Cauliflower Rice Stir-Fry image

This healthy alternative to fried rice is made with frozen cauliflower rice. Cracking an egg into it while it cooks increases protein and we like it. You can also add shrimp, pork or chicken. This recipe looks like a lot but our family of 3 can finish it.

2 tablespoons sesame oil
1 teaspoon minced garlic
1 teaspoon grated fresh ginger
2 (12 ounce) packages frozen riced cauliflower medley
4 tablespoons soy sauce
2 eggs, lightly beaten

Steps:

  • Heat sesame oil in a large nonstick skillet over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute. Add riced cauliflower medley and cook, stirring frequently, until vegetables are tender-crisp, about 5 minutes. Stir in soy sauce and cook for 1 minute.
  • Move cauliflower mixture to one side of the skillet and pour eggs into the other side. Cook and stir until eggs are scrambled, about 3 minutes. Mix eggs and cauliflower mixture together and cook until heated through, about 1 minute.

I just whipped this up one day when I felt like a stir-fry but did not have all the ingredients called for in some of the stir-fry recipes on this site. I used certain veggies I had on hand, but any seasonal veggies may be used. It has a mild ginger flavor that can be enhanced according to taste, and is filling yet light on the tummy! Tofu may be added. Serve over a bed of steamed jasmine rice.

1 tablespoon cornstarch
1 ½ cloves garlic, crushed
2 teaspoons chopped fresh ginger root, divided
¼ cup vegetable oil, divided
1 small head broccoli, cut into florets
½ cup snow peas
¾ cup julienned carrots
½ cup halved green beans
2 tablespoons soy sauce
2 ½ tablespoons water
¼ cup chopped onion
½ tablespoon salt

Steps:

  • In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in broccoli, snow peas, carrots, and green beans, tossing to lightly coat.
  • Heat remaining 2 tablespoons oil in a large skillet or wok over medium heat. Cook vegetables in oil for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce and water. Mix in onion, salt, and remaining 1 teaspoon ginger. Cook until vegetables are tender but still crisp.

Pan-Roasted Spiced Cauliflower With Peas image

This dish is inspired by a trip to Curry Hill, a neighborhood in New York dotted with stores selling saris, Indian restaurants, Pakistani cafes and hole-in-the-wall spice shops. When I got home from my shopping spree, a cauliflower was screaming for Indian spices, garlic and ginger. Better still, I knew I could knock together a pan-roasted meal in about 20 minutes.

3 tablespoons ghee, clarified butter or vegetable oil
1 small cauliflower about 1 1/2 pounds, cored, in 1/2-inch slices
Kosher salt and black pepper
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
2 teaspoons grated fresh turmeric or 1 teaspoon ground turmeric
2 to 3 makrut lime leaves (optional)
1 (1-inch) piece of ginger, peeled and slivered or finely grated
3 garlic cloves, finely chopped
2 serrano chiles, finely chopped, or to taste
1 pound fresh English peas, shucked about 1 cup or frozen peas, or 1/2 pound snow peas or sugar snap peas, trimmed
2 to 3 scallions, slivered
Cilantro sprigs, for garnish
Lime wedges, for serving

Steps:

  • Heat a large sauté pan or cast-iron skillet over medium-high. Add the ghee or oil, and when it is hot, add the cauliflower. Stir until the cauliflower begins to color, 1 to 2 minutes. Season with salt and pepper. Continue stirring until the cauliflower is half-cooked, about 5 minutes, lowering the heat if necessary to keep it from browning too quickly.
  • Add the cumin, mustard seeds, turmeric and makrut lime leaves, if using. When they begin to sizzle, add the ginger, garlic and chilies. Stir well and add the peas, along with a sprinkle of salt. Cover to let the peas steam until tender, 2 to 4 minutes. Sprinkle with the slivered scallions and cilantro. Serve with lime wedges.

This vegan dinner comes together super fast but is also very hearty. Toasting the peanuts in oil not only flavors the oil, it makes the nuts extra toasty and crisp. Broiling the cauliflower before adding to the skillet cooks out some of the water in the vegetable so the stir-fry stays nice and crisp-tender.

