ozug

Categories     Main Course

Time 20m

Number Of Ingredients 10

1/2 lb petite sirloin steak
1 tbsp cornstarch
1 tbsp soy sauce
1/2 tsp grated ginger
2 tsp sesame oil
1 head broccoli
1/2 lb snow peas
1 tbsp vegetable oil
1 clove garlic (minced)
1/2 tsp red pepper flakes

Steps:

  • Thinly slice the sirloin steak (and if you are having trouble slicing it thinly, pop it into the freezer for 15 minutes, then slice). Toss the beef with the cornstarch, soy sauce, ginger, and sesame oil, and let it sit while you prep the veggies.
  • Cut the broccoli head into evenly sized florets.
  • Wash the broccoli and snow peas, and make sure you dry them very thoroughly either in a salad spinner or with a towel. If there's excess water, you will end up steaming your stir fry and it will likely be mushy.
  • Heat up a wok or skillet over medium high heat, and test it for heat by adding a few drops of water. If they sizzle and burn up immediately, the pan is hot enough.
  • Add the marinated beef. Toss frequently for a couple minutes until the beef slices are cooked, then remove the beef to a big bowl.
  • Add the vegetable oil to the pan, and toss in the garlic and red pepper flakes. Immediately add the broccoli and cook, stirring frequently, for 2-3 minutes until the broccoli is bright green, and still crisp, but slightly tender. Remove the broccoli to the same bowl that contains the beef.
  • Add the snow peas to the pan and cook for 1-2 minutes, until slightly tender but mostly crisp, then add in the reserved cooked beef and broccoli and stir it all together for 1 minute. The stir fry is now ready! Enjoy with rice or noodles if desired.
