Easy Classic Chinese Beef Stir Fry image

Made with a classic Chinese stir fry sauce, this is a great recipe to use up whatever leftover greens you have in the fridge! Instead of making this Sauce, you can use my All Purpose Stir Fry Sauce (see Note 1) If using economical beef, consider tenderising it the Chinese way ("velveting", simple, highly effective, see Note 5!)

3 tsp cornstarch / corn flour*
2 tbsp + 1/3 cup water (, separated)
2 tbsp soy sauce ((Note 2)*)
1 tbsp oyster sauce*
2 tbsp Chinese cooking wine OR Mirin ((Note 3)*)
1 tsp white sugar*
1/2 tsp sesame oil ((optional)*)
Dash of black pepper*
2 tbsp peanut oil
1 garlic clove (, crushed)
7 oz / 200 g beef (, good quality, thinly sliced (Note 4))
1/2 small onion (, sliced (yellow, brown or white))
1/2 red bell pepper / capsicum (, sliced)
1 small carrot (, halved lengthwise and sliced thinly on the diagonal)
3 baby pak choy / bok choy (, quartered lengthwise)
2 stems scallion / shallots (, cut into 1.5"/3cm pieces)
Steamed white rice
Sesame seeds ((optional))
Fresh cilantro / coriander ((optional))

Steps:

  • Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
  • Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
  • Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
  • Add 1/3 cup water into the remaining Sauce. Set aside.
  • Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
  • Add onion and cook for 1 minute.
  • Add the beef and cook until it changes colour from red to light brown but not cooked through.
  • Add bell pepper and carrots and stir fry for 30 seconds.
  • Add Sauce and cook for 30 seconds.
  • Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
  • Remove from heat immediately.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.

3 tbsp honey
1 1/2 tbsp Oyster sauce ((sub Hoisin))
1 1/2 tbsp Chinese cooking wine (, Mirin or dry sherry (Note 2))
2 tbsp water
1 tsp coarsely crushed black pepper ((or 1/2 tsp normal ground black pepper))
2 tbsp peanut oil ((or vegetable or canola oil))
1 garlic clove (, finely minced)
1/2 onion (, peeled and sliced)
500g/1 lb thinly sliced tenderloin, flank, sirloin/Porterhouse/strip, (or any other cut of steak suitable for stir frying (Notes 3))

Steps:

  • Mix the Sauce ingredients in a bowl.
  • Heat the oil in a wok or large heavy based skillet over high heat until it is smoking.
  • Add the onion and garlic and cook for 1 minute or until the onion becomes translucent. Keep it moving so the garlic doesn't burn.
  • Add the beef and stir fry for 1 minute until just cooked to your liking, then remove into bowl.
  • Turn the heat down to medium high, pour in Sauce - it will start simmering very quickly! Let it cook for 1 minute or so until it becomes syrupy - the bubbles will be larger and caramel colour.
  • Add the beef and onion back into the wok, along with any juices pooled on the plate. Toss in the sauce until just warmed through - 1 minute at most. Don't overcook the beef - that would be tragic!
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice!

4 cups water

2 teaspoons white sugar

Steps:

  • Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 45 to 50 minutes.
  • Combine cornstarch, sugar, soy sauce, and wine in a small bowl until smooth. Stir in ginger; toss beef in sauce to coat.

200 g beef steak ( ,cut into small strips)
1.5 tbsp. oyster sauce
1/2 tbsp. light soy sauce
1/4 tsp. ground pepper
1/4 tsp. sugar
1/2 tbsp. Chinese cooking wine ( ,Shaoxing wine)
2 tsp. corn starch
1 tsp. sesame oil
vegetable cooking oil ( ,as needed)
2 garlic cloves
2 fresh green peppers ( ,remove the seeds and finely shredded)
1/4 red onion ( ,shredded)
1/2 tsp. freshly ground black pepper

Steps:

  • Cut the beef steak into 1cm wide strips. Marinate with all the marinating seasonings including soy sauce, oyster sauce, pepper, sugar, Chinese cooking wine and cornstarch for 15 minutes. Mix in sesame oil just before start frying.
  • Add cooking oil in a large pan until the oil can evenly cover the bottom of the pan. spread the beef strips in. Let them stay for around 5 to 6 seconds and gently stir them several times until the beef strips change color. Transfer the beef out and leave around 1 tablespoon of the oil in.
  • Fry garlic until aromatic. Fry green peppers and red onion until slightly soft (do not kill them). Add a small pinch of salt. Return beef strips back. Mix well. Spread freshly ground black pepper.
  • Serve hot with noodles or steamed rice.

