- In a small bowl, mix the first six ingredients. Remove 1/4 cup mixture to a large bowl; add beef and toss to coat. Marinate at room temperature 10 minutes., Cook spaghetti according to package directions. Meanwhile, in a large skillet, heat 1-1/2 teaspoons canola oil. Add half of the beef mixture; stir-fry 1-2 minutes or until no longer pink. Remove from pan. Repeat with an additional 1-1/2 teaspoons oil and remaining beef mixture., Stir-fry water chestnuts and green onions in remaining canola oil 30 seconds. Stir in spinach and remaining hoisin mixture; cook until spinach is wilted. Return beef to pan; heat through., Drain spaghetti; add to beef mixture and toss to combine. Sprinkle with chili pepper.

- In a 10-in. cast-iron or other ovenproof skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the spinach, mushrooms, garlic salt and basil. Cover and cook for 5 minutes. , In a saucepan, melt butter over medium heat. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in cheese. Pour over meat mixture; mix well. Reduce heat; cook, covered, until heated through. If desired, serve with biscuits.

Steps:
- Moisten bread with water; squeeze dry. Chop finely and set aside.
- Cook spinach in heavy large skillet over high heat and stir until wilted. Cool slightly; squeeze dry. Finely chop.
- In medium bowl, mix spinach, beef, bread, onion, eggs, salt, pepper and garlic.
- Shape into 14 patties (about 1/2 cup each).
- Dredge in flour, shaking off excess.
- Heat oil in heavy large skillet over medium-high heat.
- Add patties and fry until crisp on outside and cooked through.

- Squeeze the excess water out of the spinach and set aside. (You should have about 1 cup of prepped spinach.) Line a plate with paper towels.
- In a large bowl, beat together the eggs, garlic, 3/4 teaspoon salt and the red-pepper flakes. Fold in the peas and reserved spinach, being sure to break up the spinach to help it distribute evenly. Add the flour, cheese, herbs, lemon zest and baking powder, and fold to combine evenly.
- In a large nonstick skillet, heat 1/4 cup oil over medium-high. Add 4 (1/4-cup) scoops of the fritter mixture into the hot oil and press them down into 1/4-inch-thick patties. CAJUN PARSNIP FRITTERS ON BABY SPINACH

- Bring the parsnips to a boil in a pan of salted water, then simmer for 10 to 15 minutes. You want them to be tender, but not mushy at all.
- Drain the parsnips and allow them to cool until they are handleable. Cut them diagonally into 2" long x 1/2" or 1/4" thick slices.
- Place the flour in a large mixing bowl and make a well in the center. Place the egg yolk into the well and mix it in with a fork, gradually pulling in the flour from the edges of the bowl. Begin adding the milk slowly, mixing all the while. Add salt, pepper and cayenne to taste. Beat mixture with a whisk until it's a smooth batter.
- Wash and dry the spinach leaves, and place them in a bowl.
- Combine the olive and walnut (if using) oils, sherry vinegar, salt and pepper (to taste) in a dressing cruet with a secure top. Set aside.
- Just before serving time, whisk the egg white to soft peak stage. Fold a little bit of the yolk batter into the whites, then fold the egg white mixture into the yolk batter.
- Heat an inch or two of cooking oil in a deep-sided heavy skillet until is shimmers but isn't smoking (or set a deep fryer to manufacturer's recommended temp) .
- While oil is heating, shake the dressing vigorously to combine, then toss the spinach and dressing together. Arrange the dressed spinach on 4 salad plates, then scatter the chopped walnuts over them.
- Once oil is hot, dip the sliced parsnips into the batter a few at a time, then fry them until puffy and golden. Drain them in a paper towel lined bowl and keep them warm while you fry the rest of the parsnips. Arrange the hot parsnips over the dressed spinach and serve immediately.
