1 1/4 cups water
1 cup heavy whipping cream, well chilled
2 tablespoons granulated sugar
2 teaspoons vanilla bean paste
1 cup fresh raspberries
1 cup fresh blueberries
Powdered sugar

Steps:

  • Heat oven to 375°F. Place paper baking cup in each of 30 to 36 regular-size muffin cups.
  • In large bowl, beat cake mix and water with electric mixer on low speed 30 seconds; beat on medium speed 1 minute. Pour batter into muffin cups, filling each 3/4 full.
  • Bake 12 to 20 minutes or until cupcakes are golden brown and cracks on top feel dry. Remove from muffin cups to cooling rack. Cool.
  • In medium bowl, beat whipping cream with electric mixer on medium-high speed until slightly thickened. Reduce speed; beat in granulated sugar and vanilla bean paste. Increase speed; beat mixture until stiff peaks form. Spoon whipped cream into decorating bag fitted with large star tip.
  • Pipe whipped cream on top of cooled cupcakes; garnish with berries. Sprinkle tops with powdered sugar.

1 cup real butter
6 large eggs (at room temperature)
3 cups all-purpose flour (sifted (recommended brand))
1 cup whipping cream (NOT WHIPPED (also known as heavy cream))
1 tablespoon pure vanilla extract (I use this)

Steps:

  • *Recipe is correct as written, there is no baking soda or baking powder in it. This cake is leavened, traditionally, with eggs.
  • Preheat the oven to 325 degrees F.
  • Spray a 10-inch bundt or tube pan with non-stick spray or flour and grease pan, whichever you prefer. I recommend this tube pan or this bundt pan. *If you have a 2-piece, 10-inch tube pan, wrap aluminum foil around the outside of the pan to prevent any batter from leaking out.
  • In the bowl of your stand mixer, beat on medium butter until smooth. Add sugar and mix until smooth about 2 to 3 minutes on medium speed.
  • Add eggs, one at a time, beating well after each addition.
  • Add flour and heavy cream alternately to sugar mixture, beginning and ending with flour.
  • Add vanilla and mix on low to medium until well combined.
  • Pour batter into a prepared 10-inch tube or bundt pan.
  • Bake for 1 hour 15-25 minutes at 325 degrees F. Test for doneness with a wooden pick The cake will be done with no crumbs or dry crumbs remain on the pick.
  • Cool in the pan for 20 to 25 minutes before inverting onto a serving tray to cool completely.
  • Store in an airtight container on the countertop 3 to 4 days.

6 tablespoons fresh lemon juice
2 tablespoons grated lemon peel
4 cups halved hulled strawberries
2 1/2-pint containers fresh blackberries

  • Preheat oven to 325°F. Butter and flour two 9x5x2 3/4-inch metal loaf pans. Line pan bottoms with waxed paper. Sift flour, baking powder, and salt into medium bowl. Using electric mixer, beat 3 cups sugar, butter, and shortening in large bowl until well blended. Add eggs 1 at a time, beating to blend after each. Beat in dry ingredients in 3 additions alternately with milk in 2 additions. Beat in lemon juice and lemon peel. Divide batter between prepared pans.

1 package lemon Jello ((3 ounces))
2 cups boiling water

Optional lemon peel for garnish

  • Prepare lemon cake according to box directions adding in 1 tablespoon lemon zest to cake batter. Bake and cool completely.
  • In a mixer bowl, combine Jello, boiling water and powdered sugar. Stir until completely dissolved.

1 scant cup sugar
¼-1/2 tsp vanilla extract

½ cup heavy cream
Zest and juice of ½-1 lemon

Steps:

  • Preheat the oven to 350 F and line a 9x5 baking pan with parchment paper.
  • In a medium sized bowl, sift together the cake flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the butter and sugar (and oil, if using) for 4-5 minutes until the mixture has lightened up in color. Beat in the eggs, one at a time until the mixture is smooth and shiny, making sure to scrape down the sides of your bowl as necessary.
  • Add in the lemon zest and juice and the vanilla, then slowly drizzle in the heavy cream and mix until smooth and satiny.