12 ounces flank steak ((sliced into thin strips))
¼ teaspoon baking soda ((optional tenderizer))
2 teaspoons soy sauce
½ teaspoon sesame oil
1 tablespoon cornstarch
1 teaspoon vegetable oil
2 tablespoons oil
3 cloves garlic ((sliced))
8 long hot green peppers ((de-seeded and julienned into 3-inch/8cm strips))
1 long hot red pepper ((de-seeded and julienned into 3-inch/8cm strips))
1 tablespoon Shaoxing wine
½ teaspoon salt
½ teaspoon sugar
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1/8 teaspoon white pepper
¼ cup chicken stock ((optional))

Steps:

  • Add all the marinade ingredients to the beef in a bowl, mix well, and set aside for 30 minutes at room temperature.
  • When you're ready to cook, place a wok over high heat until it's almost smoking, then add the oil. Sear the beef until it's just browned but still a little rare. Turn off the heat while you transfer the beef to a separate bowl. Leave any oil/fat in the wok.
  • Heat the wok back up over medium-high heat and add the garlic and peppers. Stir-fry for 20 seconds, then spread the Shaoxing wine around the wok to de-glaze it.
  • Stir-fry for another 20 seconds and add the beef back to the wok along with any juices from the bowl. Add salt, sugar, light soy sauce, dark soy sauce, and white pepper. Turn the heat back up to high and stir-fry for another 1 to 2 minutes, or until the peppers turn darker.
  • If you like more sauce, add the chicken stock to further de-glaze the wok and reduce the liquid slightly. The cornstarch from the marinade will help thicken the sauce. Plate and serve immediately with rice.

1 tbsp dry sherry
2 tsp sesame oil
1 fat garlic clove , crushed
1 tsp finely chopped fresh root ginger (or fresh ginger paste in a jar)
200g lean sirloin steak , thinly sliced across the grain
1 tbsp sesame seeds
1 tbsp sunflower oil
1 large carrot , cut into matchsticks
100g mangetout , halved lengthways
140g mushrooms , sliced
3 tbsp hoisin sauce
Chinese noodles , to serve

Steps:

  • Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
  • Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
  • When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
  • Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
  • Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

Steps:

  • Prepare the beef:
  • In a small bowl stir together the soy sauce, the sugar, and the salt, add the beef, and let it marinate for 20 minutes.
  • Make the sauce while the beef is marinating:
  • In a small bowl dissolve the cornstarch in the soy sauce and stir in the Sherry, the broth, the sugar, and the sesame oil.
  • Heat a wok or large heavy skillet over high heat until it is hot, add 2 tablespoons of the vegetable oil, and heat it until it just begins to smoke. Stir-fry the beef in the oil in batches for 1 minute, or until it is no longer pink, and transfer it as it is cooked with a slotted spoon to a plate. Add the remaining 1 tablespoon vegetable oil to the wok, heat it until it is hot but not smoking, and in the oil stir-fry the gingerroot, the garlic, and the chili for 30 seconds, or until the mixture is fragrant. Add the broccoli and stir-fry the mixture for 1 minute. Add 1/3 cup water and steam the broccoli, covered, for 1 1/2 to 2 minutes, or until it is crisp-tender. Stir the sauce, add it to the wok with the beef and any juices that have accumulated on the plate, and cook the mixture, stirring, for 2 minutes, or until the sauce is thickened and the beef is heated through. Transfer the mixture to a heated platter and serve it with the rice.

4 cloves garlic, chopped
2 teaspoons medium sherry (optional)
1 1/2 tablespoons cornstarch
1/4 cup lite olive oil (or other oil)
3/4 lb broccoli, cut into small flowerettes
1/4 cup chicken stock
4 green onions, cut into 1" lengths
1 1/2 cups small mushrooms, sliced
2 tablespoons soy sauce (or a bit more)

Steps:

  • Slice the steak very thinly, the easiest way to do this is to have it half frozen when you slice it.
  • Put sliced steak in a bowl with the sherry, soy sauce and the cornstarch, and a little salt, let it rest for 20 minutes.
  • Put 2 tbsp oil in a skillet.
  • Add garlic, stir fry for 1-2 minutes.
  • add mushrooms stir fry 2 minutes.
  • Remove and keep warm.
  • put 2 tbsp of oil in the skillet and stir fry the beef until nicely browned, remove and keep warm.
  • Add 1 tbsp oil and stir fry the green onions for 1 min, remove and keep warm.
  • Pour in the chicken stock, heat to bubbling add Broccoli cover and steam for 3- 4 minutes.
  • remove lid and put all the ingredient together.
  • Heat through but do not over cook.
  • Serve over rice or noodles.

