½ cup packed brown sugar
4 ½ teaspoons active dry yeast
½ cup canola oil
5 cups all-purpose flour
1 ½ teaspoons salt
1 cup white sugar

1 cup confectioners' sugar
2 teaspoons milk

Steps:

  • Combine warm water, brown sugar, and yeast in a large mixing bowl and let rest until frothy, about 10 minutes. Add 1/2 cup oil and stir. Set aside.
  • Sift flour and salt together in a bowl.
  • Mix flour mixture into the yeast mixture and knead until dough forms a sticky ball. Coat the inside of another bowl with oil; transfer dough to the oiled bowl and turn to coat. Cover the bowl and let dough rest in a warm place until doubled in size, about 1 hour.
  • Meanwhile, mix white sugar and cinnamon together in a bowl.
  • Preheat the oven to 350 degrees F (175 degrees C). Oil a fluted tube pan (such as Bundt®).
  • Punch down risen dough and roll into 1-inch balls. Roll balls in cinnamon-sugar mixture and arrange a layer in the prepared tube pan. Sprinkle with cinnamon sugar and drizzle with a bit of oil. Continue layering with remaining dough balls and cinnamon sugar.
  • Bake in the preheated oven until puffed up, about 25 minutes.
  • Meanwhile, mix confectioners' sugar and milk together in a bowl. Drizzle glaze generously over the warm monkey bread.

1 1/2 sticks (12 tablespoons) unsalted butter, melted
Two 16-ounce tubes refrigerated biscuit dough
2 cups sugar
1 tablespoon ground cinnamon

Steps:

  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Put the butter in a medium bowl. Brush the Bundt pan with some of the butter to lightly coat.
  • Cut the biscuits into quarters. Combine the sugar and cinnamon in a large bowl and stir together.
  • Working in batches, toss the biscuits in the melted butter, roll them in the sugar mixture to lightly coat and add them to the Bundt pan.
  • Cover the pan with foil and bake for 35 minutes. Remove the foil and bake until puffed and golden brown, 10 to 15 minutes more. Loosen the bread from the sides of the pan with a knife or offset spatula. Carefully invert the pan onto a serving plate, remove the pan and serve hot.

3 (7.5 ounce) packages refrigerated biscuit dough
⅓ cup white sugar
2 teaspoons ground cinnamon
½ cup chopped pecans
½ cup butter, melted
½ cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 6 miniature Bundt pans.
  • In a small bowl, stir together the white sugar and cinnamon. Set aside. Use scissors or a knife to cut each of the biscuits into various sizes. Each one can be cut into anywhere from 2 to 5 pieces.
  • Sprinkle about half of the pecans amongst the 6 prepared pans. Roll pieces of biscuit in the cinnamon-sugar, and place them into the pans, distributing evenly. Sprinkle any remaining cinnamon-sugar over the dough balls.
  • Mix together the brown sugar and melted butter. Stir in the remaining pecans. Distribute evenly over the pans of dough balls. For ease of getting in and out of the oven, place all of the pans on a cookie sheet.

200ml semi-skimmed milk
85g unsalted butter
2 large eggs
550g strong white bread flour , plus extra for kneading if doing it by hand
2½ tsp fast-action dried yeast
50g golden caster sugar
oil , for greasing
125g unsalted butter , plus extra for greasing
1 tbsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
225g light muscovado sugar
140g pecans , toasted then roughly chopped
100g icing sugar , sifted
½ tsp vanilla extract
1 tbsp semi-skimmed milk
pinch of ground cinnamon
2 tbsp unsalted butter , melted

Steps:

  • Start with the dough. Put the milk and butter into a medium pan and heat gently until the butter melts and the milk is at a simmer. Cool for a few mins, then beat in the eggs with a fork. Mix the dry ingredients in a large bowl with 1½ tsp fine salt, then add the liquid and stir to a sticky dough. Leave for 5 mins, then tip onto a floured worktop and knead for 5-10 mins until smooth and springy. Use a little oil to grease a large bowl, add the dough, turn it in the oil to coat, then cover the bowl with clingfilm. Leave in a warm place for 1 hr or until doubled in size. Knead in a tabletop mixer with a dough hook if you prefer.
  • To assemble, grease a 25cm bundt pan with butter. Melt the rest of the butter in a pan. In a medium bowl mix the spices and sugar plus a pinch of salt. Spoon 2 tbsp melted butter, 3 tbsp spiced sugar and 4 tbsp pecans into the bottom of the tin.
  • Pull the dough into about 65 small pieces and roll into balls. Taking 4 or 5 at a time, dunk the dough balls into the melted butter, let the excess drain off, then tip them into the spiced sugar. Roll to coat, then put haphazardly into the tin. Repeat until there's a full layer of dough in the tin. Scatter with the rest of the chopped nuts, then carry on filling the tin with the coated dough balls. Tip any leftover sugar and butter over the dough. Can be frozen now for up to 1 month. Defrost in the fridge then let prove.
  • Cover the pan with oiled clingfilm then leave to rise in a warm place for 1 hr, or until risen and the dough no longer springs back when you poke it.
  • Heat the oven to 180C/160C fan/gas 4. Bake the monkey bread for 35 mins, or until well risen and golden. Let the pan cool for 5 mins, then give it a sharp rap on the counter. Leave in the tin until just warm.
  • Whisk all of the ingredients together to make the glaze. It will thicken as the melted butter cools. Turn the monkey bread onto a serving plate, then drizzle with the glaze. Let it set, if you can bear the wait.

