CROCK POT GREEK STYLE BEANS AND TOMATOES
We just ate at our favorite diner in CT, the Blue Colony. One of their specials was Greek Lamb with Roasted Potatoes and String Beans. Amazing!! I am going to use #87782 Evelyn's Roasted Potatoes along with this recipe to re-create that wonderful meal. This is a Cooks.Com recipe and tweaked a little. I am going to include the oregano, but can not use it due to a severe oregano allergy.

- Place all ingredients in crock pot.
- Stir.
- Cover and cook on low for 6 hours.
- If you have a large crock pot you can double the recipe.

CROCK-POT BAKED BEANS IN TOMATO SAUCE
Very easy, I think it tastes best when cooked slow and I found with my slow cooker I had to cook for an hour or two longer than the recipe says. My hubby loves this recipe! If you have used up all the reserved fluid and need extra fluid while cooking, in particular when on high, use up to 1/2 cup of tomato juice. Prep time does not include the bean soak.

Steps:
- Soak beans overnight in large bowl.
- Drain, put in large pot and cover with 5 cups of water. Simmer over medium low heat until tender, about 1 hour.
- Drain beans reserving 2 cups of liquid.
- Add beans to slow cooker.
- In a skillet over medium high heat fry bacon until browned, chop and stir into beans.
- Combine juice, chopped onion, ketchup, molasses, brown sugar, dry mustard, salt, pepper and chili, add to beans and stir well.
- Cover and cook on low for 7 to 9 hours. Until beans are tender and flavourful.
- Check and add a little of the reserved liquid as necessary.
- *or high 4-5 hours.

- Place everything with the exception of the Parmigiano Reggiano and toasted bread or polenta, into your crockpot. Cook on high for at least 6 to 8 hours. Depending on the type of bean you are using, the times will vary. If using unsoaked gigante beans, it may take as long as 12 hours to cook.
- Ladle broth into bowls over toasted bread or serve toasted bread on the size. Shave Parmigiano Reggiano over top. Crack pepper over top. Drizzle more olive oil over top if you wish.