This Asian-flavored recipe is adapted from a mailing I got from The Splendid Table, a recipe program on National Public Radio. The original used walnuts rather than pecans and dry sherry rather than mirin. I actually marinated the beef in the soy sauce-mirin mixture a couple hours before cooking. Be sure to use TOASTED sesame oil--it is used for its taste and regular sesame oil is just not the same.

2 teaspoons mirin

1/4 cup pecans, coarsely chopped

  • Combine the garlic sauce ingredients in a jar; set aside.
  • Toss the beef with the soy sauce and mirin in a medium bowl.
  • Combine the garlic through red pepper flakes and 1½ tsp oil in a small bowl.
  • Toast the pecans over medium-high heat 2-3 minutes until aromatic; transfer to a bowl and set aside.
  • Heat 2 tsps oil in a skillet or wok; add beef w/ soy sauce marinade & sauté, stirring, 2-3 minutes until well browned; remove beef from the skillet.
  • Heat 1½ tsps more oil in the skillet, add the broccoli with ½ cup water, cover and cook 1-2 minutes until broccoli turns bright green.
  • Uncover and stir-fry 2-4 minutes until the liquid evaporates and broccoli is crisp-tender.
  • Push aside the broccoli, add the garlic and ginger to the pan and cook 45 seconds, mashing with back of spoon to release fragrance.
  • Stir together the broccoli and garlic, add the beef and toss to combine.
  • Shake garlic sauce in its jar and add to the skillet.
  • Remove the pan from the heat and toss to coat the beef and broccoli.
  • Sprinkle with toasted pecans.
  • Serve hot over rice.

1 tablespoon cornstarch
1 tablespoon minced gingerroot
1 teaspoon sesame oil
2 garlic cloves, minced

1 lb grilling top sirloin steak
3 cups garlic scapes, 1 inch pieces
1 small hot red pepper
2 tablespoons vegetable oil
1/4 teaspoon salt
1/4 cup beef stock

Steps:

  • Whisk first 6 ingredients together in a bowl.
  • Slice beef across the grain into thin strips, add to bowl& toss to coat; let stand for 15 minutes.
  • Cook garlic scapes in a pot of boiling salted water until tender-crisp, about 2 minutes; drain& refresh under cold water.

  • Heat 1 tbsp of the oil in a wok or deep skillet over high heat.

1 onion, halved and thinly sliced
2 garlic cloves, crushed
600 g steak fillets, cut thinly 2 . 5cm strips
2/3 cup beef stock
3/4 teaspoon cornflour
1 1/2 teaspoons cracked black pepper
1 tablespoon soy sauce
1 tablespoon hoisin sauce
steamed rice, to serve

Steps:

  • Heat wok over medium high heat until hot.
  • Add 3tsp oil.
  • Swirl to coat.
  • Add onion and garlic. Stir-fry 1-2 minutes. Transfer to bowl.
  • Increase heat to high, Add 3 tsp oil and half the beef. Stir fry for 3 minutes. Remove from wok to plate. Repeat with remaining beef.
  • Blend together 1 tablespoon stock and cornflour. Combine mixture with remaining stock, pepper, soy and hoisin sauce. Pour into wok.
  • Cook stirring for 3 minutes until sauce comes to the boil.
  • Return beef and onion mixture to wok.

This stir fry is delicious with tender strips of beef, sweet fresh veggies and a spicy beef sauce. I like to marinate my stir fry meat before cooking to add an extra layer of flavor. I like to use Dale's Liquid Steak Seasoning, but it can be difficult to find. If you can't find this product, substitute 1 1/2 tbs. soy sauce plus 1 tbs. Worcestershire Sauce. It's not the same but close enough. The heat level of this dish is just right for me, but you may adjust the amount of cayenne pepper per your taste.

Steps:

  • In a small mixing bowl, dissolve beef bouillon cube in boiling water. Set aside to cool.
  • Place beef and steak seasoning in a plastic resealable bag. Seal bag, releasing as much air as possible, and toss/squeeze with hands until well coated. Marinate for 30 minutes at room temperature.
  • Once beef bouillon mixture has cooled, whisk in soy sauce, garlic powder, ginger, cayenne pepper and cornstarch. Set aside.
  • In a wok, heat 1 tbs. oil until glistening. Brown beef strips on both sides, leaving a slight tinge of pink in the middle. Remove to another dish, cover and set aside.
  • Add remaining 1 tbs. oil to wok. Add vegetables and black pepper and cook until crisp-tender. Once vegetables are cooked, return beef to wok and toss to combine.
  • Make a well in the center of the wok and add sauce mixture, stirring constantly until slightly thickened. Then toss all together.
  • Serve immediately over rice.

