STICKY PORK & PINEAPPLE HOTPOT

Sticky pork & pineapple hotpot image

Give a warming winter stew an Asian-inspired twist with coriander, chilli and star anise, sweetened with chunks of juicy, fresh pineapple

Provided by Jane Hornby

Categories     Dinner, Main course

Time 2h50m

Number Of Ingredients 12

1 tbsp vegetable oil
1.5kg (about 8) pork shoulder steaks, each cut into 4 thick strips
3 onions , roughly chopped
4 garlic cloves , thinly sliced
small bunch coriander , stalks finely chopped, leaves reserved
3 Thai red chillies , 2 sliced, 1 left whole and pricked
3 star anise
100g dark soft brown sugar
2 tbsp tomato purée
2 tbsp fish sauce
600ml chicken stock
350g fresh pineapple , cut into chunks

Steps:

  • Heat the oil in a large, flameproof casserole dish. Season the pork, and brown it in 2 or 3 batches until golden, about 5 mins per batch. Set aside in a bowl. Stir the onions into the remaining fat, cover and soften for 5 mins - they will take on the browned colour of the meat. Heat oven to 160C/140C fan/gas 3.
  • Add the garlic, coriander stalks, chillies and anise to the dish, sizzle for 1 min, stirring often, then mix in the sugar and tomato purée. When these have melted and it looks a bit like barbecue sauce, return the pork and its resting juices to the dish, along with the fish sauce and stock. Tuck in the pineapple chunks here and there.
  • Once simmering, cover the hotpot, leaving a small gap for steam to escape, and transfer to the oven for 2 hrs. With 30 mins to go, skim some of the fat from the top (this tends to seal the liquid in, making it more difficult for the sauce to reduce), then return to the oven. The pork will be meltingly soft when ready. If the sauce is thin, lift the pork into a warmed serving dish, put the casserole dish on the hob and simmer until the sauce has slightly thickened. Leave to cool for 5 mins, taste for seasoning, pour over the pork and sprinkle over the coriander leaves.

STICKY GARLIC PORK CHOPS

Sticky Garlic Pork Chops image

This sticky garlic pork chop recipe seems too good to be true. It only takes a few minutes of prep work, requires no tricky techniques, and doesn't call for any hard-to-find ingredients. I served this with some bok choy brown rice.

Provided by Chef John

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Pan Fried

Time 1h30m

Yield 2

Number Of Ingredients 10

⅓ cup light brown sugar
6 cloves garlic, crushed, or more to taste
¼ cup rice vinegar
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon ketchup
½ teaspoon freshly ground black pepper
2 teaspoons hot sauce, or to taste
2 (10 ounce) thick-cut bone-in pork chops
1 teaspoon vegetable oil

Steps:

  • Combine brown sugar, garlic, rice vinegar, and fish sauce in a bowl for the marinade. Add a splash of soy sauce and a plop of ketchup. Finish off with black pepper and hot sauce.
  • Pour 1/2 of the marinade into a baking dish and lay pork chops over marinade. Pour the remaining marinade on top and toss pork chops until well coated. Wrap with plastic wrap and marinate in the refrigerator, flipping chops every 30 minutes, 1 to 2 hours.
  • Remove chops to a plate, scraping any excess marinade back into the baking dish.
  • Heat oil in a nonstick skillet over medium heat. Place chops in the hot oil. Cook until outsides are nicely charred and meat springs back when lightly prodded, about 5 minutes per side. Remove chops to a plate to rest.
  • Pour the marinade into the skillet. Raise heat to medium-high. Cook until marinade is reduced and sticky, 3 to 5 minutes. Return pork chops and any accumulated juices to the skillet.
  • Reduce heat to medium-low. Cook pork chops, flipping and basting occasionally, until the centers are slightly pink and sauce is to your desired degree of stickiness, 6 to 8 minutes. An instant-read thermometer inserted into the thickest part of the pork should read about 145 degrees F (63 degrees C).
  • Plate each pork chop and spoon a portion of the sticky garlic sauce on top.

PINEAPPLE STICKY PORK CHOPS

Pineapple Sticky Pork Chops image

This was created for Ready, Set, Cook # 10. Once I convinced my husband that all pork does not automatically raise your blood pressure, I started trying different pork chop and pork loin recipes. I found that so many other recipes called for cooking the pork chop for what seemed like an exceptionally long time. This has a fairly short cooking time and with the help of the pineapple sauce, it stays juicy and flavorful.
