ONE TRAY GLAZED SESAME CHICKEN



One Tray Glazed Sesame Chicken image

One-pan recipes for me are the epitome of easy clean-up, weeknight dinners, and this one's a goodie. Sweet and sticky chicken with roasted carrots is a cracking combo, but you could also add more vegies for extra goodness if you prefer. My washing-up tip? Line your tray with foil to make life even easier!

Number Of Ingredients 12

3 tbsp soy sauce
1 tsp dark soy sauce
1 tsp sesame oil
¼ cup Marion's Kitchen Coconut Sweet Chilli (go to where to buy to find a store)
8 boneless chicken thighs
1 tsp sesame seeds
finely sliced spring onion, to serve
Coconut sweet chilli carrots:
2 carrots, cut into small chunks
1 tbsp finely grated ginger
3 tbsp Marion's Kitchen Coconut Sweet Chilli
½ tsp sea salt

Steps:

  • Step 1.Preheat oven to 180°C/360°F.
  • Step 2.Make a marinade by mixing the soy sauce, dark soy sauce, sesame oil and the Coconut Sweet Chilli in a large bowl. Add the chicken and mix until well combined. Lay the chicken pieces out on a large baking tray lined with foil. Roast in the preheated oven for 5 minutes.
  • Step 3.In the meantime, combine the ingredients for the coconut sweet chilli carrots in a bowl. After 5 minutes, take the chicken out of the oven and baste with the pan juice. Then place the carrots around the chicken pieces (alternatively, place the carrots on a separate tray).
  • Step 4.Roast the chicken and carrots in the oven for 30 minutes or until the chicken is cooked through and the carrots are tender.
  • Step 5.To serve, place the chicken on a serving plate and drizzle with the juices left in the tray. Sprinkle with sesame seeds and spring onion. Serve with the carrots.

  • Heat vegetable oil in a skillet over medium heat. Cook and stir carrots with brown sugar, cinnamon, cayenne pepper, and nutmeg in the hot oil until carrots are glazed, coated with spices, and tender, 10 to 15 minutes.

Sauteed carrots and toasted sesame seeds with a sticky honey glaze.

1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon honey
2 teaspoons toasted sesame seeds

Steps:

  • Peel carrots. Slice carrots into coins, cutting any very large pieces in half.
  • In a large skillet over medium heat, add olive oil. When hot, add carrots, salt and pepper. Cook for 5 to 7 minutes, stirring occasionally, until carrots are lightly browned and almost cooked through.
  • Add honey and toasted sesame seeds to pan. Stir to coat carrots. Cook for an additional 2 minutes, or until sauce thickens slightly and carrots can be easily pierced through with a fork. Remove from heat and serve.

1 tablespoon butter

  • Boil/steam sliced carrots until just tender; drain.
  • In a medium saucepan, bring water, brown sugar, butter, sesame seeds, lemon juice and salt to a boil over medium heat. Remove from heat.

  • For the tofu, start by preheating the oven to 425 degrees. To remove excess moisture from the tofu, place the drained tofu between towels or sheets of paper towels. Put a small plate on top and weight it down by adding something heavy on top, like a can of tomatoes. Let is sit for about 10 minutes. Once the tofu has been pressed, cut it into 1/2 inch cubes. Toss the cubes with sesame oil and coconut aminos. Spread out on a parchment lined baking sheet and bake for 30 to 35 minutes.
  • While the tofu is baking, prepare the sauce. Add all the ingredients to a small saucepan and bring to a simmer. Gently simmer for about 7 to 10 minutes, or until it’s just slightly thickened and coats the back of a spoon. Set aside.
  • Once the tofu is done baking, immediately toss with 1/4 cup of the sauce. Reserve the rest of the sauce for serving. Or save for another use.
  • To make the lettuce wraps, fill the lettuce cups with the cooked noodles, glazed tofu, carrots, and diakon radish. Serve the wraps with the remaining sauce. Enjoy!
