2 ounces cooking oil
1 medium onion, diced
1 stalk celery, diced
1 clove garlic, crushed
1 tablespoon curry powder
1/2 teaspoon fresh ginger, grated
1/2 teaspoon cardamom
1/8 teaspoon cinnamon
1 pinch ground nutmeg
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon red apple, diced
4 bananas, cut in 1 in cubes
2 cups chicken stock
36 jumbo shrimp, peeled
salt and pepper
1 ounce butter
1 ounce cooking oil

Steps:

  • In a heavy bottomed saucepan, heat the 2 oz cooking oil over medium low heat.
  • Add the onion, celery and garlic and saute without coloring for about three minutes.
  • Add all the spiced and saute white stirring for another minute.
  • Add the fruit and chicken stock and simmer over medium heat for 20 minutes.
  • Puree the sauce in a blender until it is liquid and then strain through a sieve.
  • Keep warm over low heat.
  • Sprinkle salt and pepper over the shrimp.
  • In a large skillet, melt the butter and oil over medium high heat.
  • Add the shrimp and saute, shaking the pan back and forth until the shrimp turn pink and are firm.
  • Don't over cook them.
  • Place 6 shrimp over each serving of rice or noodles.
  • Spoon some sauce over each dish.

Banana curry might sound a little strange, but it's delicious. Thick banana slices are sauteed with coconut oil until extra sweet and caramelized. They're cooked with your favorite curry spices, cauliflower, sweet potato, and chickpeas for a healthy and filling vegetarian curry.

2 tablespoons coconut oil (divided)
4 ripe bananas (cut into ½-inch pieces)
1 medium onion (chopped)
4 cloves garlic (chopped)
2 inch piece of ginger (chopped)
15 ounce can coconut milk
2 tablespoons curry powder
1 teaspoon sea salt
4 cups chopped cauliflower
1 medium sweet potato (chopped)
19 ounce can chickpeas
Cilantro (to serve)

Steps:

  • Heat 1 tablespoon of the coconut oil over medium-high heat in a large, nonstick pan. Add the bananas, cut sides facing down. Cook for 2-3 minutes, or until they are well browned. Flip them over and cook for another 2-3 minutes. Remove them from the pan.
  • Add the remaining tablespoon of coconut oil, the onion, garlic, and ginger to the pan. Cook until the onion is translucent, about 3 minutes.
  • Transfer the onion mix to your blender. Add ½ cup of the cooked bananas, the coconut milk, curry powder, and salt and blend on high speed until smooth.
  • Pour the sauce into a large pot over medium-high heat. Add the cauliflower, sweet potato, and chickpeas and bring the curry to a boil. Reduce the heat and simmer, uncovered, until the vegetables are tender, about 15 minutes. Stir the remaining caramelized bananas into the sauce then serve with cilantro sprinkled on top.

2 onions, diced
½ cup curry powder
1 ½ tablespoons ground cumin
4 teaspoons ground turmeric

1 ¼ teaspoons ground cinnamon
1 ½ teaspoons ground black pepper
4 teaspoons curry paste
8 cloves garlic, pressed
1 (10 ounce) can tomato sauce
⅔ cup plain yogurt
2 bananas, diced
3 tomatoes, chopped
¼ cup flaked coconut

Steps:

  • Heat the sunflower oil in a large saucepan over medium heat. Stir in the onions, and cook until the onions have softened and turned translucent, about 5 minutes. Sprinkle in the curry powder, cumin, turmeric, salt, sugar, ginger, chili powder, cinnamon, and black pepper. Cook and stir until fragrant, about 1 minute.
  • Stir in the curry paste and pressed garlic. Cook for about 1 minute. Pour in the tomato sauce and yogurt, and bring to a simmer. Stir in the diced banana, and simmer gently for 3 minutes. Mix in chopped tomatoes, and continuing to simmer 1 minute more. Stir in the coconut flakes just before serving.

From *The Essential Caribbean Cookbook* edited by Heather Thomas, I found this unique recipe intriguing but admit its combo of sweet & savory flavors gave it a bit of an "identity crisis" for me. Since it was in the *Vegetables* section of the cookbook, I decided its intent was to be a side-dish to a meat main-course of choice. I am not at all familiar w/vegetarian cooking & uncertain if it qualifies for it, but it also seems hearty enough to also be considered a vegetarian main-course as well. *Enjoy* !