1 cup packed light brown sugar
3/4 cup heavy cream
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
2 tablespoons dark rum
1/8 teaspoon kosher salt
1/2 cup granulated sugar
1 batch Basic Sweet-Roll Dough, recipe follows, without nutmeg
1/2 cup whole milk
1 1/4 -ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Preheat the oven to 350 degrees F. Spread the pecans on a baking sheet and bake until lightly toasted, about 8 minutes; set aside.
  • Melt 1 stick butter in a medium saucepan over medium heat. Add the brown sugar and heavy cream; boil until slightly thickened, about 4 minutes. Stir in the vanilla, vinegar, rum, salt and the toasted pecans. Pour all but 1/2 cup of the pecan mixture into an 8-inch-round, 3-inch-deep cake pan. Refrigerate until almost set, about 15 minutes. Set the remaining pecan mixture aside at room temperature.
  • Put the remaining 1/2 stick butter in a microwave-safe bowl; microwave until melted. Put the granulated sugar in another bowl. Pinch off tablespoonfuls of dough and roll into 1-inch balls. Dip the balls in the melted butter, letting the excess drip off, then roll in the granulated sugar; arrange in the prepared cake pan in 2 layers, leaving a bit of space between the balls. Let rise, uncovered, in a warm place until doubled in size, about 1 hour, 30 minutes.
  • Preheat the oven to 350 degrees F. Bake the bread until puffed and golden brown (a thermometer inserted into the center should register 175 degrees F), about 55 minutes; tent with aluminum foil if the top is getting too dark. Remove the bread from the oven and spread the reserved 1/2 cup pecan mixture on top. Transfer to a rack and let cool 10 minutes in the pan, then invert onto a plate. Pull off pieces to serve.
  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

1/2 cup white granulated sugar
1 and 1/4 teaspoons ground cinnamon
2 (16.3 ounces EACH) cans Pillsbury Grands Flaky layers refrigerated biscuits ((8 biscuits per can, 16 total needed for this recipe))
1 cup packed dark (or light) brown sugar
1 teaspoon vanilla extract
3/4 cup chopped pecans

Steps:

  • PREP: Preheat the oven to 350 degrees F. Generously grease (with cooking spray) and then lightly flour a large (12 cup) Bundt pan.
  • BUTTER: Place butter in a microwave-safe bowl and melt. Set aside to allow the butter to return to room temperature. Melted butter must be at room temperature before adding other ingredients so it doesn't melt the sugar and make it greasy/grainy.
  • BISCUIT PREP: In a separate large bowl, whisk together the white sugar and cinnamon; set aside. Separate the biscuits then cut each biscuit into four equal pieces. Add the biscuit pieces to the cinnamon-sugar mixture, tossing the biscuits gently until all of the biscuits are well coated.
  • BUTTER CONT.: Add in the brown sugar, vanilla, and pecans to the melted butter. Stir until combined.
  • ASSEMBLE: Add a few spoonfuls of the butter-pecan mixture to the bottom of the Bundt pan and then add the biscuit pieces on top. Sprinkle any remaining cinnamon-sugar mixture over the top of the biscuits. Pour the remaining butter-pecan mixture over the biscuits and then bake for 30-40 minutes or until it is cooked through. To test: insert a skewer into the inside (middle) of the bread; if it comes out clean, it should be done. If it starts browning too quickly on top, tent some foil over the bread.
  • SERVE: Remove the pan from the oven and allow the Monkey Bread to cool for 10 minutes in the pan before inverting it onto a cake pan or serving plate.

1/2 cup water
1 Tbsp. active dry yeast
1/2 cup sugar
1 cup milk, warmed
2 large eggs
5 cups all-purpose flour
1/2 cup butter, at room temperature
1 tsp. salt
1/2 cup butter
1/2 cup sugar
1/2 cup packed brown sugar
1 tsp. cinnamon
1/2 cup icing sugar
2 tsp. milk
1/2 tsp. vanilla

Steps:

  • To make the dough, put the warm water in a large bowl (or the bowl of your stand mixer) and sprinkle with the yeast and a pinch of the sugar. Let stand 5 minutes, or until foamy. (If it doesn't foam, toss it and buy fresh yeast.)
  • In a small bowl, mix the warm milk and eggs together with a fork. Add to the yeast mixture along with 3 cups of the flour and the remaining sugar; mix until well blended and sticky. Add the butter and remaining flour and stir or beat with the dough hook attachment of your stand mixer until you have a soft, sticky dough; knead for about 8 minutes, until smooth and elastic. It will still be slightly tacky. Place back in the bowl, cover with a tea towel and let rise in a warm place for an hour, or until doubled in bulk.
  • Melt the butter in one bowl, and in another stir together the sugars and cinnamon. Pull the dough apart into balls the size of a small plum. Dip each ball of dough into the melted butter, then douse in the sugar mixture, rolling to coat completely. Place in a greased Bundt pan, piling them on top of each other.
  • Cover and let rise for an hour while you preheat the oven to 350F. Bake for 45 minutes, until golden and springy to the touch.
  • Invert onto a plate, then whisk together the icing sugar, milk and vanilla and drizzle overtop. Serve warm.
