MY MOTHER'S CHICKEN PAPRIKASH
My mother used to make this every year on my birthday. Now I have grown up and added my own personal touches to make this a really hearty comforting dish. Serve it over egg noodles.

Steps:
- Sprinkle 1 teaspoon salt, garlic powder, and 1/4 teaspoon black pepper over chicken legs and thighs.
- Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Place chicken legs in the Dutch oven, skin-side-down. Sear until golden brown on both sides, about 10 minutes total. Transfer legs to a plate. Discard used oil.
- Pour 1 tablespoon olive oil into the hot Dutch oven. Add thighs, skin-side-down. Sear until golden brown on both sides, about 10 minutes total. Transfer thighs to a plate. Discard used oil.
- Reduce heat to medium-low and add remaining 1 tablespoon olive oil to the hot Dutch oven. Add bacon; cook until crispy, about 8 minutes. Drain bacon over paper towels on a plate.
- Increase heat to medium and add onion, green bell pepper, celery, and a pinch of salt to the hot Dutch oven. Cook until onion has released its moisture, about 5 minutes. Add minced garlic, paprika, and red pepper flakes. Cook, stirring often, to combine flavors, about 4 minutes more.
- Return chicken legs and thighs to the Dutch oven. Pour in chicken stock to only partially cover chicken so that skin remains crispy. Scrape up the bottom of the pot. Bring to a boil, cover, and reduce heat. Simmer until chicken is no longer pink at the bone and juices run clear, about 25 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove from heat and transfer chicken to a plate.
- Whisk sour cream and flour together in a bowl. Add 1 cup of hot chicken stock from the Dutch oven to the sour cream mixture to temper it. Whisk the mixture into the Dutch oven quickly so that the sauce does not clump. Add 1 teaspoon salt and 1/4 teaspoon black pepper.
- Return Dutch oven to medium-high heat and bring to a boil. Boil gently, uncovered, until sauce is thickened slightly, about 5 minutes. Return chicken parts and bacon to the Dutch oven; stir gently to combine.

MOM'S CASSEROLE
This recipe is easy to make and feeds a crowd. Great to freeze also! This can be made more low-calorie by using ground turkey, fat free sour cream and low-calorie cream cheese. Serve with garlic bread and salad, if desired.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a large skillet over medium heat, cook hamburger, onion and garlic; add tomato sauce and simmer for a few minutes.
- In a small bowl, combine cream cheese, sour cream and green onions; mix well.
- Preheat oven to 350 degrees F (175 degrees C).
- In a lightly greased 9x13 inch baking dish, spread 1/4 cup of meat mixture on bottom. Layer with some egg noodles, cream cheese mixture and meat sauce. Repeat layers ending with meat sauce; top with Cheddar cheese.
- Bake in preheated oven for 30 to 45 minutes or until bubbly; serve.

MOM'S CHICKEN CASSEROLE
This casserole is not fancy or "gourmet" by any means, but I love the stuff. My mom got the recipe from a church cookbook, I think, and she makes it best. As with most recipes that call for cooked chicken, I buy a roasted chicken at the supermarket and use that. Easy! Prep time and servings are approximate.

MOTHER'S CHICKEN CASSEROLE
This is a combination of my Mother's chicken casserole and my Mother-In-Law's chicken casserole. I ran out of ingredients one day and decided to try it this way. My family LOVED it.

- 1. Boil chicken thighs until done, Drain chicken and set aside to cool.
- 2. Preheat oven to 350.
- 3. Boil egg noodles until tender.
- 4. Make stuffing using chicken broth instead of water. Once stuffing is done, set aside
- 5. Tear chicken into smaller pieces removing bone and fatty pieces.
- 6. Heat cream of chicken in medium sauce pan.
- 7. In large baking dish, mix chicken, noodles, cream of chicken, and stuffing.
- 8. Bake 50 minutes. Add American cheese and cook for additional 10 minutes or until cheese is melted.

- Preheat the oven to 350°F (177°C). Lightly grease a 9x13-inch casserole pan.
- Heat the oil in a skillet over medium-high heat. Add the onion and saute for 3 to 4 minutes, until slightly translucent.
- Add the garlic, turmeric, salt, pepper, ginger, and cumin, and stir for another 30 seconds. Then add the canned coconut milk and gently stir until there's no longer lumpy coconut milk bits. Transfer the mixture to the casserole pan.
- Add the water, rice, carrot, and lime juice to the casserole pan, and stir together.
- Nestle the chicken breasts on top of the rice mixture (I like to coat both sides of the chicken breast in the liquid for more flavor). Cover the pan with aluminum foil and bake for 45 to 50 minutes, until the rice is tender and the chicken is cooked through.
- Before serving, fluff the rice with a fork, season the chicken with additional salt and pepper, and sprinkle with cilantro.