4 tablespoons butter
2 onions (small & chopped)
1/2 cup golden raisin
1 apple (peeled, cored & diced)
1/2 teaspoon salt
4 tablespoons flour
2 teaspoons curry powder
1 1/4 cups coconut milk
1 1/4 cups water
4 green bananas (peeled & sliced diagonally)
4 eggs (hard-boiled & quartered)

Steps:

  • Melt butter in a lrg saucepan. Add onion & saute gently over low-heat till softened & translucent, but not carmelized.
  • Soak the raisins in a sml amt of hot water for 2-3 min to plump them. Drain & add to the onion mixture w/the apple & salt. Stir in the flour + curry powder & cook for 3-4 min, stirring.
  • Remove the saucepan from the heat & gradually stir in the coconut milk & water a little at a time. Return to the heat & cook gently, stirring till thickened.
  • Add bananas & continue cooking gently over low heat for about 6-7 minutes. Add the eggs to the curry, just to heat through. Serve immediately w/boiled rice & a sml dish of mango chutney.
  • *Note Re Servings* ~ I entered this recipe as a 6 serving side-dish per its intent, but it seems likely 4 servings would be more realistic if served as a main-course.

1 tablespoon butter
1 onion, peeled and finely chopped
1 large banana, peeled and thickly sliced
1 tablespoon curry powder
1/2 cup water
1 tablespoon apricot jam
1/2 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon salt
pepper, to taste

Steps:

  • In saucepan, melt butter over medium heat; cook onion for 3 minutes, or until softened but not browned. Push to side of pan.
  • Add banana slices to pan and cook for 1 minute. Add curry powder and cook for 1 minute, stirring banana and onion together.
  • Add water and bring to boil; reduce heat and simmer for 10 minutes or until thickened and liquid is reduced by half.
  • Remove from heat; stir in jam.
  • Transfer to food processor or blender; process until smooth.
  • Add sour cream, mayonnaise, salt, and pepper to taste; process just until combined.
  • (Can be covered and refrigerated for up to 1 day. Let stand at room temperature for 30 minutes before serving.).

I don't recall where I got this recipe. It is a favorite in my home plus I make it for my consumers (at work) with very ripe bananas and no sugar so it's okay for the diabetics. All the amounts are varied depending on what you have and what you want. Use green bananas for a more savory side dish. Or use greener bananas and more brown sugar for a sweet treat. Very ripe bananas don't need much cooking nor much brown sugar. This is good as a side dish, over ice cream, on pancakes, under whipped cream, with basmati rice, let your imagination wander....enjoy! You could even vary the size of banana pieces to suit your recipe.

1 tablespoon curry paste
3 bananas, thickly sliced
1/4 cup lime juice
1 onion, sliced
250 g chicken breasts, sliced into strips
250 g green beans, sliced
1 medium eggplant, chopped
1/2 cup water
1 teaspoon chicken stock powder
2 tablespoons basil, shredded
2 cups cooked basmati rice
1/2 cup light coconut cream

Steps:

  • Heat vegetable stock in pan, add half the curry paste and half of the bananas.
  • Toss until coated and remove from the pan, pour over the lime juice.
  • Add remaining curry paste and onions into the pan. Cook until onions are soft. Add the chicken and cook until golden brown. Stir in the vegetables, water and stock powder.
  • Add coconut cream and simmer until just thickened.
  • Add banana mixture. Mix through the remaining bananas and allow to heat through.
  • Sprinkle with the basil and serve with rice.

2 large bananas, cut into pieces
2 tablespoons curry powder
2 teaspoons ground coriander
1 teaspoon dry mustard
3 tablespoons butter
1 lime, zest of, grated
4 teaspoons lime juice
1 1/4 teaspoons salt
1/2 teaspoon fresh ground black pepper
3/4 cup water, more if needed
4 bone-in skinless chicken breasts (about 2 1/4 pounds in all)
1 tablespoon chopped fresh parsley

Steps:

  • Heat the oven to 450°. In a food processor or blender, puree the bananas, curry powder, coriander, dry mustard, butter, lime zest, lime juice, salt, pepper, and 1/4 cup of the water.
  • Make a few deep cuts in each chicken breast and put the breasts in a roasting pan. Pour the curry sauce over the chicken, making sure the sauce gets into the cuts. Roast in the bottom third of the oven until the chicken is just done, about 20 minutes.
  • Remove the roasting pan from the oven and remove the chicken breasts from the pan. There should be plenty of thick sauce in the bottom of the pan. Set the pan over moderate heat and whisk in the remaining 1/2 cup water. Continue to whisk until the sauce is heated through, adding more water if you want a thinner sauce. Serve the chicken breasts with the sauce over them. Sprinkle with parsley if you like.
  • Serve with steamed rice.
