1 pound Italian sausage
2 onions, chopped
1 (28 ounce) can whole peeled tomatoes with juice
6 cups chicken broth
2 teaspoons dried basil
2 cups bow tie pasta
½ teaspoon garlic salt
1 cup chopped celery
1 cup chopped carrots
1 ½ cups shredded cabbage

Steps:

  • In a soup pot, cook sausage over medium heat until no pink remains.
  • Add onions, celery, and carrots. Cook uncovered for 5 minutes, or until onions are soft.
  • Add tomatoes, chicken broth, cabbage, and basil. Bring to a boil. Stir in macaroni, and cover. Simmer for 10 minutes, or until pasta is tender. Season with garlic salt. Serve.

12 ounces linguica sausage or 12 ounces chorizzo sausage
hot water
1/2 lb spinach
2 tablespoons butter or 2 tablespoons margarine
1 medium onion, chopped
1 (10 3/4 ounce) can condensed cream of potato soup
2 beef bouillon cubes

Steps:

  • Place sausage in a 2 1/2 qt microwave safe dish add about 1/2 inch of hot water cover and microwave for 2 1/2 minutes turn sausage and cook an additional 2 1/2 minutes.
  • Lift sausage out and thinly slice set aside and wipe out microwave dish.
  • While the sausage is cooking remove and discard spinach stems, wash and coarsely chop spinach set aside ; and dissolve bouillon in 2 cups hot water set aside.
  • Melt butter in dish for 30 seconds.
  • Stir in onion and cook in microwave 4 minutes stirring occasional; stir in potato soup.
  • Then mix everything else together all in the same dish of course.
  • Cover and cook about 4 minutes stirring once or twice until soup in hot through.

2 cartons (32 ounces each) chicken broth
1 pound bulk hot or mild Italian sausage
1 package (9 ounces) refrigerated cheese tortellini
1 can (14-1/2 ounces) fire-roasted or Italian diced tomatoes
1 teaspoon Italian seasoning
3 cups fresh spinach, thinly sliced

Steps:

  • In a 6-qt. stockpot, bring broth to a boil. Carefully drop sausage by heaping teaspoonfuls into boiling broth. Add tortellini, tomatoes and Italian seasoning; return to a boil., Reduce heat; simmer, uncovered, 8-10 minutes or until sausage is cooked through and pasta is tender. Stir in spinach until wilted. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

3 tablespoons butter or 3 tablespoons margarine
1 cup white onion, chopped
1/2 cup green onion, chopped
1/2 cup celery, chopped
6 -8 hot Italian sausage, sliced (I prefer Lilydale, hot italian turkey or beef sausage)
1/4 cup all-purpose flour
1 tablespoon dried parsley
1 teaspoon dried basil
1 teaspoon salt & pepper
3 cups low sodium chicken broth
6 baking potatoes, peeled and diced
1 1/2 cups heavy cream
1 cup cheddar cheese, shredded

Steps:

  • Melt butter in large soup pot, over medium heat, add white onion and celery. Cook 5 minutes.
  • Add sliced sausage, cook until browned, about 5 minutes stir in flour, mix until smooth.
  • Add chicken stock, green onions, parsley, basil, salt and pepper. Stir well.
  • Add potatoes, bring to medium boil, reduce to low and simmer until potatoes are tender, 25-30 minutes.
  • Add cream, heat through.
  • Garnish with cheddar cheese.

It was pouring rain today and cold; perfect soup weather, but not having a full pantry this is what i came up with using leftovers from Easter. Most of the ingredients were already cut and sausage was cooked. (bagged cut carrots from the grocery store) Also having my toddler daughter literally clinging to me all day it had to be super quick and simple. This is a very thrown together recipe and im sure could use improvements and / or changes but for as simple as it was it tasted very good to me. prep time doesnt include cooking the sausage.

1/2 lb hot Italian sausage, cooked and cut into small pieces (use mild sausage if you don't like spicy soup)
1 tablespoon olive oil
1 tablespoon garlic powder
1/2 medium vidalia onion (no need to cut it up)
1 cup pre-cut carrot
2 (8 ounce) cans beef broth
2 tablespoons tomato paste
1 (8 ounce) can cannellini beans, drained and rinsed
1 teaspoon crushed red pepper flakes (optional for added heat)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups water

Steps:

  • In a large soup pot, put olive oil and garlic powder.
  • Cook on low for about 3 minutes.
  • Add everything else to the pot.
  • Bring to boil.
  • Simmer for 25 minutes.
  • Using a slotted spoon, take out all veggies meats and most of the beans and place in blender to puree. you may need to put some of the broth in the blender too to help it along.
  • Return puree back to soup pot.
  • Simmer 10 minutes more stirring well to blend puree and liquid well.

1 chopped yellow onion
1 diced yellow pepper
1 diced red pepper
30 -40 ounces chicken broth (if you like it thicker or thinner)
1 diced tomatoes
8 ounces diced turkey kielbasa
15 -30 ounces drained black beans (I only use 1 can but the recipe says 2)
1/2 cup hot salsa (I get the fresh kind in the Deli)
chopped fresh cilantro
1 -2 tablespoon olive oil

Steps:

  • Saute onion in olive oil for 2-3 minutes.
  • Add sausage and saute for 2-3 minutes.
  • Add yellow and red pepper, saute for 2-3 minutes.
  • Add 30 oz of chicken broth and bring to boil.
  • Add tomato, beans, and salsa. Reduce heat to low. Add more chicken broth if you like it less chunky.
  • Simmer for 5-10 minutes or until veggies are soft. Top with cilantro and serve!