1 cup jasmine rice
1 head cauliflower, cut into florets
3 tablespoons vegetable oil
Kosher salt and freshly ground pepper
1/4 cup salted roasted peanuts
1 cup snow peas (about 4 ounces), trimmed
1 yellow bell pepper, roughly chopped
2 tablespoons chopped peeled fresh ginger
3 scallions (white parts sliced, green parts cut into 2-inch pieces)
1/3 cup sweet Thai chili sauce
1 1/2 teaspoons low-sodium soy sauce
1/4 cup fresh cilantro

Steps:

  • Preheat the broiler. Cook the rice as the label directs. Meanwhile, toss the cauliflower with 2 tablespoons vegetable oil and a generous pinch each of salt and pepper; spread on a rimmed baking sheet. Broil, stirring occasionally, until lightly charred and tender, about 10 minutes.
  • Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the peanuts and cook, stirring, until lightly toasted, about 1 minute. Remove to a small bowl with a slotted spoon and season with salt and pepper.
  • Add the snow peas, bell pepper and ginger to the skillet. Cook, stirring occasionally, until crisp-tender, 1 to 2 minutes. Add the scallions (white and green parts) and cauliflower; toss. Add the chili sauce and soy sauce and continue to cook, stirring often, until the vegetables are glazed, about 2 minutes.
  • Fluff the rice with a fork; top each serving with the stir-fry, toasted peanuts and cilantro.

Spicy Cauliflower Stir-Fry image

1 head cauliflower
2 teaspoons vegetable oil
2 cloves garlic, minced
2 tablespoons soy sauce
Juice of 1 lime (or a splash of rice wine vinegar)
2 green onions, sliced
1 tablespoon sriracha or other hot sauce, plus more if needed
Lime wedges, for serving

Steps:

  • Break up the cauliflower into large florets, then use your hands to break into very small florets.
  • Heat a large, heavy skillet over medium-high to high heat. Add the oil, then the cauliflower and garlic. Stir the cauliflower around in the pan, allowing it to get very brown in some parts. Cook for 3 minutes, then turn the heat to low.
  • Add the soy sauce, lime juice and most of the green onions, reserving the rest for serving. Stir and allow to cook for 1 minute, then add the sriracha and stir until incorporated. Add a little more sriracha if you want a deeper color and flavor.
  • Serve hot in a bowl. Sprinkle the remaining green onions on top and serve with lime wedges.

1 medium cauliflower, broken into 1 1/2" florets
2 tablespoons soy sauce
1/4 teaspoon sugar
2 tablespoons lite olive oil (or other oil)
1 tablespoon ginger, peeled,minced
1 1/2 teaspoons garlic, minced
2 scallions, minced
1/4 cup chicken or 1/4 cup vegetable stock
2 tablespoons oyster sauce
1 teaspoon cornstarch (optional)
2 tablespoons water (optional)

Steps:

  • Mix cauliflower with 1 tbsp soy sauce & have the sugar stirred into the soy.
  • Turn wok or large skillet to high heat, add oil, and when it starts smoking add ginger and garlic for about 15 seconds Turn heat down a little bit but still high.
  • Add cauliflower and scallions, stir and cook for about 2 minutes.
  • Add stock, water, oyster sauce and remaining soy sauce Cook for 1 minute.
  • If you like a thicker sauce add corn starch stir and cook for no more than 1 minute.

1 head cauliflower
salt
2 tablespoons peanut oil
2 teaspoons minced garlic

Steps:

  • Bring a large pot of water to boil.
  • Cut off and discard cauliflower leaves and cut out the core; cut the cauliflower into florets.
  • Add 1 tablespoon of salt to boiling water; bring back to a boil and add the cauliflower; stir gently as water comes back to a boil, boil for about 1 minute, or till cauliflower is tender but still firm; drain and set aside.
  • heat a large wok over high heat; add the oil and swirl to coat; add the garlic and stir-fry until it starts to turn golden, 15-20 seconds; add the cauliflower and stir-fry for 30 seconds to 1 minute; press it against the side of the wok to sear it but don't mash it.
  • Add 1/2 teaspoon of salt, stir-fry briefly and serve.

1/2 lb flank steak, cut in strips 1/8 inch thick, 1 1/2 inches long, and 3/4 inch wide
1/2 teaspoon salt
1 1/2 teaspoons cornstarch
4 tablespoons peanut oil
1/2 head cauliflower, separated into flowerets
1/2 carrot, sliced thin
water
1/4 cup frozen peas
1 tablespoon sherry wine
2 tablespoons light soy sauce
1/4 cup chicken stock
1/2 teaspoon sugar
1 teaspoon cornstarch

Steps:

  • Combine beef with 1/2 tsp of salt, cornstach, and 1 T. of the oil.
  • Mix well with your hands.
  • Cook cauliflower and carrot in boiling water for 8 minutes; drain well.
  • Plunge peas into boiling water for 5 seconds: rinse with cold water and drain.
  • Heat 2 T. of oil over medium-high heat in wok; Stir-fry beef 1 minute: Add sherry and cook 1 minute.
  • Remove and set aside.
  • Combine sauce ingredients in a bowl.
  • Heat 1 T. oil to medium-high heat in wok.
  • Stir-fry carrots, cauliflower and peas for 1 minute, adding the peas last.
  • Add beef.
  • Quickly pour in sauce mixture.
  • Stir-fry 2 minutes.
  • Serve immediately, over steamed rice.