5 ounces mushrooms (sliced (about 3 cups))

1 red pepper (chopped)
5 ounces snap peas (about 2 cups)
1 cup beef broth
2 tablespoons tapioca starch or cornstarch
¼ cup soy sauce (can use coco aminos)
2 tablespoons honey
1 tablespoon sesame oil
2 tablespoons minced ginger
3 cloves garlic (minced)

Steps:

  • Add the beef to a large skillet over medium-high heat. Cook the meat, stirring it to break up the pieces occasionally, until it is mostly brown, about 5 minutes.
  • While the beef cooks, chop the veggies and make the sauce. Add the tapioca or cornstarch to a measuring cup or bowl. Add a splash of the beef broth and mix. Add the rest of the broth and remaining sauce ingredients and mix again.
  • When the beef is mostly cooked, add the mushroom and cook them for 5 minutes. If there is more than 1 tablespoon of the oil in the pan remove it by tilting the pan to the side and using a spoon to scoop it out. If there is less, add a splash of oil.
  • Add the remaining veggies to the pan and cook for 5-6 minutes, or until they are crisp-tender.
  • Stir the sauce to mix up the starch then pour it into the pan. Once the sauce has thickened (1-2 minutes) serve the stir fry over rice or cauliflower rice.

Steps:

  • Mix the cornstarch with the beaten egg until the cornstarch is fully dissolved. Add the cut chicken breast pieces to the bowl of marinade and stir to coat. Cover with plastic cling film wrap and place in the refrigerator to marinate for at least 30 minutes.
  • Heat a large skillet, frying pan, wok or Dutch oven with the coconut oil to medium high heat. Shake the excess off the marinated chicken pieces and fry until golden brown and keep frying until the internal temperature of the chicken pieces reaches 165 degrees F (75 degrees C).
  • Transfer cooked pieces to a paper towel lined plate. Fry in batches, if needed, so that the chicken is not crowded in your pan. Set aside.

1/2 tbsp corn starch
1 tsp sesame oil
1 tsp minced or grated ginger
2 cloves garlic (minced)
1 tbsp Shaoxing wine or other rice wine (see notes)
2 tbsp vegetarian mushroom oyster sauce ( or vegetarian stir fry sauce)
2 tsp soy sauce
2 tsp dark soy sauce (optional for colour)
1 1/2 tsp freshly ground black pepper
1 tsp sugar (adjust depending on desired taste)
1/2 tbsp corn starch
3 tbsp room temperature water
Neutral oil
1 medium white onion (sliced)
1 red bell pepper (sliced)
1 green bell pepper (sliced)
6 cloves garlic (minced)
More vegetarian mushroom oyster sauce or soy sauce (to taste if needed)
More fresh ground black pepper (if desired)
Steamed rice
Sesame seeds (for topping)

Steps:

  • You can see the photos above to see a step-by-step on how this dish is cooked.
  • Rehydrating the soy/plant-based meat: Rehydrate the pieces by placing these in a heat proof bowl and soaking in boiling hot water until doubled or even tripled in size. You can also rehydrate the soy pieces overnight. I simply place these in a container and add room temperature water to soak the chunks in.
  • Squeeze out the liquid from each piece. If your soy pieces are the type that are in larger pieces, you can break these apart into small pieces/strips.
  • Meanwhile, prepare the sauce by mixing everything together. Feel free to adjust to your taste.
  • Mix the rehydrated soy chunks/protein with the corn starch, sesame oil, grated ginger, Shaoxing wine (or broth). Coat the pieces well. Leave to sit for at least 10 minutes. You can prepare this beforehand and just leave in the refrigerator until read to cook.
  • Stir-frying: Heat a large skillet or wok over medium high heat. Once hot, add in some oil. Stir-fry the onion and bell peppers over med high heat for 3-4 minutes until lightly browned and the bell peppers are tender. Move the onions to the side of the pan, then add in some more oil. Stir-fry the garlic until aromatic, around 1-2 minutes.
  • Mix everything together then add in the soy strips/plant-based meat.
  • Cook the pieces down for 1-2 minutes over med high heat. Give the sauce another good mix to make sure the start isn't sitting at the bottom. Pour in the sauce and then mix well to coat all of the pieces. Cook for 4-5 minutes or until the pieces have absorbed the sauce and the sauce has thickened. Lower the heat to medium if needed and keep an eye out and make sure to move the pieces around to make sure to nice and cooked, but be careful not to leave these to burn since the sauce has sugar that can easily burn.
  • Taste the pieces and feel free to season with more vegetarian mushroom oyster sauce or soy sauce, to taste if needed. You can also add more freshly ground black pepper, if you'd like.
  • Turn off the heat then serve your garlic black pepper "beef" with some steamed rice or noodles for a perfectly hearty meal.
